BRATWURST STEWED WITH SAUERKRAUT

Wisconsin may be the cheese state, but bratwurst (ground meat sausages that are grilled, or in this case, pan-fried) are the state's culinary claim to fame. Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. (Madison, Wisconsin is home to an annual "Brat Fest") Michael Symon's simple recipe calls for the links to be cooked with onions, garlic and tangy sauerkraut and then served on a baguette.

2 tablespoons oil
2 pounds fresh bratwurst links
2 onions, chopped
2 garlic cloves, minced
3 cups chicken stock
1 tablespoon paprika
1 tablespoon caraway seed
4 cups sauerkraut, drained
2 tablespoons chopped fresh dill
1 baguette

Steps:

  • In a large pan, heat oil over high heat. Brown bratwurst in oil and reduce heat to medium. Add onions and garlic and cook until lightly caramelized. Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes. Remove from heat and stir in fresh dill. Serve on baguette.

This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

6 medium red potatoes, cubed
2 tablespoons canola oil
1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces
1 package (16 ounces) sauerkraut, rinsed and well drained
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned. Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut and pepper. Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

This is my aunt's recipe. I've made it for many potlucks, and I'm always asked to bring it for church dinners. Even people who normally don't eat sauerkraut enjoy this dish.

1-1/2 pounds bulk Italian sausage
1 small onion, chopped
2 cans (one 16 ounces, one 8 ounces) sauerkraut, undrained
1-1/2 teaspoons brown sugar
3/4 teaspoon poultry seasoning
7 to 8 medium potatoes
1/3 cup milk
Pinch pepper
1/2 teaspoon salt, optional
2 tablespoons butter
Paprika and chopped fresh parsley, optional

Steps:

  • In a large skillet, cook sausage and onion until sausage is no longer pink; drain. Add sauerkraut, brown sugar and poultry seasoning; cover and simmer for 1 hour. Transfer to an ungreased 13-in. x 9-in. baking dish. , Meanwhile, cook potatoes until tender; drain and mash slightly. Add milk, pepper and salt if desired; mash until smooth. Spread evenly over sausage mixture; dot with butter. , Bake at 350° for 20-25 minutes or until potatoes are lightly browned. Garnish with paprika and parsley if desired.

I'm German/American and sauerkraut was a must in our house. Growing up in Germany for 23 years we had it often and in many different varieties. Many times Mom made it just with hamhogs or smoked pigs feet.

Number Of Ingredients 8

3 lbs sauerkraut or 2 quarts sauerkraut
1 tablespoon sweet paprika
4 tablespoons finely minced bacon
1 large onion, minced
3 -4 cups stock or 3 -4 cups water, as needed
caraway seed
1 cup sour cream
2 -3 tablespoons flour

Steps:

  • Drain sauerkraut pressing excess liquid out.
  • Rinse sauerkraut once or twice until the flavor is mild.
  • Melt bacon in a dutch oven or casserole; when hot add, onion and sweet paprika.
  • Saute for about 8 minutes or until onions are soft.
  • Add sauerkraut,stock and caraway seeds.
  • Cover and simmer slowly for 1 1/2 to 2 hours.
  • To thicken sauerkraut, stir 2-3 tablespoons flour into 1 cup of sour cream and add to sauerkraut.
  • Simmer for 10 more minutes.
  • Season with salt and pepper and a pinch of sugar if necessary.
  • If you like to add some sausages or some other"wurst" that would be fine too.
  • Add it during the last 1/2 hour of cookin.
