SILVER'S SAVORY CHICKEN AND BROCCOLI CASSEROLE
This is an easy to make recipe that is great for potlucks, church gatherings, holidays, or outside gatherings. It is also a non-hassle recipe for you working folks, single folks, or even for kids to make! You can even make it ahead of time by preparing the casserole and then freezing it - for up to 3months! My family loves this casserole and we change things around in it, by adding or taking out different things. Have fun with it, and I would love to hear comments on what worked for you and what changes you made! Serve with dinner rolls or French bread and a salad!

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain. Preheat oven to 400 degrees F (200 degrees C.) Grease a 9x13 inch casserole dish.
- Melt butter in a large saucepan over medium heat. Saute onion until tender, about 3 minutes. Mix in flour. Gradually stir in chicken broth. Slowly stir in milk, and cook, stirring, until sauce begins to thicken. Season with salt and pepper.
- Place cooked noodles in the bottom of casserole dish. Arrange cooked chicken in an even layer over noodles. Place broccoli over the chicken. Pour sauce evenly over the broccoli. Combine cheeses, and sprinkle half over the casserole.
- Bake in preheated oven for 20 minutes, or until the cheese melts. Remove from oven, and sprinkle with remaining cheese. Allow to set for 5 minutes, until cheese melts.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish. Spread French bread cubes onto a baking sheet.
- Bake bread cubes in the preheated oven until bread is toasted, 10 to 15 minutes.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl using a slotted spoon; reserve drippings in the skillet.
- Cook and stir celery, onion, and garlic in the skillet with sausage drippings over medium heat until vegetables are soft, 5 to 10 minutes.
- Put crumbled corn bread in a large bowl; add bread cubes, celery mixture, sausage, cream of chicken soup, shredded chicken, 1 sleeve crushed buttery round crackers, and eggs. Stir well. Pour in enough chicken broth to make mixture extremely moist. Spoon mixture into the prepared casserole dish. Sprinkle 1/4 cup crushed buttery round crackers over casserole; drizzle with melted butter.
- Bake in the preheated oven until cooked through and topping is lightly browned, about 45 minutes.

My family loved this casserole, even the ones who don't like mushrooms, she just picked them out...LOL! It's quite savory and delicious! If you don't like mushrooms, add a different veggie instead..I used mushrooms, because they needed to get used and were quite tasty with the spinach. Enjoy!

- 1. Cover chicken with water and poach until juice runs clear. Reserve broth. Once chicken is cool, chop. Bring broth back to a boil and cook orzo, about 9 minutes, drain and set aside.
- 2. Preheat oven to 350 degree F. Spray a 2 - 3 quart casserole with non stick cooking spray. In a large skillet,over medium heat - brown onion, mushrooms and garlic. Stirring occasionally.
- 3. Once veggies are tender, add the chicken, orzo, spinach, soup, mayonnaise and seasoning. Stir until well combined. Spread the chicken mixture into casserole dish and sprinkle evenly with cheese and about a handful of bread crumbs.
- 4. Bake for 35 - 40 minutes or until golden and bubbly.

SAVORY CHICKEN CURRY CASSEROLE
This wonderful casserole is full of flavour and texture. Always a hit at potlucks and get togethers, it also freezes well. I will often make this into several smaller dishes and freeze, ready to put in the oven, bake and eat within the hour. Slightly time consuming to make, it's well worth the effort when you eat it!

- Cook rice according to package instructions. Cook chicken (boil, broil or grill) and chop into bite-sized chunks. Partially steam broccoli. Set all these items aside.
- In a large bowl, mix together soup, mayo, curry, lemon juice, salt and pepper.
- Spray a 9x13 casserole dish with PAM. Place cooked rice on bottom. Place partially cooked broccoli around the edges and put the cooked chicken in the middle.
- Pour sauce over top of chicken, broccoli and rice dish and top with grated cheese.

- Pre-Heat oven to 350 Degrees F.
- Assemble noodles and Chicken in 9 x 12 Baking Dish
