Chicken breasts stuffed with a special seasoned cream cheese mixture and then breaded and baked until brown and crispy...YUM! I serve this with garlic mashed red- skinned potatoes and corn on the cob.

2 tablespoons butter
1 (8 ounce) package cream cheese, softened
2 tablespoons minced onions
2 minced garlic cloves
1/4 teaspoon dried basil
1/8 teaspoon black pepper
4 boneless skinless chicken breasts
2 eggs, beaten
1 cup Ritz cracker crumbs

Steps:

  • Preheat oven to 450. Put the butter in a 9x9 baking pan and put it in there while the oven is warming up.
  • Combine the cream cheese, onion, garlic and seasonings. Mix well until blended.
  • Pound chicken to about 1/4 inch thickness.
  • Spread each piece with 1/4 of the cream cheese mixture, roll up and secure with toothpicks.
  • Dip in eggs and roll in cracker crumbs.
  • Place in hot butter in baking pan and turn over to coat with butter.
  • Bake 25-30 minutes or until cooked through and browned nicely.

My mother-in-law shared this treasured recipe with me. It's long been a family favorite and is always welcome whenever I offer it to family and friends.

Number Of Ingredients 11

1-1/2 cups all-purpose flour
1 tablespoon salt
2 teaspoons pepper
1-1/2 teaspoons meat tenderizer, optional
1/4 teaspoon each curry powder, garlic powder, onion powder, ground mustard and ground sage
1/8 teaspoon ground turmeric
1/8 teaspoon ground cloves
1 egg
1/2 cup milk
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
Oil for deep-fat frying

Steps:

  • In a shallow bowl or large resealable plastic bag, combine dry ingredients. In another bowl, beat egg and milk. Dip chicken in egg mixture, then dredge or shake in flour mixture. , In a deep-fat fryer, heat oil to 375°. Fry chicken, several pieces at a time, for 5 minutes or until golden brown, turning once. Place in an ungreased 13-in. x 9-in. baking dish. , Bake, uncovered, at 400° for 20 minutes or until juices run clear.

1/2 pint buttermilk
Grill Mates Montreal Steak Seasoning
dash garlic powder
salt and seasoned pepper
1 onion(chopped up)
1 whole cut up frying chicken
3 cps. flour Butter flavored oil

Steps:

  • Beat 2 eggs slightly and stir in buttermilk. Add seasonings. Heat oil in electric skillet at 200 degrees. Add chopped onion and sautee till tender. Dip chicken in egg/buttermilk, then in flour with the same seasonings. Fry chicken with a little more steak seasoning sprinkled on. Cook on low heat and turn when browned. The leftover oil with onion and seasonings makes delectable country gravy. This recipes makes fans for you and chicken. Guaranteed!!
