These savory mashed sweet potatoes are ready in less than 25 minutes, making them a great addition to your weeknight routine, or a last-minute party or potluck side. Naturally sweet on their own, sweet potatoes pair perfectly with savory flavors such as chopped fresh thyme, salt, and pepper. Serve these mashed sweet potatoes as a side to proteins such as chicken, turkey, or pork, and you've got an easy meal ready in a flash. Also, unlike sweet potato casseroles, or buttery mashed potatoes, this side gives you all the comfort without all the calories. You can enjoy this creamy side for less than 205 calories per serving and pack in 4 grams of fiber.

1 1/2 pounds sweet potatoes, peeled and cubed
1 1/2 tablespoons butter
1 tablespoon extra-virgin olive oil
2 teaspoons finely chopped fresh thyme, plus leaves for garnish
1/4 cup 1% low-fat milk
1/2 teaspoon kosher salt
3/8 teaspoon black pepper

Steps:

  • Place sweet potatoes in a large saucepan; cover with water to 2 inches above potatoes. Bring to a boil over high; reduce heat to medium-low, and simmer until tender, about 18 minutes. Remove from heat. Drain and return potatoes to saucepan.
  • Combine butter and olive oil in a small skillet over medium; cook until browned and fragrant, about 3 minutes. Remove from heat; stir in thyme.
  • Add milk, salt, and pepper to sweet potatoes; mash with a potato masher to desired consistency. Drizzle with butter mixture; gently stir once or twice. Garnish with thyme leaves.

These simply mashed sweet potatoes taste so good it's hard to stop eating them! It's amazing what just a little butter, sour cream and a few scallions can do without all the frills we usually add. Then again, the beautiful sweet potato doesn't need much help. These make a wonderful addition to a hearty meal and pair well with most meats, especially pork. I pre-bake the potatoes in the oven because I think they have the best flavor, but I included steps for cooking them in the microwave as well. The dish will take from 25 minutes using the microwave to 65 minutes using the oven, not counting the cooling period post cooking.

2 1/2 lbs sweet potatoes (about 4)
2 tablespoons unsalted butter
1/2 cup chopped green onion, some set aside for topping (about 4)
salt, to taste
fresh ground black pepper, to taste
1/2 cup sour cream

Steps:

  • Wash and scrub the sweet potatoes; pat dry.
  • To bake the sweet potatoes, preheat the oven to 400 degrees F. Place pricked potatoes on a foil-lined baking pan to catch any juices that leak, then into the preheated oven and cook for 45 minutes, or until the potatoes are fully cooked and tender, up to 1 hour.
  • To cook the sweet potatoes more quickly, carefully prick each sweet potato about 6 times, place in microwave oven on a paper towel and cook on High 15 to 17 minutes, or until a knife is easily inserted into center of potatoes.
  • When cool enough to handle, remove skin and any dark spots from potatoes. In a medium bowl, mash potatoes with butter and season with salt and pepper. Stir in sour cream and scallions until well mixed. Serve immediately sprinkled with reserved green onions on top.

Number Of Ingredients 6

4 lbs sweet potatoes (about 10 cups) or 4 lbs white potatoes, peeled and cut into 1/2-inch cubes (about 10 cups)
1/4 cup butter or 1/4 cup margarine
1/3 cup sour cream
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • In a 4-quart Dutch oven cook the potatoes, covered, in enough boiling lightly salted water to cover for 12 minutes or until tender; drain. Remove potatoes from pan.
  • Add the butter to the hot Dutch oven and let it melt. Add the potatoes to the Dutch oven; mash with a potato masher until smooth. Stir in the sour cream, milk, salt, and pepper. Cook and stir over low heat until heated through. Transfer to a serving dish. If desired, place a dot of butter on top. Makes 8 to 10 servings.
  • Make-ahead directions: Prepare potatoes through Step 2 but do not heat through. Transfer to a 2-1/2- to 3-quart casserole. Cover and chill for up to 24 hours. Before serving, preheat oven to 325°F Bake, covered, in the preheated oven for 55 to 60 minutes or until heated through.��.
  • Maple Mashed Sweet Potatoes: Prepare as above. Before serving, drizzle 1/4 cup maple syrup over potatoes and sprinkle with 1/4 cup chopped hazelnuts or almonds, toasted.
