This is a great breakfast casserole my grandmother and mother always make!

1 ½ pounds ground pork sausage
1 (8 ounce) package refrigerated crescent roll dough
2 cups mozzarella cheese
4 eggs, beaten
¾ cup milk
salt and pepper to taste

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 425 degrees F (220 degrees C).
  • Lightly grease a 9x13 inch baking pan. Lay crescent rolls flat in the bottom of the pan. Combine cooked sausage, cheese, eggs, milk, salt and pepper; pour over crescent rolls.
  • Bake in preheated oven for 15 minutes, until bubbly and rolls are baked.

1 pound bulk pork sausage, cooked and drained
1/2 cup chopped green onions
1 can (4 ounces) mushroom stems and pieces, drained
2 medium tomatoes, chopped
2 cups shredded part-skim mozzarella cheese
1 cup pancake mix
12 large eggs
1 cup whole milk
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a greased 3-qt. baking dish, layer the sausage, onions, mushrooms, tomatoes and cheese. , In a large bowl, whisk the pancake mix, eggs, milk, oregano, salt and pepper; pour over cheese., Bake, uncovered, at 350° for 45-50 minutes or until top is set and lightly browned. Let stand for 10 minutes before serving.

I guarantee you are going to *love* this! This makes a perfect brunch or weeknight dinner, to save time brown the sausage a day ahead. To increase to a 13x9-inch casserole you will need 1-1/2 packages of crescent rolls and all other ingredients will need to be increased slightly, I have even made this without the crescent roll crust!

1 1/2 lbs pork sausage links (casings removed)
1 small onion, finely chopped
1 (8 ounce) package refrigerated crescent dinner rolls
1 cup grated cheddar cheese
1 cup mozzarella cheese
1 cup half-and-half cream
6 large eggs, beaten
1/2 teaspoon seasoning salt (or to taste, or use white salt to taste)
1/2 teaspoon black pepper (or to taste)
1 pinch cayenne, pepper (optional)
1/3 cup grated parmesan cheese (or to taste, or use mozzarella or cheddar cheese)

Steps:

  • Grease an 11x7-inch baking dish.
  • In a large skillet over medium heat brown the pork sausage meat with onion until browned; place into a large bowl to cool slightly.
  • To the bowl with the sausage mixture add in mozzarella cheese, cheddar cheese, half and half cream, eggs, seasoned salt, black pepper and cayenne (if using) mix to combine well; set aside.
  • Unroll the crescent rolls then pinch all perforations to seal.
  • Spread the crescent roll onto the bottom of the baking dish.
  • Bake the crescent crust at 350°F for 10 minutes.
  • Remove then spread the sausage mixture evenly over the baked crust.
  • Sprinkle with Parmesan cheese (or mozzarella or cheddar) then return to oven to bake for 25-30 minutes or until heated through.

3/4 lb breakfast sausage
2 green onions, chopped finely
4 slices bread, with crust trimmed
4 eggs, beaten
1 cup milk
1 teaspoon dry mustard
1 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder
2 cups cheddar cheese or 2 cups monterey jack pepper cheese, shredded

Steps:

  • Brown the sausage in a skillet, breaking it up into crumbles. At the end of the cooking cycle, add the green onions and cook until tender. Drain the grease from the sausage and green onions.
  • Tear the bread into bite-size pieces.
  • Combine the sausage/onion mixture, bread, eggs, milk, dry mustard, salt, black pepper, garlic powder, and cheese in a bowl; mix well.
  • Pour into a 2 1/2 quart nonstick casserole. Chill, covered for 8 to 10 hours.
  • Bring casserole out of the refrigerator and allow it to sit while the oven is preheating to 325 degrees.
  • Bake at 325 for 50 minutes.

1 lb bulk italian sausage meat (mild or spicy)
1 medium onion, chopped
6 large eggs, beaten
2 cups half-and-half cream (or use milk)
1 teaspoon mustard powder (can use 1 teaspoon prepared Dijon mustard)
6 slices day-old bread (toasted in the toaster then cut into cubes)
8 ounces shredded cheddar cheese (more to sprinkle on top after baking if desired)
fresh ground black pepper (to taste)
salt (optional and to taste)

Steps:

  • Grease a 13 x 9-inch baking pan.
  • Cook the sausage meat with onion in a skillet until browned; drain fat.
  • In a bowl whisk together the eggs with cream or milk and mustard; add in the cooked sausage meat, toasted bread cubes and shredded cheese, toss until combined.
  • Season the mixture with fresh ground black pepper and salt to taste.
  • Transfer to prepared baking pan.
  • Cover with plastic wrap and refrigerate for 8 hours or overnight.
  • Set oven to 350 degrees F (oven rack set to lowest position).
  • Remove plastic wrap and cover the dish with foil.
  • Bake (350 degrees F) for 1 hour.
  • Reduce to 325 degrees F uncover and continue to bake for another 30 minutes or until set.
  • If desired sprinkle a small amount of shredded cheese over the top after baking (this is only optional).

ZUCCHINI-SAUSAGE BRUNCH CASSEROLE

You can prepare this casserole the night before and bake it the following morning, or prepare it in the morning to have for dinner! You can really use any amount of cheeses for this recipe, and you can increase the amount of sausage also, small pork breakfast sausages can be used in place of Italian sausage, you won't have to remove them from the casings, just cook them and then crumble.... this casserole is worth making, it's delicious!

7 green onions, chopped (or use 1 medium yellow onion)
1 tablespoon minced fresh garlic (or to taste)
2 medium zucchini, diced
1 (7 ounce) jar roasted red peppers, drained and chopped
seasoning salt (or use white salt)
black pepper
Italian bread (cut into 1-inch cubes)
2 1/2 cups shredded cheddar cheese
7 large eggs
1 1/2 cups half-and-half cream (or use full-fat milk)
grated parmesan cheese (any amount desired)

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a skillet cook the sausage meat until no longer pink; drain fat.
  • Add in the onions, garlic, zucchini; sate until the veggies are tender (about 4 minutes) season the mixture with seasoned salt or white salt and black pepper.
  • Add in the chopped roasted red bell peppers; cool slightly.
  • Spread about 4 cups bread cubes in the greased baking dish.
  • Top with HALF of the sausage mixture then HALF of the shredded cheese.
  • Repeat with remaining bread cubes, then remaining sausage and then remaining cheddar cheese.
  • In a bowl whisk together eggs with half and half cream; pour the egg mixture over the casserole.
  • Cover and chill for 8 hours.
  • Before baking sprinkle grated parmesan cheese on top.
  • Bake covered in a 325 degree oven for about 50-60 minutes or until hot and bubbly.

6 frozen waffles (4 inch), toasted, cut into bite-size pieces
1 lb. breakfast pork sausage, cooked, drained
1 cup KRAFT Shredded Cheddar Cheese, divided
6 eggs
2 cups milk
1 tsp. dry mustard
1/2 tsp. black pepper
1/2 cup maple-flavored or pancake syrup

Steps:

  • Spread half the waffle pieces onto bottom of 2-qt. casserole sprayed with cooking spray; cover with layers of half the sausage and 1/3 cup cheese. Repeat layers. Refrigerate remaining cheese for later use.
  • Whisk eggs, milk, mustard and pepper until blended; pour over ingredients in casserole dish. Refrigerate 4 hours.
  • Heat oven to 350°F. Bake casserole (uncovered) 50 min. to 1 hour or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Let stand 10 min.
