SAUSAGE, SPINACH AND CHEESE BREAKFAST SQUARES

Sausage, Spinach and Cheese Breakfast Squares image

Easy peasy and adjustable. These are good served hot, fresh from the oven, but I make them for us to take to work and eat there. They also freeze and reheat very well. I also used cubed ham if sausage isn't available. And if I have a lot of chopped green or spring onions left over from something, I use those as well as yellow or white onion. Feel free to play with the ingredients. I use 14 large eggs - adjust accordingly. Nuking the sausage ahead of time makes clean up way easier. I end up putting the eggs, baking mix, spinach, salt pepper in the Cuisinart then I just stir in the sausage and cheese.

HALFTIME SAUSAGE & CHEESE APPETIZER SQUARES image

Categories     Cheese     Pork     Appetizer     Bake     Quick & Easy     Tailgating

Yield feeds 10-15 people

Number Of Ingredients 6

--1 pkg ground mild sausage
--1 pkg ground hot sausage
--1 medium onion, chopped
--1 small red bell pepper, chopped
--1 small pkg of mexican Velveeta cheese, cut into chunks
-- 1 loaf party rye or pumpernickel bread (small square loaf)

Steps:

  • In a skillet, brown both packages of sausage together. Drain. Add the chopped onions & peppers. Continue to sauté for 5-8 minutes, or until the chopped ingredients cook. Slowly add in the velveeta cheese in chunks as it begins to melt. Continue to do so until you use the entire block of cheese. Preheat the oven to 350 degrees & continue to cook the mixture on the stove an additional 10 minutes or so, or until the cheese has melted & the mixture is bubbly. Line a cookie sheet with the party rye bread slices. Spoon the mixture onto the slices evenly. Continue until you use up the entire loaf. Bake for 25 minutes or until the bread is slightly toasted & the mixture has lightly browned. ***Suggestions if you like things spicy: Use 2 packages of hot sausage instead of the mild & add chopped jalapenos. Your choice!
