3 large Raw egg(s)
0.25 cup(s) Fat free egg substitute
1 cup(s) Fat free evaporated milk
2 tbsp(s) All-purpose flour
0.25 tsp(s) Table salt
0.25 pinch Black pepper
0.25 tsp(s) Ground nutmeg
0.5 cup(s), shredded Low-fat hard or semisoft cheese Swiss, grated
4 oz Cooked turkey bacon diced

Steps:

  • Preheat oven to 350ºF. Coat a 9-inch pie plate with cooking spray.
  • Lay phyllo dough in pie plate, one piece at a time, coating each layer with cooking spray — dough should cover bottom and sides of dish. Fold in any overhanging corners.
  • Whisk together eggs, egg substitute, milk, flour, salt, pepper and nutmeg.
  • Sprinkle cheese and bacon over phyllo dough. Pour in egg mixture and place quiche on a baking sheet. Bake until firm, about 30 to 35 minutes. Let cool at least 5 minutes before cutting into 8 wedges.

1 (16 ounce) carton low fat cottage cheese
4 large eggs
1/2 cup 1% low-fat milk
1/2 cup coarsely chopped fresh flat-leaf parsley
1 tablespoon chopped fresh thyme
1 pinch ground nutmeg
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 lb low-fat goat cheese, crumbled

Steps:

  • Preheat oven to 350°F Spray 9-inch deep-dish pie plate or shallow 1-quart baking dish with nonstick spray.
  • Puree cottage cheese and eggs in food processor. Add milk, parsley, thyme, nutmeg, salt and pepper; pulse just until blended. Pour into pie plat and sprinkle evenly with goat cheese. Bake until small knife inserted into center comes out clean. 35-40 minutes. Serve warm.

1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded Swiss cheese
1/2 cup shredded Gruyere or additional Swiss cheese
1/2 cup crumbled feta cheese
5 large eggs
1 cup half-and-half cream
1 tablespoon minced fresh basil
1 tablespoon minced fresh parsley
2 teaspoons minced fresh dill

Steps:

  • Preheat oven to 400°. Unroll crust into a 9-in. pie plate; flute edge. Sprinkle cheeses into crust. In a large bowl, whisk eggs and cream until blended. Stir in herbs; pour over top., Bake on a lower oven rack 25-30 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

1 unbaked 9-inch pie crust
3/4 cup baby spinach
1/2 cup fresh parsley leaves, chopped (about 1/2 bunch)
2 fresh sage leaves
1 sprig fresh mint, leaves only
1 sprig fresh marjoram, leaves only
Kosher salt
6 large eggs
3 tablespoons unsalted butter, melted
1 1/2 cups grated Monterey Jack cheese
1/2 cup crumbled cooked Italian sausage

Steps:

  • Preheat the oven to 400 degrees F.
  • Line the pie crust with parchment paper, fill with baking beans or pie weights and bake for 15 minutes. Carefully remove the baking beans and parchment and continue to bake until golden brown, 10 to 13 minutes more. Allow to cool to room temperature before filling.
  • Lower the oven temperature to 350 degrees F.
  • Meanwhile, in a mortar and pestle or food processor, grind the spinach, parsley, sage, mint and marjoram with 1 teaspoon salt until a very coarse paste forms. If it doesn't form into a paste, add 1 tablespoon water.
  • In a large bowl, whisk together the eggs, melted butter and herb paste until combined. Stir in 1 cup of the cheese.
  • Line the pie crust with the sausage, pour in the egg mixture and top with the remaining 1/2 cup cheese. Bake until the center is set and the top is dark golden, 45 to 55 minutes. Cool at room temperature for 1 hour before serving.

1 tablespoon margarine
4 cups broccoli florets
2 onions, chopped
1 cup mushroom, sliced
2 teaspoons double-acting baking powder
1 cup egg beaters 99% egg substitute
1 cup skim milk
2 cups nonfat mozzarella cheese, shredded

Steps:

  • Preheat oven - 350°F Spray a 9" pie plate with cooking spray.
  • Melt margarine in a large non-stick skillet. Then add the broccoli, onions and mushrooms. Cook for about 5 minutes until sof, stirring constantly.
  • Mix together flour and baking powder. Then mix in the egg stubstitute and milk; sitr together until not large lumps are present.
  • Add cheese and the broccoli mixture and pour into the prepared pie plate.
  • Bake about 35 minutes or until the top is golden and a knife inserted in the center comes out clean.

It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about.

Short-crust dough (see recipe), rolled and chilled in a 9 1/2-inch tart pan
3 large eggs
1 and 1/4 cups half-and-half
1/2 teaspoon kosher salt
Black pepper, to taste
1/2 teaspoon grated lemon zest
1 teaspoon chopped fresh thyme
2 tablespoons chopped scallions
2 tablespoons chopped parsley
4 ounces fresh goat cheese, sliced into 1/4-inch rounds

Steps:

  • Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
  • Make the custard: in mixing bowl, beat eggs. Whisk in half-and-half, salt, pepper, lemon zest, thyme, scallions and parsley. Set aside.
  • Set tart pan on a baking sheet. Spread goat cheese slices evenly over bottom of pastry. Beat custard once more and carefully pour into shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.
