1 tablespoon olive oil
1 tablespoon butter
1/4 cup diced onion
1 tablespoon minced fresh rosemary, plus rosemary sprigs, for garnish
2 teaspoons minced fresh thyme
2 cloves garlic, minced
1/2 pound cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1/2 cup red wine, such as Cabernet
1 large egg
1 sheet frozen puff pastry, thawed
All-purpose flour, for dusting
One 8-ounce wheel of Brie
Dried cranberries, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment.
  • Put the olive oil and butter in a large skillet over medium-high heat. When the butter has melted and the oil is hot, add the onion, minced rosemary, thyme and garlic and stir to combine. Add the mushrooms and cook until golden, about 5 minutes. Season with a good pinch of salt and pepper, then stir. Deglaze the pan with the wine and continue to cook until the wine has reduced, about 1 minute. Set aside.
  • In a small bowl, make an egg wash by beating the egg with 1 tablespoon of cold water.
  • Lay out the puff pastry sheet on a floured surface and pile the mushrooms in the middle. Place the wheel of Brie in the center. Fold up the sides of the puff pastry to enclose the mushrooms and Brie, folding in the edges to seal. Place the wrapped Brie on the prepared sheet pan seam-side down and brush with the egg wash.
  • Bake until golden, 30 to 35 minutes. Allow to cool slightly, then top with rosemary sprigs and dried cranberries to resemble an evergreen bush with berries.

1 egg
1 tablespoon water
1 (17.3 ounce) package frozen puff pastry (such as Pepperidge Farm®), thawed
½ cup apricot preserves
¾ cup dried cranberries
½ cup sliced almonds
1 (7 inch) wheel Brie cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk egg and water together to make egg wash.
  • Roll out puff pastry gently to a 14-inch square. Trim corners with a knife or pizza cutter to make a circle. Spread apricot preserves over the pastry, leaving a 1-inch margin around the edge. Sprinkle cranberries and almonds over the pastry, and place Brie cheese in the center.
  • Brush the edges of the pastry with some of the egg wash. Fold top and bottom of pastry over the dough; trim 2 inches off each edge. Fold remaining pastry on top to cover the Brie cheese completely. Press the seams with your fingers to seal. Remove any excess apricot preserves that leaks out.
  • Transfer wrapped cheese, seam-side down, to baking sheet. Brush top with egg wash.
  • Bake in the preheated oven until top is golden brown, about 20 minutes. Let stand before serving, about 30 minutes.

My husband and I love to entertain. I love brie, he loves mushrooms so I was trying to create a new recipe including both to share with our friends. Everyone loves this recipe so I wanted to share it.

8 oz baby brie
1 puff pastry sheet, thawed
8 oz fresh sliced mushrooms
1/2 large yellow onion, diced fine
1 Tbsp minced garlic
2 Tbsp butter, unsalted
1 Tbsp olive oil, extra virgin
2 tsp thyme leaves, chopped fine
2 tsp rosemary sprigs, chopped fine
1/2 tsp garlic pepper
1/2 tsp lawry's seasoning salt
1/2 tsp mrs dash original seasoning
1 egg, beaten (use for egg wash)
1 sourdough baguette bread
swanson's chicken broth

Steps:

  • 1. Defrost puff pastry just until you are able unfold easily. Sprinkle just enough flour on work surface so pastry doesn't stick Preheat oven to 400 degrees Slice baguette of sourdough bread into thin slices.
  • 2. Heat skillet, add olive oil and butter. Add onion, and saute until transparent. Add garlic, mix well. Continue cooking couple minutes. Add the mushrooms making sure not to crowd pan while sauteing. Stir frequently so they cook evenly, add more butter if mixture is too dry. Add seasonings, more or less according to your taste, and continue till mixture is softened and mushrooms are browned. Add just enough of Swanson's chicken broth to cover mixture. Continue until liquid is reduced and mixture is thickened and done. Remove from heat and cool.
  • 3. Roll pastry out, just enough for brie to fit in center and pastry to wrap over it Slice brie in half horizontally. Lay half (cut side up) the brie on pastry, place cooled mushroom mixture on top. Place 2nd half(cut side down) brie on top. Cover with pastry, starting with opposite corners and wrap. Make like a bundle by twisting pieces of pastry; or turn over and decorate top with pieces of pastry. Brush top and sides with egg wash. Place on ungreased cookie sheet lined with parchment paper. Refrigerate 30 minutes before baking to prevent cheese melting too much; it will still be soft and spreadable. Bake @ 400 for 30 minutes, or until pastry is browned and cheese is soft.

1 (6- to 8-ounce; 170 to 225g) round Brie or Camembert cheese, slightly chilled (see note)
10-inch square chilled puff pastry dough
All-purpose flour, for dusting
Fig jam, for topping
1/2 teaspoon picked fresh thyme leaves (from 2 medium stems)
1 large egg beaten with 1 tablespoon (15ml) water

Steps:

  • Preheat oven to 350°F (180°C). Using a sharp knife, score top rind of cheese in a crisscross pattern, spacing cuts about 1 inch apart.
  • Place puff pastry on a lightly floured work surface and roll to an even 1/4-inch thickness. Set cheese in center of square, top with a few tablespoons of fig jam, and sprinkle thyme leaves on top. Fold dough up and over sides of cheese, pleating it neatly on top to enclose cheese. Gently pinch dough together in center to seal gathered pleats. You can tie a bit of kitchen twine on top to hold pleats together if you like, but this is not essential.
  • If dough is no longer cold, chill wrapped cheese for at least 20 minutes. (Prepared cheese wheel can be wrapped tightly with plastic wrap and refrigerated until ready to bake.)
  • Line a baking sheet with parchment paper. Place wrapped cheese wheel on prepared baking sheet and brush evenly with egg wash. Bake until pastry is crisp and golden brown all over, 25 to 35 minutes. Let rest 5 minutes, then serve.

This MY tweaked version of a recipe by Paula Deen (She rocks my world!) AND, this is quite similar to the appetizer at THE CAV that we fell head over heels in LOVE with! I am often torn with brie between "rind" or NO RIND". Speaking from experience, this appetizer needs the rind, or it will simply be volcanic OOZE all over you baking sheet! So, I slice off just the TOP rind in order for the preserves and yummy toasted nuts to blend into the cheese. Also, please feel free to use ANY flavor of fruit preserve that suits your tastes. I listed apricot and strawberry because that's what I have used in the past! : >

1 tablespoon unsalted butter
1/2 cup sliced almonds or 1/2 cup walnuts
1/4 teaspoon ground cinnamon
1/4 cup apricot preserves or 1/4 cup strawberry preserves
1 (8 ounce) brie round
1/4 cup brown sugar
1 egg, beaten
cracker, for serving

Steps:

  • Preheat oven to 375°F.
  • Defrost puff pastry for approximately 15 to 20 minutes and unfold.
  • In a saucepan, melt the butter over medium heat.
  • Saute the walnuts in the butter until golden brown, approximately 5 minutes.
  • Add the cinnamon and stir until walnuts are coated well.
  • Carefully slice the top rind ONLY off of the brie round.
  • Spread your choice of fruit preserves over the top of the brie.
  • Then place the walnut mixture on top of the Brie ad fruit and sprinkle the brown sugar over the top.
  • Lay the puff pastry out on a flat surface.
  • Place the brie in the center of the pastry.
  • Gather up the edges of the brie, pressing around the brie and gather at the top.
  • Gently squeeze together the excess dough and tie together with a piece of kitchen twine.
  • Brush the beaten egg over top and side of Brie.
  • Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.
  • Serve with crackers.

Steps:

  • Preheat oven to 400°F
  • In a small bowl, mix together the walnuts, 1 1/2 tbsp of butter, rosemary and cayenne; set aside.

I just wing it. It can be made with either puff pastry sheets (quick and easy) or phyllo sheets (more work, flakier shell). Serve with fancy table crackers or digestive biscuits.

1 shallot, minced
2 cloves garlic, minced
¼ teaspoon white pepper
1 tablespoon dry vermouth
1 (8 ounce) round Brie cheese
3 sheets phyllo dough
2 tablespoons melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Stir the shallot, garlic, white pepper, and vermouth together in a small bowl; set aside. Cut the rind off the top of the brie cheese, leaving a 1/4-inch lip around the edge. Place the brie cheese onto a baking sheet, and spoon the shallot mixture over top. Fold the phyllo sheets in half to make square pieces.
