1 pound bulk mild Italian sausage
1 can (14-1/2 ounces) Italian diced tomatoes, lightly drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 cups shredded Italian cheese blend, divided
1 package (24 ounces) refrigerated garlic mashed potatoes

Steps:

  • Preheat oven to 375°. In a Dutch oven over medium heat, cook sausage, crumbling meat, until no longer pink, 5-6 minutes; drain. Stir in tomatoes, spinach and 2 cups cheese., Pour sausage mixture into a greased 11x7-in. baking dish; top evenly with mashed potatoes. Bake 20 minutes; sprinkle with remaining cheese. Bake until cheese is melted and top begins to brown, about 20 minutes longer. Let stand 10 minutes before serving.

6 potatoes
5 toscana sausages
4 italian tomatoes
1 onion, half chopped, half grated
1 green chilli, chopped
1 tablespoon butter
2 tablespoons oil
7 oz mozzarella cheese
parmesan cheese
1 cup milk
¼ cup fresh parsley, chopped
¼ cup green onion, chopped
3 teaspoons salt
1 teaspoon pepper

Steps:

  • Peel the potatoes and put in a large pan with water along with the sausages. Cook until the potatoes are tender enough to be mashed.
  • Drain and mash the potatoes. Set aside. Chop the sausages and set aside.
  • In a large pan, add the butter, ½ grated onion, mashed potatoes, and milk. Mix until it becomes a puree. Season with salt and pepper. Set aside.
  • In a large pan, put the oil, chopped onion, green chilli and mix until the onion is transparent.
  • Add the chopped sausage, tomatoes, and salt. Cook until the tomatoes are soft and become a sauce. Sprinkle in the parsley and green onions. Mix gently. Set aside.
  • Preheat the oven to 200ºC (400ºF).
  • In a large, oven-safe casserole dish, smooth a layer of half the potato puree, a layer sausage sauce, mozzarella, then the remaining potato puree.
  • Sprinkle the top with parmesan cheese and chopped parsley.
  • Bake for 35 minutes or until the cheese is melted and the top layer is turning it is golden.

1 medium butternut squash (about 1 1/2 pounds, peeled and cut into 1 inch cubes)
3 large baking potatoes (about 1 1/2 pounds, peeled and cut into 1 inch cubes)
3/4 cup low-fat milk
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cayenne pepper
3 medium onions, chopped
2 tablespoons vegetable oil
2 garlic cloves, finely chopped
1 1/2 lbs ground beef
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon ground thyme
1/4 teaspoon black pepper
2 tablespoons all-purpose flour
1 (28 ounce) can chopped tomatoes
1 lb green beans, trimmed and cut into 1/2 inch lengths
1 egg

Steps:

  • prepare topping: cook squash and potatoes in boiling water until tender about 15 minutes.
  • drain squash and potatoes; return to pot.
  • Add milk, salt, 1/4 tsp black pepper, nutmeg and red pepper. Mash with potato masher until fluffy. Set aside to cool slightly.
  • Preheat oven to 375 degrees.
  • Prepare filling: saute onion in oil in large skillet until softened, for about 5 minutes.
  • Add garlic, saute 1 minute.
  • Remove to plate.
  • Crumble beef to skillet; cook until browned about 5 minutes.
  • Stir in basil, oregano, cumin, salt, thyme, pepper, reserved onion mixture and flour.
  • Add tomatoes and green beans.
  • Bring to boiling.
  • Lower heat; cover and cook 10 minutes.
  • Spoon into 13 x 9 x 2 inch glass baking dish.
  • Beat egg into squash and potato mixture. Spread over filling, making decorative swirls.
  • Sprinkle with paprika if desired.
  • Bake in 375 degree oven for 40 minutes or until bubbly and top is golden brown.
  • Transfer baking dish to wire rack and cool for 15 minutes before serving.

5 large potatoes and/or sweet potatoes, peeled and cut into chunks
1 pound ground beef
1/2 pound bulk pork sausage
1/2 pound medium fresh mushrooms, quartered
2 large carrots, chopped
2 celery ribs, chopped
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup orange juice
2 teaspoons grated orange zest
1 teaspoon ground nutmeg
1/4 teaspoon Worcestershire sauce
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/4 cup Dijon mustard
2 teaspoons brown sugar
2 teaspoons rice vinegar

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a large skillet, cook the beef, sausage, mushrooms, carrots, celery, onion and garlic over medium heat until meat is no longer pink and the vegetables are tender; drain., Stir orange juice, orange zest, nutmeg, Worcestershire sauce and 1/4 teaspoon each salt and pepper into skillet. Bring to a boil; cook until liquid is evaporated. , Preheat oven to 350°. Transfer meat mixture to two greased 8-in. square baking dishes., Drain potatoes and place in a large bowl.
