SAUSAGE SAUERKRAUT SUPPER

- In a 5-qt. slow cooker, layer the carrots, potatoes and sauerkraut. In a large skillet, brown sausages. When cool enough to handle, cut into 3-inch pieces; transfer to slow cooker (slow cooker will be full). Reserve 1 tablespoon drippings; saute onion and garlic in reserved drippings until tender. , Gradually add wine. Bring to a boil; stir to loosen browned bits. Stir in pepper and caraway. Pour over sausage. Cover and cook on low for 8-10 hours or until a thermometer inserted in the sausage reads 160°.

- 1. Place sauerkraut in bottom of a large casserole dish. Top with onions and potatoes. Cut sausage into serving sized pieces. Place on top of casserole. Cover dish and bake at 350 degrees for about 1 hour or until potatoes are tender and done.

- 1. In a 4 1/2 to 5 1/2 quart slow cooker, combine potatoes, sweet pepper, and carrot. Add sausage 2. In a small bowl, stir together apple juice, cider vinegar, caraway seeds, salt and black pepper. Pour over mixture in cooker. 3. Cover and cook on low heat setting for 5 to 6 hours or on high heat setting for 2 1/2 to 3 hours. 4. If using low heat setting, turn to high heat setting. Stir in sauerkraut. Cover and cook for 30 minutes more. To Serve, transfer mixture to a serving bowl.
