SWEET POTATO AND SAUSAGE STEW



Sweet Potato and Sausage Stew image

Sweet, savory and spicy (if you use a spicy sausage), this great cool-weather stew comes together in a flash with minimal prep. The stew is filling on its own, but we can't resist dipping cheese toast wedges in the flavorful broth.

2 Sweet potatoes, chopped
1 Onions, chopped
3 leaves Kale, leaves and stems chopped and separated
1 Tbsp Oil, cooking
12 oz Sausage, Italian and raw (use mild or spicy)
3 Tbsp Tomato paste
3 cups Stock, any type
2 Bay leaves
1 tsp Lemon juice
1/4 cup Yogurt, plain or Greek
4 slices Bread, sandwich (a thick-sliced loaf will work well)
1 Tbsp Oil, olive
4 slices Cheese, Swiss

Steps:

  • Heat oven to 425F / 218C degrees.
  • Heat a Dutch oven over medium-high heat. Add cooking oil and then onions, kale stems and a pinch of salt. Saute for 2 to 3 minutes, until softened.
  • Add potatoes and sausage and saute to break sausage apart and allow it to release oil, 3 to 4 minutes more.
  • Pour in tomato paste, stock and bay leaves. Simmer stew until potatoes are tender, 8 to 10 minutes.
  • While stew simmers, place toast on a sheet pan. Brush with olive oil and top with cheese slices. Bake in the oven until toast is golden around the edges and cheese is melted, 5 to 6 minutes.
  • Slice cheese toast into quarters.
  • When stew is done, remove from heat and stir in kale leaves and lemon juice. Taste and season with some salt and pepper and more lemon juice, if needed.
  • Ladle stew into bowls and top with yogurt. Serve with cheese toast on the side and enjoy!

1 lb hot Italian sausage
2 sweet potatoes (peeled and cubed)
1/4 cup sweet onion (minced)
2 garlic cloves (minced)
1 (28 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
4 cups water
1/2 teaspoon beef bouillon powder (1/4 cube)
1 (16 ounce) bag fresh spinach
2 sprigs fresh thyme (left intact)
1/2 teaspoon oregano
salt and pepper

Steps:

  • Brown the sausage and onions in a stock pot. Add in the garlic and stir for 2 minutes or until fragrant.
  • Add in sweet potatoes, tomatoes, beef bouillon powder tomato sauce, thyme sprigs, oregano and water. Bring mixture to a low boil and cover cooking for 30 minutes.
  • Add in the spinach, salt and pepper to taste and cover cooking for an additional 2 minutes.
  • Ladle in large shallow bowls and serve with corn bread or corn muffins.
  • Enjoy!

3/4 pound lean ground beef (90% lean)
2 medium sweet potatoes, peeled and cut into 1/2-inch cubes

1 garlic clove, minced

3 tablespoons extra-virgin olive oil, divided
1 10- to 11-ounce fully cooked smoked Portuguese linguiça sausage or chorizo sausage, cut crosswise into 1/4-inch-thick slices
2 medium onions, chopped
2 large garlic cloves, minced
2 pounds red-skinned sweet potatoes (yams; about 2 large), peeled, quartered lengthwise, cut crosswise into 1/4-inch-thick slices
1 pound white-skinned potatoes, peeled, halved lengthwise, cut crosswise into 1/4-inch-thick slices
6 cups low-salt chicken broth
1 9-ounce bag fresh spinach

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add sausage; cook until brown, stirring often, about 8 minutes. Transfer sausage to paper towels to drain. Add onions and garlic to pot and cook until translucent, stirring often, about 5 minutes. Add all potatoes and cook until beginning to soften, stirring often, about 12 minutes. Add broth; bring to boil, scraping up browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are soft, stirring occasionally, about 20 minutes. Using potato masher, mash some of potatoes in pot. Add browned sausage to soup. Stir in spinach and simmer just until wilted, about 5 minutes. Stir in remaining 1 tablespoon oil. Oh so rich, creamy, and delicious on a cold winter night! I found this recipe in BHG magazine, modified slightly and am posting here for safekeeping. Full recipe is a big pot of soup - I halve the recipe to make 4 very healthy portions of stew. Prep note: if the peanut/coconut cream is something you are unsure about (or if you have a picky eater) I would suggest pulling a sampling of the stew prior to adding and test for yourself and your family. I absolutely think it is what makes the dish special, however my BF doesn't like, so his serving is separated out prior to my adding in the cream mixture (and then I, of course, decrease the amount of peanut/coconut cream that I'm adding to the main pot).

2 tablespoons canola oil or 2 tablespoons butter, if not concerned with keeping the dish vegan
2 sweet red peppers, chopped
1 large onion, chopped
6 garlic cloves, minced
2 tablespoons ginger, minced
1 teaspoon ground allspice
1 pinch cayenne pepper (optional)
2 lbs sweet potatoes, peeled and chopped
4 cups vegetable broth or 4 cups chicken broth, if not concerned with keeping the dish vegetarian
6 ounces tomato paste
14 ounces coconut milk
1 cup natural-style peanut butter (no added sugar or salt)

Steps:

  • Heat the oil (or butter) in a large pot or Dutch oven over medium heat.
  • Add pepper, onion, garlic, ginger, allspice and cayenne pepper (if using) and saute for 5-7 minutes. Garlic and ginger should become quite fragrant and the onions and peppers slightly tender.
  • Add potatoes, broth and tomato paste to the pot. Stir to incorporate the tomato paste. Bring to a boil.
  • Immediatly reduce heat to low, cover and simmer for 40-45 minutes. Adjust heat as necessary to maintain a gentle simmer. Avoid over-stirring as this can break down the potatoes more than desired.
  • Wisk together the coconut milk and natural peanut butter until smooth and creamy. Stir into the stew and simmer for an additional 5 minutes.
  • Ladle into bowls and enjoy! This stew is wonderful on it's own or paired with grilled cheese sandwiches or grilled peanut butter sandwiches!

A strange recipe I made on the fly one night while home alone! Not quite a stew, but it always reminds me of a stew. Hearty, and perfect on a cold winter night!

3 medium red potatoes, cubed (peeling is optional )
1 medium head of cabbage, coarse chopped
1/2 lb sweet Italian sausage link, sliced 1/2 inch thick
2 cups water
1 tablespoon butter
1 tablespoon olive oil
salt and pepper

Steps:

  • Saute the sausage in a large skillet, or med-large sized pot on high.
  • Once the sausage becomes browned, add the rest of your ingredients.
  • Reduce heat to medium, and cover.
  • Simmer until the cabbage and potatoes have cooked down, and are fork tender. Stir occasionally.
  • It should reduce by about half.
