2 tablespoons butter
1/4 cup bell pepper, finely chopped
1 tablespoon onion, minced
1/2 cup milk
3/4 teaspoon salt
1/8 teaspoon pepper
21 ounces creamed corn
1/2 cup cracker crumb
1 lb pork sausage

Steps:

  • Melt butter; saute green pepper and onion.
  • Add milk, salt and pepper, and number 2 can of creamed corn.
  • Add cracker crumbs.
  • Pour into a greased 1 quart casserole.
  • Shape pork sausage into 6 patties.
  • Brown in a heavy skillet; discard fat.
  • Place patties on top of corn mixture.
  • Bake 20 minutes at 350 degrees Fahrenheit.

3 (15 ounce) cans creamed corn
2 eggs
1 cup crushed saltine crackers
½ cup butter
½ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

1 pound ground pork breakfast sausage
1 (16 ounce) package dry corn bread mix
1 (15 ounce) can cream style corn
5 fluid ounces water
1 medium onion, diced
4 fresh jalapeno peppers, diced
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
  • In a medium bowl, mix corn bread mix, cream style corn and water.
  • Cover the bottom of the prepared baking dish with about 1/2 inch of the corn bread mixture. Layer mixture with sausage, followed by onion and jalapeno. Cover with cheese. Top with remaining corn bread mixture, using only as much as will fit in the baking dish.

1/2 pound bulk pork sausage
1/4 cup chopped onion
1/3 cup chopped green or sweet red pepper
1-1/4 cups herb-seasoned crumb stuffing mix, divided
1 can (14-3/4 ounces) cream-style corn
2 teaspoons minced fresh parsley or 1 teaspoon dried parsley flakes
1 tablespoon butter or margarine, melted

Steps:

  • In a skillet, cook sausage, onion and green pepper until sausage is no longer pink; drain. Add 1 cup stuffing mix, corn and parsley. Spoon into a greased 1-qt. baking dish. Combine butter and remaining stuffing mix; sprinkle over casserole. Bake, uncovered, at 375° for 30-35 minutes or until golden brown.

1 pinch pepper
2 medium tomatoes, sliced
1/2 cup grated cheddar cheese
1 lb pork sausage
3 tablespoons flour
1 1/4 cups milk
1 (15 1/4 ounce) can corn, drained

Steps:

  • Brown sausage; drain off all fat except for 2 tablespoons.
  • Add flour and stir until blended.
  • Add milk; stir until it boils and thickens like gravy.
  • Add corn and seasonings.
  • Place mixture in a casserole.
  • Top with tomatoes and then with cheese and place dish under broiler for 5 minutes until cheese melts.
