Crispy filo pastry filled with sausagemeat, sage and chunks of juicy apple makes a simple yet tasty weeknight supper

1 tbsp sunflower oil
1 medium onion , finely chopped
1 small eating apple , peeled, cored and cut into 1.5cm chunks
3 sheets filo pastry
454g pack extra-lean pork sausages
1 tbsp finely chopped sage
bag of mixed salad leaves, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a large baking tray with baking parchment. Heat 1 tsp of the oil in a small non-stick saucepan and gently fry the onion and apple for 6-8 mins, stirring regularly, until softened and lightly browned. Leave to cool for 5 mins.
  • Place 1 sheet of pastry on your work surface, with the short end closest to you, and brush lightly with oil. Place another sheet on top, but off-set roughly 6cm to the right, and brush with a little more oil. Top with the final sheet, off-set another 6cm to the right. The pastry rectangle should be roughly 40 x 45cm.
  • Squeeze the sausagemeat from the skins into a large bowl. Add the onion, apple and sage, and mix well. Form the pork mixture into a large sausage shape and place across the pastry, about 8cm in from one short end and 8cm from each side.
  • Fold up the bottom of the pastry until it begins to cover the filling, then fold in the sides. Roll the pastry from the bottom, gently but firmly, to enclose the filling. Place on the baking tray and brush with the remaining oil. Bake for 30 mins or until the filling is cooked and the pastry is golden brown and crisp. Serve with mixed salad leaves.

Store bought puff pastry and home seasonings make this an easy tasty treat to serve as part of a main meal when you want something special. Its so simple to make too, I don't know why I don't make it more often :)

2 sheets of ready rolled puff pastry
500 g sausage meat
1 slice day-old white bread, as breadcrumbs
1 apple, grated
1 onion, grated
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried sage
1/2 teaspoon nutmeg
1/2 teaspoon mustard powder (could use prepared mustard)
1/2 cup milk, for brushing

Steps:

  • Preheat the oven to 180C.
  • In a large bowl mix everything together thoroughly apart from the puff pastry.
  • Lay out 1 of the puff pastry sheets and imagine it is split into 3 equal sections.
  • Arrange half of the sausage mixture straight down the middle of the imaginary middle section and with a knife score all the way through the pastry, lines going down in a diagonal. This will make more sense as you do it.
  • Overlap strips from each side over the middle of the sausage mixture and repeat with the other sheet of pastry and other half of mixture.
  • Brush with milk
  • Bake for 15-25 minutes on a greased baking sheet until golden brown.
  • Allow to cool for 10 minutes before serving.
  • Absolutely gorgeous!

My family loves country-style cooking. But once in a while, I like to dress up down-home dishes and make them a little more special for company. A crunchy coating adds a nice touch to a traditional sausage loaf.

2 pounds bulk pork sausage
2 cups finely chopped tart apple
1 cup toasted wheat germ
1 cup soft bread crumbs
1/3 cup finely chopped onion

Steps:

  • Pat sausage onto waxed paper to form a 14x9-in. rectangle. Combine apple, wheat germ, bread crumbs and onion; mix well. Spoon and gently press onto sausage; beginning at the narrow end and using the waxed paper as an aid, roll up jelly-roll style. , Place in an ungreased 13x9-in. baking pan. Bake at 350° for 1 hour or until a thermometer inserted into the center of the roll reads 160°-170°.
