2 pounds cooked medium shrimp, peeled and deveined
1 medium red onion, sliced and separated into rings
2 medium lemons, cut into slices
1 cup pitted ripe olives, drained
1/2 cup olive oil
1/3 cup minced fresh parsley
3 tablespoons lemon juice
3 tablespoons red wine vinegar
1 garlic clove, minced
1 bay leaf
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a 3-qt. glass serving bowl, combine shrimp, onion, lemons and olives. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat. , Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.

OLD BAY MARINATED AND GRILLED SHRIMP

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

1 cup olive oil
ΒΌ cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
6 each skewers

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

2 pounds uncooked jumbo shrimp, peeled and deveined
1 cup olive oil
2 garlic cloves, minced
4 teaspoons dried rosemary, crushed
2 teaspoons dried oregano
2 bay leaves
1 cup dry white wine or chicken broth
3/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a bowl, combine the shrimp, oil, garlic, rosemary, oregano and bay leaves. Cover and refrigerate for 2-4 hours. , Pour shrimp and marinade into a large deep skillet. Add wine or broth, salt and pepper. Cover and cook over medium-low heat for 10-15 minutes or until shrimp turn pink, stirring occasionally. Discard bay leaves. Transfer with a slotted spoon to a serving dish.

2 1/2 pounds large shrimp (21/25 count), peeled and deveined
3 onions, preferably Vidalia, very thinly sliced
1/2 red bell pepper, cored, seeded, and very thinly sliced
4 bay leaves, preferably fresh
2 cloves garlic, very finely chopped
1 tablespoon whole black peppercorns
1 teaspoon red pepper flakes
Coarse salt and freshly ground black pepper
1 cup apple cider vinegar
1/2 cup canola oil
Grated zest and juice of 1 lemon

Steps:

  • In a large, nonreactive bowl, layer some of the shrimp, onions, bell pepper, bay leaf, garlic, peppercorns, red pepper flakes, and freshly ground black pepper. Create several layers of these ingredients until he remaining amount is used. Set aside.
  • In a large liquid measuring cup, combine the vinegar, oil, and lemon zest and juice. Pour this marinade over the shrimp mixture. Cover tightly with plastic wrap and refrigerate, stirring occasionally, until the shrimp is pink and opaque, at least 4 hours and up to 8 hours. Taste and adjust for seasoning with salt and pepper before serving.
