1 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh thyme (or half the amount dried thyme)
3 zucchini, cut into half moons (or summer squash or a combination)
Salt and pepper

Steps:

  • Heat the olive oil over medium high heat.
  • Add the garlic and thyme. Cook for 1 minute until fragrant.
  • Add the zucchini. Stir and then press down into the pan and let cook for 2-3 minutes without stirring until the zucchini begins to brown.
  • Stir and cook for 2-3 more minutes until tender crisp.
  • Turn off the heat and season with salt and pepper. Top with extra thyme if desired. You can also add fresh lemon juice and Parmesan cheese.

3 medium zucchinis cubed
4 cloves of garlic sliced
2 tbsp. extra virgin olive oil
1/2 tsp. salt
1/4 tsp. black pepper

Steps:

  • In a large skillet or pot, add in the extra virgin olive oil and bring to a high heat.
  • Next, add in the garlic and sauté until the garlic is golden, about 2 minutes.
  • Lower to a medium heat and add in the zucchini, salt, and pepper, and sauté until tender, about 8-10 minutes, mixing occasionally.
  • Serve as a side dish with chicken, pork, or steak. For a vegetarian option, serve this zucchini over pasta.

3 medium zucchini, sliced into 1/2-inch-thick rounds
3 sprigs fresh thyme, leaves chopped
1 clove garlic, minced
1/2 lemon, juiced

  • Heat a cast-iron pan over medium-high heat. Once hot, add the oil. Add the zucchini in batches and sear on both sides until golden brown, about 1 minute per side. Once the second batch is seared, add the first batch back into the pan, and then add the thyme and garlic. Saute until the garlic is fragrant, another 30 seconds.
