Number Of Ingredients 15

8 medium to large potatoes, peeled and cubed
2 medium to large onions, chopped
2 stalk(s) celery, chopped
1 lb bacon
1/2 lb ham cubes
1 whole head of garlic - skin removed and smashed
1/2 - 1 Tbsp chicken bouillon paste or a couple cubes
1 tsp thyme
3 c milk
4 Tbsp butter
4 - 5 Tbsp flour
16 oz heavy cream
1 1/2 tsp each salt and pepper or more to taste
8 oz velveeta shredded cheese
parsley flakes

Steps:

  • 1. In 2 quart dutch oven add diced and peeled potatoes, celery, smashed garlic along with enough water to cover the potatoes at least 1-2 inches. Add thyme and bouillon. Cook on high heat until potatoes, celery and garlic are soft.
  • 2. In the meantime, in a large, deep skillet; fry the bacon and onion until done. Add the precooked ham, warm through.
  • 3. After this is cooked, drain off the grease and place into a bowl.
  • 4. In the same skillet, melt 4 tablespoons of butter, then add 4 - 5 tablespoons of flour to the melted butter. I mix this well, with a whisk, till smooth.
  • 5. After the flour has cooked a few minutes, whisk in the 3 cups of milk and the cream. Stir this over high heat until it thickens into a nice gravy consistency. I then stir in the salt and pepper.
  • 6. If the potatoes are finished cooking. I use my whisk and smash about half the pot of potatoes, not mashed, just somewhat smashed. Now, add the thickened milk mixture to the potatoes. Add the bacon, onion and ham mixture. Stir in the cheese. When cheese is melted; season with salt and pepper and parsley.
  • 7. When serving, add additional cheese or green onions for garnish ( totally optional) Enjoy this yummy soup!!

This recipe is derived from my grandmother's potato soup recipe. I've changed it up a bit to give it a little kick. The chorizo is a fantastic addition and makes the soup more of a meal than a side dish. Wonderful for cold and rainy nights. Your whole family will love this.

4 cups peeled, cubed russet potatoes
½ pound ground chorizo sausage
2 tablespoons olive oil
4 ribs celery, chopped
1 medium onion, chopped
1 (32 fluid ounce) container chicken broth
1 ½ cups baby carrots, chopped
½ teaspoon celery salt
salt and ground black pepper to taste
2 cups heavy whipping cream
2 tablespoons all-purpose flour

Steps:

  • Place potatoes in a bowl of cold water and set aside.
  • Heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Heat olive oil in a heavy pot over medium-low heat. Add celery and onion and cook until soft, 7 to 10 minutes.
  • Drain potatoes and transfer to the pot. Pour in chicken broth; add chorizo, carrots, and celery salt. Season with salt and pepper. Simmer until carrots are tender, 25 to 30 minutes.
  • Reserve 1/2 cup heavy cream; pour 1 1/2 cups into the soup. Continue cooking until flavors combine, about 10 minutes. Warm reserved cream slightly and whisk in flour; slowly pour into the soup. Simmer until thickened, 7 to 10 minutes more.

This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

3 ½ cups peeled and diced potatoes
⅓ cup diced celery
⅓ cup finely chopped onion
¾ cup diced cooked ham
3 ¼ cups water
2 tablespoons chicken bouillon granules
½ teaspoon salt, or to taste
1 teaspoon ground white or black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Steps:

  • Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
  • In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
  • Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

Creamy, hearty, and flavorful, this Potato Bacon Soup is perfect for lunch or dinner on a cold day.

8 slices bacon (chopped)
½ onion (diced)
2 cloves garlic (minced)
2 ribs celery (diced)
3 cups chicken broth (low sodium )
16 ounces baking potatoes (peeled and diced ½", about 2 medium potatoes)
¼ teaspoon dried thyme
1 cup heavy cream
1 tablespoon cornstarch
salt & pepper to taste
cayenne (pinch)
parmesan cheese & sliced green onions for garnish

Steps:

  • Cook bacon in a large saucepan over medium heat until crisp. Remove with a slotted spoon and set aside.
  • Add onion, garlic, and celery to the bacon fat and cook 3-4 minutes or until onion softens slightly.
  • Stir in chicken broth, potatoes, and thyme. Bring to a boil, reduce heat to a simmer and cook covered 10 minutes or until potatoes are tender. Stir in cream and simmer for 5 minutes longer.
  • Combine cornstarch and 1 tablespoon of water to create a slurry. Whisk into the simmering soup and simmer 1 minute. Stir in half of the bacon. Season with salt, pepper, and cayenne to taste.
  • Spoon into bowls, top with parmesan cheese, remaining bacon and green onions.
