1 sweet potato
2 eggs
1 cup bread crumbs
⅓ cup parmesan cheese
1 tablespoon garlic powder
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon pepper
1 avocado
¼ cup greek yogurt
1 tablespoon cilantro, chopped
1 tablespoon lime juice
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Cut sweet potato into wedges. Set aside.
  • Prepare breading mixture in a large bowl and set aside. Whisk 2 eggs in a separate bowl.
  • Dip wedges, one by one, in the egg mixture followed by the breading mixture and place on a baking sheet lined with parchment paper.
  • Bake for 30-35 minutes, or until golden brown. For best results, flip halfway.
  • While wedges are baking, prepare the avocado dipping sauce by mashing the avocado with a fork until consistency is smooth and then adding the other ingredients. (You may also use a high speed blender or food processor.)

2 pounds red potatoes (about 6-8 potatoes)
2 tablespoons oil
1 teaspoon salt
1 teaspoon smoked paprika (may substitute regular paprika in a pinch)
1 teaspoon garlic powder
½ teaspoon onion powder
pinch black pepper
⅓ cup mayo (regular, or reduced fat)
⅓ cup bbq sauce (any favorite bbq sauce works)

Steps:

  • Preheat oven to 450 degrees. Line a large, rimmed baking sheet with parchment. (See note)
  • Cut the potatoes into about 8 wedges (They should be less than 1/2 inch thick on the wide edge, if your potatoes are larger, cut any larger wedges in half again). Pat the potato wedges dry with paper towels to absorb excess starch. (see note)
  • In a large bowl, combine potato wedges and oil, toss to coat.
  • Stir together salt, paprika, garlic power, onion powder, and pepper. Sprinkle over potato wedges and toss to coat.
  • Transfer potato wedges to your prepared baking sheet, arranging them in a single layer so they aren't overlapping, and doing your best to have them not touching (it's fine if some of them are).
  • Bake for 15 minutes. Remove from oven, turn over the potato wedges with fork or tongs. Return to oven for 15 minutes. While potatoes are baking, stir together mayo and bbq sauce. Potatoes should be appear browned and crispy on the edges and be fork-tender. Serve with dipping sauce.

Savoury mince is the perfect frugal meal on its own or adjusted to make cottage pie, chilli or bolognaise.

500 g beef mince (5% fat)
1 onion
1 tbsp olive oil
200 g frozen peas
2 carrots
2 tbsp flour (plain)
450 ml beef stock
1 tbsp bovril
1 tbsp Worcester sauce
1 clove garlic
½ tsp pepper
1 tsp mixed herbs (dried)

Steps:

  • Peel the onions garlic and carrot and cut into small pieces. Mince the garlic.
  • Put the oil in a large pan over a medium heat and cook the onions and carrot for 5 minutes until softened, stirring occasionally.
  • Add the garlic and cook, stirring for 1 minute then use a slotted spoon to transfer the vegetable to another dish.
  • Return the pan to the heat and add the mince. Break it up with a spoon and spread into an even layer, turning regularly to brown the mince and break it up completely.
  • Add the flour to the pan and stir through for a minute.
  • Pour in the stock, Worcester sauce, Bovril, stock, herbs and pepper. Return the vegetables to the pan.
  • Bring the savoury mince to a boil and simmer for 15 minutes, stirring occasionally.
  • Add the peas and cook for 5 minutes more then check the seasoning and consistency before serving. Mix a teaspoon of cornflour with water and stir into the mixture if it seems too thin.

1 teaspoon mild paprika
1/2 teaspoon ground turmeric
800 g desiree potatoes, cut into wedges
2 tablespoons olive oil
1 large brown onion, finely chopped
500 g beef mince
400 g diced tomatoes
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 1/2 cups beef stock
100 g button mushrooms, thinly sliced
1 medium carrot, grated
1 green capsicum, finely chopped
2 tablespoons gravy, powder
flat leaf parsley, finely chopped to serve

Steps:

  • Preheat oven to 220C/200C fan-forced.
  • Place paprika, tumeric, potato and half the oil in a baking dish.
  • toss to coat.
  • Bake 35-40 minutes, turning occasionally, or until golden and tender.
  • Meanwhile, heat the remaining oil in a saucepan over medium-high heat.
  • Add onion and mince.
  • Cook, stirring with a wooden spoon to break up mince for 6-8 minutes or until browned.
  • Add tomatoes, tomato paste, worcestershire sauce, stock, mushrooms, carrot and capsicum.
  • Bring to the boil then reduce heat to medium-low.
  • Simmer for 25-30 minutes or until thickened.
  • Stir in gravy powder.
  • Divide wedges and mince mixture between bowls.
  • Serve topped with parsley.
  • Notes:.
  • Use 2 cups of frozen mixed vegetables instead of mushrooms, carrot and green capsicum.
  • To freeze, allow mince to cool then spoon into a large snap-lock bag. Seal. Flatten bag for quicker defrosting. Freeze for up to 3 months. Thaw in refridgerator overnight. Transfer savoury mince to a large saucepan. Reheat, stirring over medium-high heat, adding extra stock if necessary. Cook wedges as directed.

3 large baking potatoes (around 1kg)
1 tbsp olive oil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.
  • Spread the wedges out on a large baking sheet or two smaller ones. Toss with the oil and 1 tsp salt (preferably sea salt) and spread out so that they aren't overlapping. Roast for 30 mins, turning halfway until golden and crisp.
