5 large potatoes, peeled and thinly sliced
¾ cup chopped onion
3 tablespoons butter
¼ cup all-purpose flour
1 ¾ cups low-sodium chicken broth
2 tablespoons mayonnaise
2 cloves garlic, minced
¾ teaspoon salt
¼ teaspoon dried parsley
¼ teaspoon poultry seasoning
⅛ teaspoon ground black pepper
¼ cup chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 1/2-quart baking dish.
  • Layer potatoes and onion in prepared baking dish.
  • Melt butter in a saucepan over medium heat; stir in flour until smooth. Gradually add broth, mayonnaise, garlic, salt, parsley, poultry seasoning, and pepper; cook and stir until thick and bubbly, about 2 minutes. Pour mayonnaise mixture over potatoes and onion. Cover baking dish with aluminum foil.
  • Bake in preheated oven until potatoes are tender, about 1 hour 45 minutes. Remove foil and continue to bake until golden brown, about 15 minutes more. Sprinkle with chives to serve.

3 tablespoons all-purpose flour
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 (14 1/2 ounce) can chicken broth
6 pork chops
2 tablespoons vegetable oil
6 cups thinly sliced peeled potatoes
1 medium onion, thinly sliced
paprika (optional)
chopped fresh parsley (optional)

Steps:

  • In a saucepan melt butter over low heat, stir in flour, salt and pepper.
  • Add chicken broth; cook and stir constantly until the mixture comes to a boil.
  • Cook for one minute then remove from heat and set aside.
  • Season pork chops with additional salt and pepper as desired.
  • Brown pork chops in a skillet coated with vegetable oil.
  • Grease a 9 X 13 baking pan.
  • Layer potato and onion slices in pan.
  • pour broth mixture over the potatoes and onion.
  • Place browned pork chops on top of potatoes.
  • Sprinkle paprika and parsley.
  • Cover with aluminium foil and bake at 350 for 1 hour or until potatoes are tender.

2 tablespoons olive oil
6 ounces pancetta or bacon, cut into 3/4 inch pieces
2 large yellow onions, peeled and thinly sliced
Salt
Freshly ground black pepper
3 teaspoons minced garlic
1 tablespoon fresh thyme
6 ounces swiss chard, tough stems removed and well rinsed
2 pounds all purpose potatoes, like white rose or long whites, peeled and cut into 1/4-inch thick slices
Essence, recipe follows
1 cup grated Gruyere, or Swiss cheese
2 cups heavy cream or half-and-half
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 375 degrees F. Butter a 2-quart baking dish and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Add the pancetta and cook, stirring, until golden brown, about 4 minutes. Add the onions and season with salt and pepper and cook, stirring, until the onions begin to caramelize, about 20 minutes. Add the thyme and garlic and cook 1 minute.
  • Bring a large pot of water to a boil. Add the Swiss chard and blanch until tender, about 3 minutes. Drain and squeeze on towels to remove excess liquid.
  • Spread a layer of potatoes in the bottom of the prepared dish, slightly overlapping the slices. Season with Essence, and top with a layer of the onions. Place a layer of Swiss chard on top, followed by more potatoes and onions. Repeat with remaining ingredients. Add the cream, top with cheese and cover with foil.
  • Roast until nearly all the liquid has been absorbed, about 1 hour to 1 hour and 15 minutes. Remove the foil and continue baking until golden brown and bubbly, an additional 15 to 20 minutes.
  • Remove from the oven and let sit for 10 minutes before serving.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, cubed

1-1/2 cups KRAFT Shredded Swiss Cheese

Steps:

  • Cook potatoes in boiling water in saucepan 15 min. or until tender; drain. Cool slightly; cut into thin slices.
  • Heat oven to 350ºF. Cook and stir bacon in large nonstick skillet on medium heat until done. Remove from skillet; set aside.
  • Add oil and onions to skillet; cook 3 to 5 min. or until onions are crisp-tender, stirring frequently. Gradually stir in broth; cook 1 to 2 min. or until heated through, stirring frequently. Add Neufchatel and pepper; cook and stir 2 to 3 min. or until Neufchatel is completely melted and sauce is well blended. Remove from heat.

  • Cook potato slices, covered, in boiling water to cover for 5 minutes; drain well.

  • Melt the butter in a heavy saucepan over low heat; add flour, stirring until smooth.
  • Cook 1 minute, stirring constantly.

Bacon adds lots of flavor to many savory dishes, & since I had purchased the Bacon ends & pieces on sale at a fraction of what a good quality pound of bacon would cost, I thought it was befitting to use...

3 lb potatoes, yukon gold, red or russet
1 lb bacon, i used ends and pieces
1/2 stick butter
4 Tbsp flour, all purpose
3 c milk,
2 c sharp cheddar cheese
1 c mozzarella cheese
2 tsp granulated garlic
1 1/2 tsp black pepper
2-3 tsp kosher salt (added to pot of potatoes)
2 medium onions, chopped

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a 9 X13 size casserole dish with cooking spray and set aside.
  • 2. I prefer to peel my potatoes then place them in a pot of water and boil them whole or cut in half until they are just about done, this usually takes about 15 to 20 minutes depending on how many potatoes you have. This hastens the baking time. Don't forget to add salt to the water to add flavor to the potatoes. The salt infuses the potatoes during the boiling time. Slice potatoes when cool enough to handle.
  • 3. Cook the bacon in a large skillet, over medium high heat, remove bacon to a platter lined with paper towel as it cooks up crisp, repeat until all is cooked, but reserve the drippings.
  • 4. Add the onions to skillet of reserved bacon drippings, then cook until onions begin to become transparent, add in bacon pieces and continue to cook to blend the flavors together.
  • 5. Remove bacon and onions from skillet to a plate or small bowl, then add in the half stick of butter, and allow to melt, then add in the flour, and whisk until flour blends with the butter, creating a paste.
  • 6. Add in the milk and stir until flour mixture begins to blend into the milk, add in granulated garlic and pepper, stir and continue cooking over low heat until mixture begins to thicken and coat the back of a spoon. Then add in both shredded cheeses and stir until cheese is melted & mixture is creamy and smooth. Remove from heat.
  • 7. Now add a layer of the potatoes to bottom of casserole dish, then top with the bacon and onion mixture,and about half of the cheese mixture. I also added extra shredded cheese between each layer and on top.
  • 8. Repeat with potatoes & remaining cheese sauce. Bake in preheated 350 degree F. oven for 35 minutes or until hot and bubbly. Allow to cool and serve with your favorite entree.
  • 9. This is the finished dish.

8 medium red skin potatoes, peeled & boiled
2 large onions, sliced
6-8 medium mini sweet peppers, chopped into rings
3 Tbsp olive oil
1 1/2 c crumbled feta cheese
12 oz shredded cheddar cheese, (3 cups)
1 Tbsp kosher salt
1 Tbsp granulated garlic powder
2 tsp coarse black pepper
2 Tbsp chopped dried chive
6 Tbsp wondra flour, or all purpose
3/4 stick butter(6 tablespoons)
2 large cans evaporated milk
2 can(s) milk cans filled with water
2 c french fried onion rings

Steps:

  • 1. Peel red skin potatoes and add to a large pot, cover with water, add 1 tablespoon of kosher salt, and bring to a boil and cook about 15-20 minutes, until tip of a knife can be inserted into the center and easily released.Drain in colander, set aside to cool and can be sliced as needed. MAY ALSO USE 2 % MILK INSTEAD OF EVAPORATED MILK IF DESIRED.
  • 2. While potatoes are cooling add olive oil to a large skillet then add in the sliced onions and mini pepper rings, saute until onions become translucent and begin to wilt slightly. Remove and set aside.
  • 3. Preheat oven to 350 degrees F. Spray a 9 X13 size casserole dish with non stick cooking spray. Then slice enough cooled potatoes to cover the bottom of the casserole dish. Top with 1/3 of the cooked peppers and onions, then top with about 1/3 of the feta cheese.
  • 4. To make the sauce, add the butter to a large skillet or pot, then add in the wondra or all purpose flour, and stir or WHISK till flour and butter is blended together evenly over medium high heat. Add in the milk and water, and spices, whisk until mixture begins to thicken, & will coat the back of a spoon. Pour about 1/3 of sauce over the first layer of potatoes, then top with 1 cup of shredded cheddar cheese.
  • 5. Repeat until you have used all of the cheeses, peppers and onions, sauce & potatoes to fill the casserole dish.
  • 6. Top with French Fried Onion Rings, then place in preheated 350 degree F. oven and bake for 35-40 minutes until potatoes are hot throughout, and bubbly along edges, and cheese is melted on top.NOTE: TO PREVENT ONION RINGS FROM OVER BROWNING, ADD THEM ON TOP DURING THE LAST 15 MINUTES OF BAKING IN OVEN IF DESIRED.

2 large Spanish onions
1 head garlic, peeled and roughly sliced
1/2 lb jalapeno havarti cheese, cubed
1/2 lb parmesan cheese, sliced
1/4 cup butter, cubed
salt & freshly ground black pepper
1 (14 ounce) can cream of mushroom soup
2 cups 2% low-fat milk
1/4 cup parsley, chopped

Steps:

  • Wash and scrub the potatoes, towel dry and slice about 1/4 inch thick, best with a madolin.
  • Peel onions and slice about 1/4 inch thick with a mandolin.
  • Remove as much paper skin from garlic as possible with out taking apart, slice as a whole on mandolin, pick out the rest of the skin and the base of the bulb and discard.
  • Spray casserole with veggie spray and place a layer of potato slices on the bottom.
  • Mix the onion rings and the garlic slices to gether and place a layer on top of the potatoes.
  • Season with salt and freshly ground pepper.
  • Sprinkle a few cubes of havarti cheese and a couple of slices of parmesan cheese and some butter cubes on top.
  • Repeat layers ending with cheese and butter on top.
  • Whisk together mushroom soup, milk and parsley, until combined.
  • Pour mixture carefully over top of potato onion layers.
  • Carefully lift layers to allow mixture through if necessary.
  • Place casserole on middle rack in 325f degree oven for 3 to 4 hours or until potatoes are tender and top is browned and crisp.

3 pounds onions, cut into 1/4-inch-thick slices
the white and pale green parts of 2 pounds (about 6) leeks, split lengthwise, washed well, and chopped
1/2 pound shallots, cut into 1/4-inch-thick slices
1/2 stick (1/4 cup) unsalted butter
1/4 cup heavy cream
1 cup coarse fresh bread crumbs
1 cup grated extra-sharp Cheddar (about 1/4 pound)
1/4 teaspoon paprika

Steps:

  • In a heavy kettle cook the onions, the leeks, and the shallots in the butter with salt and pepper to taste, covered, over moderate heat, stirring occasionally, for 10 minutes, reduce the heat to moderately low, and cook the vegetables, stirring occasionally, for 10 to 20 minutes more, or until they are soft. Remove the lid and cook the mixture over moderate heat, stirring, for 3 to 5 minutes more, or until the excess liquid is evaporated. The onion mixture may be made 2 days in advance and kept covered and chilled.
  • Preheat the oven to 375°F. Transfer the onion mixture to a 2-quart shallow baking dish and stir in the cream. In a small bowl toss together the bread crumbs and the Cheddar, sprinkle the mixture evenly onto the onion mixture, and dust it with the paprika. Bake the onion mixture in the middle of the oven for 20 to 30 minutes, or until the cheese is melted and the mixture is bubbly.

  • Preheat oven to 350 degrees F and grease a 9x13 baking dish.

5-6 large white onions
3 Tbsp butter or margarine
3 Tbsp flour
1/2 c milk
3 slice white bread
reserve juice from boiled or canned onions

Steps:

  • 1. Peel and cut onions (I halve them then cut in 4-5 pieces from there) If you can find them (we can't get them here any more) you can use 2 or 3 cans of pearl onions instead of cooking reg. white onions) Cover with water and a dash salt and boil until just tender. Drain into a colander over a large bowl and reserve 1/4 cup of the liquid.
  • 2. Meanwhile make white sauce by melting 3 tbsp. butter/marg. add 3 tbsp flour, gradually add the 1/4 cup reserved onion water and 1/2 cup of milk, stir constantly over med-high heat until thick. Add dash salt, pepper and onion powder.
  • 3. Pour sauce over cooked onions in a greased 2 qt casserole and mix until onions are all coated. Butter 3 slices of bread and cut into cubes, place over onions butter side up in a single layer and bake at 350 for 25-35 minutes until bread cubes are crisp and lightly browned and sauce is bubbly.

This rich, special side dish makes frequent appearances on my Thanksgiving menu. Simmering the onions before assembling the casserole mellows their flavor.

2 quarts water
7 cups sliced onions
1/2 cup butter, divided
1/4 cup all-purpose flour
1 teaspoon Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon pepper
2 cups milk
2 packages (5 ounces each) shredded Swiss cheese
4 cups cubed French bread

Steps:

  • In a large saucepan, bring water to a boil; add onions. Return to a boil. Reduce heat; cover and simmer for 10-12 minutes or until tender. Drain well. Place onions in an ungreased 13-in. x 9-in. baking dish. , In a small saucepan, melt 1/4 cup butter. Whisk in the flour, Worcestershire sauce, salt, paprika and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Pour over onions; toss to coat. , Top with bread cubes. Melt remaining butter; drizzle over the top. Bake, uncovered, at 350° for 30-35 minutes or until golden brown.

3/4 cup grated Gruyere cheese, divided 1/2 cup, 1/4 cup
1/2 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon white pepper (or black pepper if that is what you have)
1 teaspoon of butter to butter the gratin or casserole dish
1 teaspoon finely minced fresh rosemary

This recipe came from my MIL. It was always served at special family meals like Thanksgiving and Christmas. It's very easy to make, and so delicious! I hope you enjoy it as much as we do.

3 lbs of small boiling onions
1/4 lb premium saltine crackers, 1 pack
1/4 lb butter
salt and pepper
1 1/2 cups milk (approximately)

Steps:

  • Boil the onions for about 10-15 minutes; drain.
  • In a 2 qt casserole, layer half the onions, half the crushed saltines, salt and pepper to taste, and half the butter, cut into chunks and dotted over the top.
  • Repeat the layers.
  • Cover with milk, just enough that it comes to the top layer of onions but not over the top of them.
  • Bake uncovered at 350 degrees for about 20 minutes until browned.

3 jars (15 ounces each) white onions, drained
1 package (10 ounces) frozen peas
1/2 cup sliced blanched almonds
3 tablespoons grated Parmesan cheese
Paprika

Steps:

  • In a saucepan over medium heat, melt the butter. Stir in flour, mustard and salt; cook and stir until bubbly. This recipe is AWESOME!! It is so easy and so DELICIOUS! I love onions, so when I found the recipe for this side dish, I just HAD to make them. ENJOY!

6 large vadalia onions
8 Tbsp (1 stick) butter
2 Tbsp flour
1 tsp salt
1/2 tsp pepper
1 tsp dry mustard
1 c milk
8 oz grated cheddar cheese
1/2 c seasoned bread crumbs
2 Tbsp melted butter for topping

Steps:

  • 1. Sauteé onion slices in 4 tbsp. butter.
  • 2. Melt 4 tbsp. butter in a separate pan; stir in flour & seasonings and cook for 1-2 minutes.
  • 3. Slowly stir in milk and cheese, stirring constantly until cheese is melted and mixture thickens.
  • 4. In a 1-quart baking dish, alternate layers of onions and sauce. Sprinkle top with crumbs and drizzle with 2 tablespoons melted butter.
  • 5. Bake at 400° until browned - about 15-20 minutes.

This dish is delicious alone or accompanied by other foods as a side dish. It's very easy and inexpensive to fix and the ingredients are ones almost anyone would have in the pantry. I use Jack cheese or cheddar. For a stronger cheese flavor I get sharp cheddar instead of adding more cheese. The onions are optional. I have family that won't eat anything if they see an onion visible so I mince it, then when this dish is baked it flavors it. They never complain and they love it when I fix this. I usually bake it between 45 minutes to an hour.

3 -4 large potatoes (sliced thin)
1 cup of grated cheese (jack, cheddar, your choice, or more)
1 can evaporated milk
1/2-1 onion (diced)
3 -4 tablespoons butter or 3 -4 tablespoons margarine
salt (to taste)
pepper (to taste)

Steps:

  • Place sliced potatoes into ovenproof dish or pan.
  • Add diced onions over top.
  • Sprinkle grated cheese over top of potato/onion mixture.
  • Pour the can of evaporated milk into the same dish.
  • Place sliced butter or margarine scattered over top.
  • Sprinkle salt and pepper over top.
  • Place a baking sheet on the oven floor in case of overflow.
  • Bake in oven at 350 degrees fahrenheit for aproximately an hour.
  • Potatoes will be done when the top is light golden brown, the cheese is melted, and the potatoes are tender.
