Here is one simple technique that guarantees juicy results every time. First, pound the chicken: making it thinner ensures quick and even cooking. Next, dredge the chicken lightly in seasoned flour, which helps it turn deep golden brown when sauteed. After the chicken is cooked, deglaze the skillet with broth, wine or a little water to make a pan sauce. The liquid loosens the flavor-boosting browned bits from the bottom of the pan, making a tastier sauce.

4 boneless, skinless chicken breast halves, (1-1 1/4 pounds)
¼ cup all-purpose flour
½ teaspoon salt, or to taste
Freshly ground pepper, to taste
1 jalapeno pepper, seeded and minced
2 cloves garlic, minced
2 teaspoons minced fresh ginger
½ cup reduced-sodium chicken broth
1 tablespoon extra-virgin olive oil, or canola oil
½ cup orange juice
1 tablespoon brown sugar
¾ teaspoon cornstarch
1 mango, cut into 1/2-inch dice (1 cup)
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro, or mint

Steps:

  • Trim visible fat from chicken breasts. Remove the tenders (the long thin flaps); reserve for another use (see Tip). Place trimmed chicken breasts between 2 pieces of plastic wrap. Pound with a rolling pin, meat mallet or heavy skillet until flattened to an even thickness, about 1/2 inch. Combine flour, salt and pepper in a shallow glass dish. Dredge chicken in seasoned flour, shaking off excess. (Discard any leftover flour.)
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook until well browned and no longer pink in the center, 4 to 5 minutes per side. Transfer to a plate, cover and keep warm.
  • Add jalapeno, garlic and ginger to the pan; cook over medium heat, stirring, until softened, 1 to 2 minutes. Add broth and deglaze, scraping up any browned bits, for 1 minute. Mix orange juice, brown sugar and cornstarch in a small bowl. Add to the pan and bring the sauce to a simmer, stirring. Cook, stirring often, until thickened and slightly reduced, about 4 minutes. Stir in mango and cook until heated through, about 1 minute. Remove from heat and stir in lime juice. Spoon over the chicken and sprinkle with cilantro (or mint).

3 tablespoons peanut oil
2 tablespoons soy sauce
1 tablespoon honey
6 boneless, skinless chicken thighs, cut into 1-inch cubes
1 cup salted cashews
3 medium garlic cloves, thinly sliced
1/4 medium yellow onion, roughly chopped (about 1/4 cup)
1 medium mango, roughly chopped (about 1 cup)
Sesame Rice, recipe follows
3 1/2 cups water
2 cups long-grain rice
1 tablespoon kosher salt
2 tablespoons toasted sesame oil
1/4 cup white sesame seeds

Steps:

  • In a large bowl or re-sealable plastic bag, mix together 2 tablespoons of the oil, the soy sauce, and the honey until well combined. Add chicken and toss to coat well. Place in refrigerator to marinate at least 30 minutes and up to 2 hours.
  • Meanwhile, heat a large frying pan over medium heat and add nuts. Toast nuts, shaking pan a few times, until nice toasted, about 2 minutes. Set aside to cool. (Can be made up to 3 days in advance.)
  • When chicken is ready, heat remaining 1 tablespoon oil in a large frying pan over medium heat. Add garlic and onion and cook until soft, about 2 minutes. Add chicken and marinade juices and cook, stirring occasionally, until chicken is browned on all sides and cooked through, about 6 minutes. Stir in mango and cashews and cook until heated through, about 1 minute. Taste and adjust seasoning, as necessary. Serve immediately over Sesame Rice.
  • Bring water to a boil. Add rice and salt and stir to combine. Reduce heat to low, cover, and simmer until rice is tender and water is absorbed, about 10 minutes. Remove from heat and let stand, covered, to finish cooking, about 5 minutes. Stir in oil and sesame seeds and serve.

6 whole chicken legs, skinned
4 carrots, sliced thick
1 large onion, cut into 1/8-inch pieces
1 navel orange, cut into 1/8ths
1 tablespoon herbes de Provence
1 teaspoon seasoned salt or Cavender's Greek seasoning
2 tablespoons honey
1 tablespoon Dijon mustard
2 tablespoons olive oil, or to taste
Hot pepper sauce, to taste
2 zucchini, sliced

Steps:

  • Preheat oven to 350 degrees.
  • Arrange chicken in an oiled baking dish and surround with the carrots, onion and orange. Sprinkle the chicken and vegetables with the herbes de Provence and seasoned salt.
  • In a small bowl combine the honey and mustard and brush the mixture over the chicken. Drizzle the chicken and vegetables with the oil and sprinkle with hot pepper sauce. Bake, covered with foil, basting occasionally, for 45 minutes. Uncover, add zucchini, and bake for an additional 20 minutes or until juices from chicken run clear and vegetables are tender. If desired, run under a preheated broiler about 4 inches from the heat until golden.

2 bunches asparagus (2 pounds)
Salt and fresh ground black pepper
1/4 cup slivered almonds
2 teaspoons olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 tablespoon sugar
1 pound cut-up skinless boneless chicken breasts
1/2 cup fresh lime juice
1/2 cup rum
1 teaspoon finely grated lime zest
1/4 cup chopped fresh mint leaves
1 cup couscous, cooked according to package directions

Steps:

  • Preheat oven to 400 degrees F
  • Coat a large baking sheet with cooking spray.
  • Arrange asparagus on baking sheet and spray with cooking spray. Season with salt and black pepper. Roast 10 minutes. Top the asparagus with almonds and roast 5 more minutes, until fork-tender and almonds are golden brown. Remove from the oven and set aside.
  • Meanwhile, heat oil in a large skillet over medium heat. Add onion, garlic and sugar and cook 3 minutes, until soft stirring with wooden spoon. Add chicken and saute 3 to 5 minutes, until golden brown on all sides. Add lime juice and carefully, off the heat, add the rum. Return to the heat and add lime zest, salt, pepper and bring to a simmer. Simmer for 3 minutes, until chicken is cooked through, about 12 to 15 minutes. Serve chicken, garnished with mint, over couscous with the almond topped asparagus on the side.

1 clove garlic, minced
Olive oil, for sauteing

Steps:

  • In a large pan, saute red peppers, green peppers, garlic, thyme, and rosemary until the vegetables begin to soften. Remove from the heat and allow to cool while you prepare the chicken. Pound the chicken breasts in between 2 pieces of plastic wrap until they are flattened. Place the sauteed vegetables in the center and roll the breast around them. Secure closed with a toothpick, if necessary.
  • Heat a large saute pan over medium heat. Add enough oil to lightly coat the bottom of the pan and heat. Add the stuffed chicken and cook until all sides are browned and the chicken is cooked through.
  • Combine the mango, garlic, and the red onion and place in a medium-sized bowl. Add salt, lime juice, and corn syrup to the bowl and thoroughly combine. Serve the salsa over the sauteed chicken.
  • In a medium saute pan, cook the bacon until it is crisp. Drain and crumble the pieces into a bowl. In a separate pan, saute asparagus with garlic until the asparagus is tender. Add crumbled bacon on top of the spears.

2 1/2 tablespoons flour, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb boneless skinless chicken breast, cut bite-size
2 teaspoons oil
1 cup chicken broth
1 1/2 teaspoons minced garlic
8 ounces fresh asparagus, ends trimmed, spears cut bite-size
1 cup grape tomatoes, halved
2 tablespoons chopped scallions
2 tablespoons chopped dill

Steps:

  • Mix 2 Tbsp flour and the salt and pepper in a ziptop bag.
  • Add chicken; shake to coat.
  • Heat oil in a large nonstick skillet.
  • Add chicken; sauté 5 minutes, or until cooked through. Remove to a plate.
  • In a cup, mix remaining flour, the broth and garlic.
  • Add asparagus to skillet and sauté 1 minute until bright green.
  • Stir chicken broth mixture, add to pan and cook 1 minute until thickened slightly and asparagus are tender.
  • Add chicken back to pan.
  • Stir in tomatoes; remove from heat.
  • Stir in scallions and dill.

1 lb boneless skinless chicken breast, cut into bite-size cubes
1 large egg white, lightly beaten
1 tablespoon cornstarch
2 1/2 tablespoons vodka
1/2 tablespoon canola oil
1/2 cup dry white wine
1 tablespoon low sodium soy sauce
1/2 cup low sodium chicken broth
vegetable oil cooking spray
3 scallions, white part and 2 inches green,cut into 1 inch pieces
1 clove garlic, minced
2 inches fresh ginger, peeled and julienned
1/2 red bell pepper, 3 oz seeded and julienned
6 ounces thin asparagus, cut into 2 inch pieces
1 small ripe mango, 4 oz peeled and cut into chunks

Steps:

  • Place the cubed chicken in a bowl.
  • Add the egg white, cornstarch, vodka, and canola oil.
  • Stir to coat the chicken, then set aside to marinate while you prepare the rest of the recipe.
  • Combine the white wine, soy sauce and chicken stock in a pitcher.
  • Heat a large non stick skillet and spray it with cooking oil.

Seared chicken and asparagus with mango salsa, the perfact main course for a wedding

4 medium, firm but ripe mangoes
juices of 2 limes , zest of 1
2 small red onions , finely chopped
4 red chillies , seeded and finely chopped
40g combined weight fresh flatleaf parsley and coriander, chopped
250ml extra-virgin olive oil
1 tsp caster sugar , optional
60 asparagus spears
125ml olive oil
5 tbsp light olive oil
20 skinless, boneless chicken breasts , about 140g/5oz each (preferably freerange)

Steps:

  • The day before: make the mango salsa, peel the mangoes and cut the flesh into tiny dice. Put into a bowl with the lime juice and zest, the red onions, chillies, parsley, coriander and olive oil. Taste, and mix in a teaspoon of sugar if you feel it needs it. Put in the fridge.
  • Preheat the oven to 200C/gas 6/fan 180C. Put 2 baking trays in the oven to preheat. Hold each asparagus tip about a third of the way down from the tip between your thumb and forefinger, and your other hand at the bottom. Start to bend it gently and it will snap just above the tough bit which you can throw away. Now toss the asparagus in the olive oil and season well with salt and pepper.
  • Put in a single layer on the pre-heated baking trays and roast for 12-14 minutes, giving them a good shake halfway through. When they are cooked, remove from the baking trays to cool or else they will keep cooking. Keep the oven on.
  • For the chicken, heat a griddle pan over a high heat till hot. Brush the chicken with olive oil and generously season with salt and pepper. Cook the chicken breasts, 4 at a time in the pan (depending how many will fit) for 2-3 minutes each side - they should be well marked with the griddle lines. Remove from the griddle and lay in a single layer on foil lined baking sheets. Roast for 12-15 minutes until cooked. Take out of the oven, cool, then cover and put in the fridge.
  • On the day: take the mango salsa from the fridge and leave at room temperature to allow the flavours to combine.
  • When you are ready to serve, arrange on two platters, allowing three spears of asparagus topped with a chicken breast per person. Spoon over the mango salsa, reserving some to put in bowls on the side, and drizzle over any oil from the salsa.
