1 lb sausage
1 cup chopped onion (optional)
6 eggs
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dry mustard
4 slices bread, cubed
1 cup grated cheese
2 tablespoons margarine

Steps:

  • Cook sausage and onion until done; break into small pieces. Drain and set aside.
  • Combine eggs, milk, salt, pepper, and mustard into mixing bowl. Mix well.
  • Grease a 13 x 9 inch casserole dish with the butter or margarine.
  • Layer the cubed bread, sausage, and 1/2 cup cheese into dish.
  • Pour in the egg mixture and sprinkle with remaining cheese.
  • Bake uncovered in preheated oven at 350 for 45 minute.
  • This recipe can be prepared ahead of time and refrigerated prior to baking.

12 ounces reduced-fat pork sausage
6 ounces mushrooms, sliced
1 (3 ounce) package bacon bits
12 ounces reduced-fat cheddar cheese, shredded
16 ounces non fat small curd cottage cheese
1/4 cup light butter
1 (20 ounce) package refrigerated diced potatoes with onions
1 pint egg beaters southwestern egg substitute
salt and pepper

Steps:

  • Heat oven to 375 degrees.
  • Coat a 9x13 pan with Pam.
  • Melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
  • Brown the sausage over medium-high heat, adding mushrooms about half way through.
  • Meanwhile, mix cheddar cheese and cottage cheese.
  • Layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
  • Pour egg beaters evenly over entire pan.
  • Bake for about an hour, or until a knife inserted in the center comes out clean.

1 tablespoon unsalted butter, plus more for greasing the pie plate
8 ounces sweet Italian sausage
2 shallots, finely chopped
10 ounces frozen chopped spinach, thawed
1 1/2 ounces (about 1/3 cup) chopped sun-dried tomatoes, plus 8 thin strips for garnish
10 large eggs
1/2 cup whole milk
Kosher salt and freshly ground black pepper
2 ounces goat cheese, cut into 7 oblong pieces and 1 circular piece

Steps:

  • Preheat the oven to 325 degrees F. Grease a 9-inch deep-dish pie plate with butter.
  • Heat the butter in a large skillet over medium heat. Remove the sausage from its casing and place in the skillet. Cook, breaking apart the sausage with a wooden spoon, until cooked through and fully browned, about 10 minutes. Remove to a paper-towel-lined tray and set aside.
  • Add the shallots to the same pan and cook until soft, about 2 minutes. Add the spinach, 1/4 teaspoon salt and 1/4 teaspoon pepper and cook until the spinach is tender and its water has evaporated, 5 to 7 minutes. Add the chopped sun-dried tomatoes and cook until heated through.
  • Add the sausage to the prepared pie plate and then top with cooked spinach mixture.
  • In a medium bowl, beat together the eggs, milk, 1/4 teaspoon salt and 1/4 teaspoon pepper until frothy, about 1 minute. Pour the egg mixture over the spinach and sausage. Place the circular piece of goat cheese in the center of the pie dish and arrange the oblong pieces around it like flower petals. Place the sun-dried tomato strips in between the goat cheese "petals."
  • Bake for about 30 minutes, until set.

1/2 lb bulk turkey sausage
1/4 teaspoon fennel seed
1/4 teaspoon dried oregano leaves
1/4 lb French bread, cut into 1/2-inch cubes
1 (8 ounce) carton egg substitute
2/3 cup skim milk
1/2 cup evaporated skim milk
1 teaspoon dry mustard
1/8 teaspoon cayenne pepper
1 dash black pepper
paprika (to garnish)
1/2 cup grated reduced-fat sharp cheddar cheese

Steps:

  • Coat nonstick skillet with cooking spray at medium-high heat for 1 minute.
  • Add sausage, fennel, oregano.
  • Cook until brown, then transfer to paper towel and set aside.
  • Coat an 8-inch square baking pan with cooking spay and line the bottom with cubed bread.
  • Sprinkle meat over bread.
  • In separate bowl, combine remaining ingredients and pour over sausage.

12 cups seasoned croutons
2 cups sharp cheddar cheese, Grated
1 1/2 lbs bulk sausage
4 eggs
2 1/2 cups milk
3/4 teaspoon dry mustard
1/2 teaspoon salt
1 dash pepper
1 can cream of mushroom soup
1/2 cup milk

Steps:

  • Place croutons on bottom of greased casserole, top with 1 1/2 cups of cheese.
  • Brown and drain sausage, put on top of cheese.
  • Beat eggs with milk and seasonings, pour over top.
  • Refrigerate overnight.
  • Next Day:
  • Dilute soup with 1/2 cup milk.
  • Pour over and spread remaining 1/2 cup of cheese on top.

1/3 c. milk
1 lb. bulk sausage meat
6 oz. grated, sharp Cheddar cheese

  • Spray Pyrex oblong pan with Pam. Brown sausage in fry pan. Break sausage up into small pieces. Drain sausage of all fat. Spread sausage in bottom of pan. Beat eggs in large bowl. Add water and milk. Grate cheese and put over sausage. Pour eggs over cheese and sausage. Bake at 350 degrees for 1/2 hour Done when eggs are firmly set. Can be assembled the day before and refrigerated overnight covered in foil. Cook as instructed the day of.

I like it cheesy lol. But if you don't want it quite so cheesy, cut the amount of shredded cheese to 8 oz for total recipe.

1/2 teaspoon(s) dry mustard
1/2 teaspoon(s) paprika
1 teaspoon(s) salt
1 cup(s) sour cream
1 pound(s) plain sausage, cooked, drained, cooled
10 - eggs

Steps:

  • Preheat oven to 325. Cover bottom of greased 9x13 baking dish with half (8 oz) of the shredded cheese.
  • Mix all seasonings with sour cream and pour half of mixture over cheese. Sprinkle crumbled sausage over mixture.
  • Beat eggs and pour over sausage. Spoon rest of sour cream mixture over eggs. Sprinkle rest of cheese on top.
  • Bake for 20-25 minutes uncovered.
