Steps:
- Preheat oven to 350 degrees F. Spray a miniature muffin pan with cooking spray.
- Insert wonton wrappers into the muffin pan so as to form small cups. Bake 5 minutes in the preheated oven. Allow the baked wrappers to cool.
- In a medium bowl, mix the cooled sausage, cheeses, and Ranch dressing. Fill the baked wonton wrappers cups with the mixture.
- Bake the filled wonton wrappers 10 to 15 minutes, until the sausage mixture is bubbly and slightly brown. Watch closely so the wonton wrappers do not burn.

- Beat the egg white and water together in a small bowl; set aside. Lightly mix the ground beef, sausage, 1 tablespoon sweet chile sauce, five-spice powder, garlic powder, green onion, and salt and pepper. Place about 1 teaspoonful of the meat mixture onto a wonton wrapper with one corner facing you. Fold in the left and right corners of the wrapper to slightly overlap the filling, then tightly roll the lower corner up to create a pocket around the filling. Continue rolling until just the tip of the remaining corner is visible; brush the corner with the egg white mixture to seal.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Fry the egg rolls in the hot oil in batches until golden brown, 3 to 5 minutes. Drain on a paper towel-lined plate. Serve with 1/2 cup of sweet chili sauce.

- Preheat oven to 350º.
- Blot cooked sausage with paper towels to remove grease and combine with cheeses, olives, peppers and salad dressing.
- Slightly grease mini or regular muffin tins with vegetable oil spray. Press wrappers in tins and spray wrappers with oil.
- Bake 5 minutes or until golden.
- Remove from tins and place on cookie sheets. Fill with sausage mixture. Bake for another 5 to 10 minutes until the cheeses are bubbly.

PORK AND WATER CHESTNUT SAUSAGE WONTONS IN WATERCRESS AND SHIITAKE MUSHROOM SOUP
In the annals of folk medicine, watercress soup is said to be good for soothing a dry throat or for when a general system-cleansing tonic is needed. Here, the nip and pep of watercress infuses chicken broth made rich with slivers of shiitake mushroom and plump sausage-filled wontons to produce a new take on wonton soup that is both healthful and delicious. Hydroponic watercress, meaning watercress grown in water and without soil, closely resembles watercress you might pick alongside a running stream in spring, but it has finer, more delicate stems and far less dirt and sand on its leaves. It is often available year-round in supermarket produce sections.

- To make the wontons, place 1 heaping teaspoon of the sausage in the center of each wonton wrapper. Lightly brush the edges of the wrapper with water, and fold it over corner to corner to make a triangle. Press the edges together with a fork to seal. As the wontons are made, transfer them to a plate. Use right away, or cover with plastic wrap and refrigerate until ready to use, within a few hours.
- To make the soup, combine the broth and shiitake slices in a large saucepan and place over medium-high heat. When the broth just begins to boil, drop in as many wontons as will fit without crowding and cook until they rise to the top, 3 to 4 minutes. With a slotted spoon, transfer the wontons to a plate and repeat with the remaining wontons.
- When all the wontons are cooked, stir the watercress into the simmering broth and return the wontons to the pan. Reheat gently, then ladle into individual bowls and serve right away.
SAUSAGE STEAMED WONTONS
Another do ahead recipe. Very tasty tid-bit and they are steamed not deep fried. Vary the dipping sauce to your taste

Steps:
- Break up the sausage as you cook it (5 minutes), drain off fat.
- Stir in chopped mushrooms.
- Saute about 5 minutes or until the liquid evaporates.
- Remove skillet from heat and stir in the cream cheese, let cool 15 minutes.
- Brush edges of wrapper with water (use a Q tip).
- Place a heaping tsp of meat mixture in the center.
- Bring the 4 corners up over the meat and seal.
- repeat with remaining wrappers (you can now freeze them for up to 3 weeks, place in single layer separated by waxed paper in an air tight container).
- Place dumplings in a steamer basket over gently boiling water cover and steam for 10 minutes fresh and 15 minutes if frozen.
- Serve warm with the worcestershire sauce as a dip.
BAKED SAUSAGE WONTONS

- Cook and drain sausage.
- Add cream cheese, A1 Steak Sauce and garlic powder, mix well.
- Chill mixture until cream cheese becomes cool.
- Put 1 to 1-1/2 teaspoons of mixture onto the center of a wonton wrapper.
- Moisten edges of wonton with water.
- Fold wonton over to form a triangle and seal edges.
- Fold all three corners over to form what looks like a envelope; seal corners together with water.

Bring corners together, pressing to seal. In a Dutch oven, pour oil to a 2-inch depth and heat to 350°. Fry wontons in batches until golden, turning once. Drain on paper towels. Serve immediately.

- Gently press wontons into muffin pan. Bake 350 degrees until corner tips start to turn brown and cups hold their shape (about 5 minutes). Remove from pan and place in shallow baking dish.
