GRANDMA PAT'S SAUERKRAUT HOTDISH
Dish of my childhood, with the family's homemade sauerkraut. Definitely my favorite. Also yummy to melt cheese on top of it.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Add ground beef, salt, pepper, and onion salt. Cook and stir until beef is browned and crumbly, 5 to 7 minutes.
- Combine beef mixture with cream of chicken soup and sauerkraut in a small casserole dish. Add noodles and water; stir to combine.
- Bake in the preheated oven until noodles are tender yet firm to the bite and casserole is heated through, about 1 hour.

I gal I worked with years ago, brought this to a potluck. Such comfort food! And yes, in Minnesota,, we call it Hotdish!!

Steps:
- Brown hamburger and onion, salt and pepper, drain. Add soups and milk. Stir.
- Cook noodles, partially, about 5 minutes. They will finish cooking during baking time.
- Either using a crock-pot(low heat), or a casserole dish, grease with butter, then layer in order, 1/2 of each. Noodles, sauerkraut, hamburger mixture, cheese.
- Repeat.
- Either cook in crock-pot on low 4 hours, or bake in a 350 oven, for 45 minutes, until hot and bubbly.

- In a large skillet, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the salt and pepper. Spoon half of beef mixture into a 13x9-in. baking dish. Top with half of sauerkraut and noodles. Repeat layers. Combine soups and milk; pour over noodles., Cover and bake at 350° for 30 minutes. Sprinkle with cheese; bake, uncovered, for 15-20 minutes or until heated through.

SAUERKRAUT HOTDISH
This is one of my most "asked for" recipes. Please don't judge it before you have tried it. I often get asked to make this and bring to work, keeping my co-worker cops happy is important to me! Trust me.. after this.. you WILL be a believer in Sauerkraut!

Steps:
- 1. Brown the ground beef, onion, salt and pepper
- 2. Drain off any fat
- 3. using a 7x11 casserole pan, layer 1/2 of hamburger mixture
- 4. Cover with sauerkraut
- 5. top with remaining hamburger mixture
- 6. put UNCOOKED egg noodles over top layer
- 7. Spread undiluted soups on top of noodles - making sure you cover ALL noodles with soups or they will not cook and the edge noodles will be rock hard
- 8. Bake at 350 degrees covered for 30 minutes
- 9. Remove from oven, carefully sprinkle cheese over the top and return to oven uncovered and bake for an additional 30 minutes
- 10. I OFTEN double this recipe and make in a 9x13 glass casserole pan. Serve with Garlic Bread and a salad
SAUERKRAUT HOTDISH
I have served this on many occasions and it is always a winner! Serve with warm dinner rolls and you have a complete meal.

- 1. Brown beef and onion together with salt and pepper, drain fat.
- 2. Layer half the beef-onion mixture in a 7x11 baking dish. Cover with sauerkraut and top with remaining meat-onion mixture.
- 3. Put uncooked noodles on top. Spread soups over noodles. ( I mix soups together first).
- 4. Bake 30 minutes at 350 degrees. Sprinkle cheese on top and bake 30 minutes more.
SAUERKRAUT BEEF HOTDISH
This is a good way to win over someone who isn't a huge sauerkraut fan. Also good with ground turkey! Add a bit of thousand island dressing on the top and use corned beef leftovers from St. Pat's Day for a Reuben-style taste!

- Mix sauerkraut and margarine, heating through; set aside.
- Alternate layers of beef, sauerkraut, and rice in a 1 1/2 quart deep casserole that his been greased.

What a hit! I encourage you to try this. This is one of our family favorites. I make this for potluck dinners and always get requests for the recipe and it's something different for the table. Serve with warm bread and homemade pickles and you have a meal that will warm you from inside out and best yet, hardly any ever left.

- Zaar won't allow the correct descripton of the sauerkraut, it calls for a 1 pound 11 oz can so I just computed to get the recipe to take.
AUNT MARY'S SAUERKRAUT HOTDISH
My aunt Mary used to make this recipe. Great Sunday dinner. Feel free to add canned vegetables or substitute cubed, cooked chicken breast for the ground beef.

- Brown ground beef.
- Cook noodles according to package directions.
- Drain sauerkraut.
- In a large pot, combine cans of condensed soup, 1 soup can of milk, and sauerkraut. Mix well to combine.
- Add in cooked beef and noodles. Stir until well coated.
- Cook together on stove over medium-high heat until heated all the way through.
- Top with shredded cheese before serving.
