SAVORY CHICKEN PIE

Number Of Ingredients 16

3 whole peeled and chopped, plus 1 cup sliced carrots carrots
2 quartered Vidalia onions
1 (5 lb) whole chicken
1/4 cup plus 2 tablespoons salt
freshly ground black pepper
1 stick softened, plus 1/2 cup melted unsalted butter
2 sprigs fresh rosemary
2 sprigs fresh sage
4 sliced thin red potatoes
3/4 cup corn
1/2 cup peas
2 1/2 cups heavy cream
3 1/2 cups divided, plus more for work surface all purpose flour
1 tablespoon sugar
1 1/2 cups vegetable shortening
2 cups cold water

Steps:

  • For the chicken:
  • Preheat oven to 350 °F.
  • Stuff onions and whole carrots into the cavity of the chicken. Rub 1/4 cup salt, black pepper and 1 stick butter into skin of chicken. Place rosemary sprigs under the skin and place into a roasting pan. Place sage on top of chicken and roast for 1 1/2 hours.
  • Remove the chicken from the oven. Transfer to a cutting board and allow to cool.
  • For the filling:
  • Place carrots and potatoes on sheet pan and season with salt and pepper. Place into the preheated oven and roast until caramelized.
  • When chicken has cooled, discard the onions, carrots, sage and rosemary. Pull the chicken meat off the bones and cut into 1/2-inch pieces. Place into a large bowl with chicken juice from roasting pan along with potatoes, 1 cup sliced carrots, peas, corn, heavy cream and 1/2 cup flour. Mix together well. Set aside for crust. *Cook's Note: Filling will be thick.
  • For the crust:
  • Knead 3 cups flour, 2 tablespoons salt, sugar, shortening, water and 1/2 cup melted butter together in a large bowl, slowly adding the water. Divide into 2 pieces and roll out on a lightly floured work surface. One will be the bottom crust, the other the top. Place 1 piece of dough into the bottom of a 9-inch pie dish. Add filling and top with the other piece of dough. Crimp the edges together with a spoon or a fork. Brush the top crust with melted butter and bake in the preheated oven for 50 minutes.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup fat-free reduced-sodium chicken broth
3 cups chopped cooked chicken
1 pkg. (16 oz.) frozen mixed vegetables (carrots, corn, green beans, peas), thawed, drained
1/4 tsp. garlic powder
1 egg
1/2 cup milk
1 cup all-purpose baking mix

Steps:

  • Heat oven to 400°F.
  • Cook cream cheese and broth in large saucepan on low heat until cream cheese is completely melted and mixture is well blended, stirring frequently with whisk. Stir in chicken, vegetables and garlic powder.
  • Spoon into 9-inch pie plate. Whisk egg and milk in medium bowl until blended. Add baking mix; stir just until moistened. Spread over chicken mixture. Place pie plate on baking sheet.
  • Bake 25 to 30 min. or until golden brown.

1 tablespoon unsalted butter
½ cup chopped baby bella mushrooms
2 (10 ounce) packages Pepperidge Farm Patty Shells-Puff Pastry
1 cup chopped carrots
1 cup chopped celery
1 cup chopped sweet onion
½ cup vegetable oil, divided
1 (16 ounce) package Jimmy Dean® Premium Pork Regular Sausage
6 tablespoons all-purpose flour
3 ½ cups milk
1 ½ teaspoons garlic salt, or more to taste
1 teaspoon onion powder
1 teaspoon garlic powder
¼ teaspoon ground black pepper
½ teaspoon poultry seasoning
2 cups shredded cooked chicken

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Melt butter in a pan over medium heat. Cook and stir mushrooms until browned, 5 to 10 minutes. Set aside.
  • Arrange thawed puffed pastry shells on the prepared baking sheet. Bake in the preheated oven for 18 to 20 minutes. Cool on a wire rack for 5 minutes. Use a knife to remove the tops; reserve.
  • Meanwhile, heat 2 tablespoons oil in a large pot over medium-low heat. Add carrots, celery, and onion. Cover and cook, stirring frequently, until vegetables are soft, 15 to 20 minutes. Remove from heat and mix in mushrooms.
  • Add sausage to a large skillet over medium heat. Cook and stir with a spatula, breaking apart the sausage until cooked, about 8 minutes. Drain and set aside.
  • Heat remaining oil in a pot over medium-low heat. Add flour and cook, stirring constantly with a wire whisk, until browned, 2 to 30 minutes. Slowly pour in milk and stir constantly until blended. Add garlic salt, onion powder, garlic powder, black pepper, and poultry seasoning. Whisk until well blended. Cook and stir gravy until boiling, 3 to 5 minutes. Reduce heat to a simmer.
  • Stir the vegetable mixture, sausage, and chicken into the gravy. Taste and add more garlic salt if needed.
  • Spoon a generous serving of the sausage-chicken mixture into the puff pastry shells. Cover with the tops.

2 pounds ground chicken
1/4 cup finely chopped shallot
1 medium garlic clove, minced
2 tablespoons finely chopped fresh sage
1/4 cup finely shredded carrot
1 tablespoon Dijon mustard
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
2 to 3 tablespoons extra-virgin olive oil
Chutney, for serving

Steps:

  • Using 2 forks, gently combine chicken, shallot, garlic, sage, carrot, mustard, salt, and pepper. Loosely shape mixture into 2-inch patties (about 1/2 inch thick), being careful to not overwork. Place sausage patties on a baking sheet.
  • Heat 1 tablespoon oil in a nonstick skillet over medium-high heat. Working in batches, cook sausage patties until cooked through and golden brown, 2 to 3 minutes per side. Add more oil to skillet between batches as needed. Serve warm with chutney.
