One Pan Sausage and Vegetable Skillet. A super easy and healthy meal ready in under 30 minutes!

2 tablespoons ghee or butter (or more if needed)
2 cups baby potatoes (diced)
12 ounces andouille sausage (sliced)
1 small zucchini (diced)
1/2 red bell pepper (diced)
1/2 green bell pepper (diced)
3 cloves garlic (minced)
2 teaspoons Italian seasoning
1 teaspoon onion powder
salt and pepper (to taste)

Steps:

  • Heat 2 tablespoons ghee or butter over medium heat. Add the potatoes and cook until golden brown and tender. About 7-10 minutes. Remove the potatoes from the skillet and set aside.
  • Add the sausage to the same pan and cook until browned, 5 minutes, set aside with the potatoes.
  • Add in the zucchini and bell peppers. Sauté until tender 3-4 minutes.Stir in garlic and cook for an additional minute.
  • Add the potatoes and sausage back into the pan along with the Italian seasoning and onion powder.
  • Season with salt and pepper to taste and serve immediately.

1 pound fresh Italian sausage links
2 tablespoons canola oil
2 cups cubed yellow summer squash
1 cup chopped green onions
3 to 4 garlic cloves, minced
3 cups chopped tomatoes
4 teaspoons Worcestershire sauce
1/8 teaspoon cayenne pepper

Steps:

  • In a large skillet over medium heat, cook sausage in oil until a thermometer reads 160°; drain. When cool enough to handle, cut into 1/2-inch pieces. Return to pan. Add squash and onions; cook for 3 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, Worcestershire sauce and cayenne pepper; heat through.

stock cube, any type
1 tbsp sunflower or vegetable oil
1 small onion , halved and thickly sliced
3 thick pork sausages , cut in half
1 large carrot , peeled and cut into chunks
1 large or 2 medium potatoes , skin left on, cut into big chunks
200g swede , peeled and cut into big chunks (or use another large carrot)

Steps:

  • Crumble half the stock cube into a mug and top up with boiling water. Stir until dissolved. Heat the oil in a frying pan, then fry the onion and sausage pieces for 5 mins until the meat is browned, but not cooked through. Tuck the vegetable chunks around the sausages and onions, season well with black pepper and salt to taste, then add 4 tbsp of the stock.
  • Cover the pan with a lid or large piece of foil, making sure there are no gaps at the edges. Turn the heat to medium and leave for 25 mins until the veg are tender and the sausages cooked through. Stir at the end of cooking time - the veg will have caramelised against the bottom of the pan and almost all of the cooking liquid will have been absorbed.

1/2 head cauliflower
1 -2 cup baby carrots
2 -3 yellow squash, sliced approx. 2 inches thick
2 onions, quartered
1 -2 bell pepper, cut into large chunks
1 lb turkey sausage, sliced approx. 2 inches thick
2 -3 tablespoons garlic salt

Steps:

  • Place vegetables and sausage in a large electric skillet.
  • Sprinkle generously with garlic salt.
  • Pour 1 cup of water over vegetables.
