Homemade Rice-a-Roni image

Number Of Ingredients 11

1 cup brown or white long-grain rice
½ cup orzo
2 tablespoons extra virgin olive oil
2 tablespoons butter
1 small yellow onion, finely chopped
3 tablespoons chopped walnuts or pecans
3 cups broth of your choice
¾ teaspoon salt
1 tablespoon fresh parsley, chopped
½ teaspoon dried rosemary or herb of your choice
Salt and pepper to taste

Steps:

  • Heat the oil and butter in a skillet over medium-high heat. Add the rice, orzo and nuts and saute, stirring frequently, until half of the rice and orzo is browned.
  • Add the onion and cook for another two minutes.
  • Add the chicken stock, salt and herbs and stir to combine.
  • Bring it to a boil, reduce the heat to low, cover and cook as you would normally cook rice, about 15-20 minutes (if using white rice, longer if using brown) or until the rice is done.
  • Fluff with a fork and serve immediately.

1 (6.9 oz.) pkg. Rice a Roni chicken flavor
3/4 lb. Italian sausage
1/2 c. chopped onion
2 sm. zucchini, cut into 1/4 inch slices
1 clove garlic, minced
2 c. spaghetti sauce
1/2 tsp. basil, crushed
1 1/2 c. (6 oz.) shredded Mozzarella cheese

Steps:

  • Heat oven to 350 degrees. Prepare Rice a Roni mix as directed. Remove sausage from casing; crumble in 10 inch skillet. Brown sausage and onion; drain off fat, reserving 1 tablespoon of drippings in skillet. Set aside. Add zucchini and garlic; saute over medium heat 1 minute. Cover; continue cooking over low heat about 2 minutes or until crisp-tender. Combine prepared Rice a Roni, sausage mixture, 1 cup spaghetti sauce, and basil; spread into 11 x 7 inch baking dish. Sprinkle with 1/2 cup cheese. Top with zucchini. Pour over remaining sauce. Sprinkle with remaining cheese. Bake 25 to 30 minutes. You may substitute ground beef for sausage.

1 cup spaghetti or vermicelli (broken into 1/2 inch pieces)
1 1/2 cups long grain white rice
4 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
2 tablespoons chopped parsley
1/2 cup diced tomatoes (optional)

Steps:

  • Melt the butter in a large pan over medium heat.
  • Add the pasta to the pan and cook until browned, about 3-5 minutes.
  • Add the rice to the pan and cook for 1 more minute.
  • Add the chicken broth, salt, garlic powder, onion powder and pepper to the pan.
  • Bring the mixture to a simmer. Cover the pan and turn the heat to low.
  • Cook for approximately 15 minutes or until all the liquid is absorbed. Fluff with a fork and sprinkle with parsley.

1 ½ teaspoons kosher salt, plus more as needed
⅛ teaspoon freshly ground black pepper
⅛ teaspoon ground coriander
⅛ teaspoon mustard powder
⅛ teaspoon celery salt
⅛ teaspoon paprika
⅛ pinch ground turmeric
⅛ teaspoon cayenne pepper
3 tablespoons unsalted butter
½ cup finely diced onions
⅔ cup uncooked orzo pasta
1 ⅓ cups uncooked long-grain white rice
3 cups good-quality chicken broth
1 tablespoon freshly chopped parsley

Steps:

  • Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
  • Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.

Also affectionately known around our house as "ugly casserole". I don't remember where I oringinally found this recipe but I've been making it for over 15 years. Everyone in the family loves this stuff. I hope your family will enjoy it, too.

1 lb ground beef
2 (6 1/4 ounce) boxes Rice-A-Roni
2 (10 1/2 ounce) cans cream of mushroom soup
4 cups hot water
1 (6 ounce) can Durkee onions

Steps:

  • Brown beef in a skillet; drain off grease.
  • Place drained beef in a large bowl. Add seasoning packets from rice mix, soup, and water. Whisk until thoroughly blended. Mix in rice and noodles from boxes.
  • Place in a greased 9 x 13" glass casserole dish.
  • Bake at 350 degrees for 1 hour.
  • Remove from oven and stir thoroughly, making sure to scrape the bottom of the casserole, so the rice isn't sticking.
  • Return it to the oven and bake 10 minutes more, sprinkling the onions over the top for the last 3 minutes.
