- In a 12-in. skillet, heat oil over medium-high heat; saute sausage and onion until onion is tender. Add garlic and pepper flakes; cook and stir 1 minute., Add potatoes, corn, pepper and broth; bring to a boil. Reduce heat to medium; cook, covered, until potatoes are tender, 15-20 minutes. Stir in spinach until wilted.

- In a large skillet, saute sausage in butter for 3-4 minutes or until lightly browned. Add the potatoes, onion and apple; saute 4-5 minutes longer or until apple is tender and potatoes are golden brown. Stir in the vinegar, sugar and caraway seeds., Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Sprinkle with parsley.

- In a large nonstick skillet, brown sausage in 1 T olive oil; remove from skillet.
- Add remaining olive oil to skillet and saute peppers and onions for 5 minutes; remove from skillet.
- Add potatoes, salt, pepper, Italian seasoning, garlic powder, fennel seed and water to skillet; simmer over medium heat, covered, about 5 minutes.
- Return sausage, peppers and onions to skillet and mix well. Cover and simmer about 10 minutes, stirring occasionally, or until sausage is done and potatoes are tender.

- Cook the pierogi according to the instructions on the package while cooking the rest of the dish in the skillet, unless they are heat and serve. (If they are heat and serve, reserve for step 7.).
- Heat the oil in a large, non-stick skillet over medium heat.
- Add the onion and cook until translucent, stirring frequently.
- Add the apple and cook until softened, stirring frequently.
- Add the garlic and thyme and stir well.
- Add the sausage and cook until it starts to brown, stirring frequently.

- Heat the oil in a very large skillet with sides at least 2 inches high. Add the sausage and onion and sauté over medium heat, stirring, until the onion is softened and the sausage begins to brown, about 6 minutes.
- Add the sliced potatoes, sprinkle with the flour, thyme, and pepper and toss gently but thoroughly to combine well. Pour the broth, apple juice, and wine over the potato mixture and add the bay leaf.

- Place sausage in a cast-iron frying pan with about 1 inch of water. Simmer over medium heat until water evaporates. Add butter and/or pork fat along with onion. Melt butter and then saute onions and sausage for 2 to 3 minutes. Add sauerkraut, brown sugar and mustard along with 1/2 cup water. Cover and cook for 10 to 15 minutes, stirring frequently. Brown sausage on both sides and serve immediately or cover and simmer over low heat until dinnertime. Yield: Serves 4.

- 1. Stir together the potatos and sauce mix from box of potatos in a saucepan. Add hot water, milk and butter and stir all. Heat just to boiling point, while stirring occasionally.
- 2. Now add sausage (or ham) and salsa to the pot and stir to mix all together. Reduce heat and cover pot and simmer for about 20 minutes. Stir frequently.
- 3. Now stir in the broccoli and cover pot again and cook about 8 minutes or until the broccoli is tender.
- 4. Allow to sit off heat for a few minutes to allow sauce to thicken
- 5. Sprinkle with bacon crumbles and Serve with some sliced italian or cuban bread and enjoy
