- In a large saucepan, place spinach in a steamer basket over 1 in. of boiling water. Cover and steam for 2-3 minutes or just until wilted. When cool enough to handle, squeeze spinach dry and finely chop. , In a nonstick skillet, saute the mushrooms, onion and garlic in oil until tender. Add spinach; cook and stir for 2 minutes. Transfer to a large bowl. Stir in the egg, cheese, bread crumbs, 1/4 teaspoon rosemary and salt until well blended., Flatten chicken to 1/4-in. thickness. Combine the basil, thyme, pepper and remaining rosemary; rub over one side of chicken. Spread spinach mixture over plain side; roll up. Secure with toothpicks. , In a large saucepan, place roll-ups in a steamer basket over 1 in. of boiling water. Cover and steam for 12-15 minutes or until chicken is no longer pink.

SAVORY SPINACH CHICKEN

- Place 3 tablespoons salad dressing in a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for at least 2 hours., Drain and discard marinade. In a small skillet, brown chicken on each side. Remove and keep warm. In the same skillet, saute the spinach, remaining salad dressing and salt until spinach is wilted; drain., Place chicken in a shallow baking dish coated with cooking spray. Top with spinach and cheese. Bake, uncovered, at 350° for 18-22 minutes or until chicken juices run clear.

~ SAVORY CHICKEN & SPINACH CASSEROLE ~
My family loved this casserole, even the ones who don't like mushrooms, she just picked them out...LOL! It's quite savory and delicious! If you don't like mushrooms, add a different veggie instead..I used mushrooms, because they needed to get used and were quite tasty with the spinach. Enjoy!

- 1. Cover chicken with water and poach until juice runs clear. Reserve broth. Once chicken is cool, chop. Bring broth back to a boil and cook orzo, about 9 minutes, drain and set aside.
- 2. Preheat oven to 350 degree F. Spray a 2 - 3 quart casserole with non stick cooking spray. In a large skillet,over medium heat - brown onion, mushrooms and garlic. Stirring occasionally.
- 3. Once veggies are tender, add the chicken, orzo, spinach, soup, mayonnaise and seasoning. Stir until well combined. Spread the chicken mixture into casserole dish and sprinkle evenly with cheese and about a handful of bread crumbs.
- 4. Bake for 35 - 40 minutes or until golden and bubbly.
- 5. Serve hot! Enjoy!
~ SAVORY SPINACH FILLED CHICKEN BREASTS ~
I created this delicious chicken from another recipe of mine, only instead of using ricotta I used a spreadable cheese I had bought for another recipe. I wanted to use it up before it expired. The family absolutely loved it. I hope you try it sometime. I think you will love it too!

Steps:
- 1. In a medium skillet over medium heat, add 1 tablespoon oil and saute garlic, spinach, salt, pepper and red pepper flakes - just until spinach is wilted. Remove from heat and let cool for a few minutes. Once cool, stir in cheese spread, almonds, bread crumbs
- 2. Cut a deep slit into each breast on the thickest side of meat. Stuff each breast evenly with spinach mixture and secure with toothpicks. Beat egg on a paper plate. Add crumbs to another and mix in garlic pepper salt. Heat 2 tablespoons olive oil in a large skillet over medium heat. Dip breast into egg, making sure both sides are coated, let excess egg drip off, then coat evenly in bread crumbs.
- 3. Place chicken in heated oil. Cook on that side for roughly 10 minutes, using fork to move chicken around to all sides to make sure all is cooked. Turn over and continue cooking on that side. Moving chicken to all sides, making sure all edges are browned. About 10 more minutes. Note: Just to make sure it was cooked completely through - I removed the browned chicken and placed on a microwave safe plate and microwaved for another 2 minutes. Cut one into and make sure there is no pink remaining. Or you could place them in the oven and bake for another 15 minutes, just to be safe. Mine were done with just the few minutes in the microwave. It will depend how thick your breasts are.
- 4. Remove picks and serve immediately with your favorite sides. I just served with saffron rice and green beans. Delicious!
