Steps:
- Preheat oven to 350 degrees.
- Cook noodles uncovered in a large pot of boiling salted water over high heat about 4 minutes or until nearly tender but firmer than usual.
- Drain, rinse with cold water, then drain well again.
- Transfer to a large bowl.
- Heat 3 to 4 tablespoons oil in large skillet over medium-low heat.
- Add onions and saute about 20 minutes or until very tender and light brown, (but not burned!) stirring occasionally.
- Add salt, pepper, and 1 teaspoon paprika, and saute about 5 minutes or until well browned.
- Cool slightly.
- Stir onion mixture into noodles.
- Adjust seasoning, mixture should be seasoned generously.
- Add eggs and mix well.
- Oil a 2 quart baking dish and add noodle mixture.
- Sprinkle with remaining tablespoon oil, then dust with paprika.
- Bake uncovered 1 hour or until set.
- Serve from baking dish.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Soak matzo farfel in boiling water in a bowl for 5 minutes; drain and transfer to a large bowl.
- Heat olive oil in a large skillet over medium heat and cook and stir mushrooms, onions, rosemary, garlic, and salt until onions are soft and translucent, 5 to 8 minutes. Stir mushroom mixture into moistened farfel and mix in beaten eggs. Pour farfel mixture into prepared baking dish.
- Bake in the preheated oven until set and top is lightly browned, about 1 hour.

- Cook noodles until "al dente" (both types together or not, they may reach al dente at different times-read box/package) and rinse with hot water and drain well. Set aside.
- Meanwhile, in a large bowl combine cottage cheese, sour cream, garlic, Worcestershire sauce, herbs, hot pepper sauce and salt and pepper. Mix together well.
- In a large skillet, saute onion and green pepper in heated butter for about 5 minutes and add the noodles, stirring until well blended.
- Add the noodles to the cottage cheese mixture and pour the blend into a buttered 9" X 13" baking dish. Sprinkle with paprika for color if you like.
- Bake at 350 degrees F. for 45 minutes until hot and bubbly.

- Preheat oven to 350 degrees.
- Grease a 9-by-9-inch nonstick pan.
- Cook the noodles according to package directions and set aside.
- Coarsely chop the broccoli and cauliflower.
- Steam the vegetables together for 4 or 5 minutes.
- Set aside to cool.
- Heat the oil in a skillet.
- Add the onion, mushrooms and garlic.
- Sauté for 10 minutes.
- In a large bowl, combine the noodles, broccoli, cauliflower, onion, mushrooms, ricotta cheese, 1/2 cup of the cheddar cheese and dry mustard.
- Toss to thoroughly mix.
- Add salt and pepper to taste.
- Place the mixture in the nonstick pan.
- Sprinkle the remaining cheddar cheese all over the top of the kugel.
- Bake for 30 minutes, or until the cheese bubbles and browns slightly.
- Enjoy!
SAVORY SPINACH CARROT MUSHROOM KUGEL OR APPETIZER
This may not be a traditional kugel, but it's absolutely delicious. I baked this in a 9x13 dish and enjoyed a big slice. The mushrooms add a meaty texture. Spinach and carrots add a freshness to the casserole. Next time I may make these into appetizer-size balls as Helaine suggests. I bet they'd be tasty that way too.

- 2. Grease or spray with Pam baking pan (suitable for cutting kugel into squares when done).
- 3. Saute onions and mushrooms in skillet.
- 4. Pour into a very large bowl and add all other ingredients mixing well after each.
- 5. Spread mixture into pan and bake about 45 minutes.
- 6. Can be frozen or made days ahead, kept in fridge and reheated. Can add more bread crumbs/enought to form into balls and either baked or stuffed into lightly sauteed mushrooms for delicious, savory appetizers.

If you have spinach already washed and some leftover noodles, this requires almost no time to prepare. It makes a great breakfast, but I often make it for dinner, as well. You can substitute other vegetables, cheeses, and seasonings as you see fit, or by what you have on hand.

- 1. Onion is optional. I love onion myself, but this will taste fine without it. I used leftover angel-hair pasta, pulled apart into 3-inch pieces. I don't use salt; feta cheese is plenty salty by itself.
- 2. Tear spinach into little pieces.
- 3. Heat oil in the frying pan (I use an 8-inch cast iron pan). Cook onion to desired doneness. I like mine a bit golden, if I'm using onion.
- 4. Combine egg, spinach, noodles, and crumbled cheese in a bowl or large mug. Beat them with a fork until everything is well-incorporated and covered in egg.
- 5. Turn egg mixture into the heated pan. Cover the pan so the patty will cook through before the bottom burns.
- 6. Cook for 5-7 minutes on one side, then turn and finish cooking on the other side.
SAVORY NOODLE KUGEL
Steps:
- 1. Adjust an oven rack to the middle position and heat the oven to 350 degrees. Grease a 9 by 13-inch baking dish (or shallow casserole dish of similar size) with 1 tablespoon of the butter; set aside. 2. Melt 3 more tablespoons butter with the oil over high heat in a 12-inch nonstick skillet. Add the onions and ½ teaspoon salt; cook until the onions begin to soften, about 5 minutes. Reduce the heat to medium and continue to cook the onions, stirring frequently, until they are golden brown and sweet, about 25 minutes longer. Remove from the heat and season with salt and pepper to taste. 3. Meanwhile, bring 4 quarts of water to boil in a large pot (with a perforated pasta insert, if available) over high heat. Add 1 tablespoon salt and the cauliflower; cook until the cauliflower is mostly tender but still slightly crunchy at the core, about 5 minutes. Transfer the cauliflower to a paper towelâlined baking sheet using a slotted spoon (or by lifting out the pasta insert, if using). 4. Return the water to a boil and add the noodles; cook until almost tender but still firm to the bite, about 6 minutes. Drain the noodles, transfer them to a large bowl, and toss with 2 more tablespoons butter. Allow the noodles to cool to room temperature. 5. Add the onions, cauliflower, and eggs to the cooled noodles; toss to combine. Transfer the mixture to the prepared baking dish. Pour the chicken broth evenly over the noodles and dot with the remaining 2 tablespoons butter. Cover the dish tightly with foil and bake until the kugel is warm, about 20 minutes. Remove the foil and continue to bake until the noodles on the surface are golden and the center is hot, about 20 minutes longer. Cool for 5 minutes before serving.
