Our family likes sweet and sour dishes. This simple recipe satisfies this. My eighty four year old father in love, who is quite the picky eater, declares whenever I serve this, (with a rub of his tummy,) "Very tasty!"

1 qt. sauerkraut
2 pkgs. lit'l smokies
2 golden delicious apples, cored, peeled, sliced thin
1/2 cup brown sugar, lightly packed
1 tsp. pepper
2 Tbl. butter
1 tsp. caraway seed

Steps:

  • 1. Pre heat oven to 350 degrees. Drain and rinse sauerkraut, pressing out liquid; set aside. In a medium saucepan over medium heat, sauté apples and onion in margarine 3 to 4 minutes until apples are just tender.
  • 2. When apple mixture is tender, add Kraut, and mix thoroughly. Add brown sugar and caraway seed. Stir until sugar is melted. Put sauerkraut into a 13x9 baking dish.
  • 3. Bake for 20 minutes until hot and bubbly. Remove from oven, allow to cool 5 minutes before serving. Note: Sometimes I add 8 oz. Swiss cheese slices on top, depending on whether I have it on hand or not. Also, on occasion, I use 1 cup of pear preserves instead of apples for variety.

6 medium red potatoes, cubed
2 tablespoons canola oil
1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces
1 package (16 ounces) sauerkraut, rinsed and well drained
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned. Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut and pepper. Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

A quick and easy meal for the oven or slow cooker. It feeds a crowd, or leaves leftovers for later. You can add more or less brown sugar, depending on how sour you like your kraut.

8 apples - peeled, cored and sliced
1 (32 ounce) package sauerkraut with juice
4 (16 ounce) packages cocktail-size smoked link sausages
1 (12 fluid ounce) can cola-flavored carbonated beverage
1 ½ cups apple juice
½ cup brown sugar, or to taste

Steps:

  • Place the apples, sauerkraut with juice, and smoked sausages into a slow cooker.
  • In a bowl, stir together the cola, apple juice, and brown sugar until the sugar dissolves. Pour the cola mixture into the slow cooker. Stir to combine, cook on High for 2 hours, then on Low for 6 to 8 hours.

2 can(s) bavarian style sauerkraut
1 pkg (10) hot dogs

Steps:

  • 1. Cut hot dogs into 1-inch pieces. Combine with kraut in a large saucepan. Cook over medium-high heat until it starts to boil. Reduce heat, cover, and simmer for about five minutes or until heated through and hot dogs are getting puffy.
  • 2. Serve with fried potatoes. May add sliced onions when cooking.

1 medium onion, chopped
4 tablespoons butter or 4 tablespoons margarine
1 (16 ounce) package hot dogs or 1 (16 ounce) package kosher hot dogs
1 (14 ounce) can sauerkraut, undrained
1 (14 ounce) can beef broth
1 cup white wine
1/2 teaspoon caraway seed
1 potato, grated finely

Steps:

  • Bake the wieners in a baking dish at 350° for 30 minutes, then slice into bite-size pieces.
  • In an oven proof skillet, sauté the onion in the butter until translucent, then add remaining ingredients. Bring to a boil, then simmer, uncovered for 30 minutes.
  • Add the cooked wieners and put in the oven covered for 30-40 minutes at 325°.

Classic German flavors bring a fresh twist to this beloved hors d'oeuvre. We love the combination of buttery puff pastry with tangy sauerkraut and the subtle heat of mustard.

Number Of Ingredients 6

1 large egg
One 14- to 17-ounce box of puff pastry (preferably all-butter), thawed according to package directions
2 pounds fully cooked German-style sausage such as bockwurst or bratwurst, halved lengthwise if thick, and cut into 32 pieces (about 2 1/2 inches each)
1/3 cup whole-grain mustard
1/3 cup drained sauerkraut
Caraway seeds, for sprinkling

Steps:

  • Preheat the oven to 400°F. Set racks in the upper and lower thirds of the oven. Line two 13x18-inch baking sheets with parchment paper. In a small bowl, beat the egg with 1 tablespoon water. Prep the ingredients for the filling and set aside.
  • If using a 17-ounce puff pastry package, roll each sheet to a 9x12-inch rectangle. Cut each piece lengthwise into eight 1 1/2-inch wide strips. Cut each strip crosswise into two pieces, about 4 1/2 inches long. You should have 32 pieces of pastry.
  • Spread the center of each piece of pastry with 1/2 teaspoon mustard and top with 1/2 teaspoon sauerkraut. Brush one narrow end of the pastry with egg wash, add one piece of sausage, and roll to enclose. Return to parchment-lined baking sheets. Brush the top of each pastry with egg wash and sprinkle with caraway seeds, seam-side down. Chill in refrigerator for 15 minutes. Bake until golden brown and puffed, 23 to 27 minutes.
