CRUNCHY BAKED PORK BITES WITH AWESOME SAUCE
This recipe is a two-fer. You can pile them up on a plate, and serve them as an appetizer, or you can place them on a nice warm bed of rice and make a meal out of them. - 1. PREP/PREPARE
- 2. AWESOME SAUCE
- 3. Gather your ingredients.
- 4. Add all of the sauce ingredients to a small saucepan, over medium-low heat.
- 5. Stir the mixture, and bring it up to a light simmer.
- 6. To make the slurry, mix the arrowroot (or cornstarch), and water together in a small bowl.
- 7. Add the slurry to the saucepan, and simmer for an additional 5 minutes.
- 8. Cover the saucepan, and then reduce the heat enough to just keep the sauce warm.
- 9. Chef's Tip: If your stovetop has a warm setting, use it.
- 10. THE PORK BITES
- 11. Gather your ingredients.
- 12. Combine the flour and pepper in a large plate, or breading pan. Whisk the eggs with the 2 tablespoons of water, and place in another pan. Add the breadcrumbs to a third pan.
- 13. Coat a piece of pork in the flour.
- 14. Shake off the excess, and then coat in the egg wash.
- 15. Shake off the excess, and then press into the panko breadcrumbs.
- 16. Place on a parchment-lined baking sheet, fitted with a wire rack.
- 17. Repeat for the remaining pork, and allow them to rest for 15 minutes.
- 18. Place a rack in the middle position, and preheat the oven to385f (195c).
- 19. Place the pork bites in the preheated oven, and allow them to bake until fully cooked and beginning to brown, about 25 to 30 minutes.
- 20. Chef's Note: Keep an eye on them, and make sure they don't turn from golden brown to burnt brown.
- 21. Remove from the oven, and toss with the sauce.
- 22. PLATE/PRESENT
- 23. Serve on a bed of rice for a nice light meal.
- 24. Pile on a plate, and serve as an appetizer.
- 25. Garnish with some sliced green onions, and toasted sesame seeds. Enjoy.

GARLIC PORK BITES
Garlic Pork Bites are cubed seasoned pork chops that are pan-seared and then smothered in a creamy garlic sauce.

- Season pork evenly with onion powder, salt, and pepper.
- In a large, 12-inch skillet, heat olive oil over medium heat. When the oil is hot, add pork and sear for 3-5 minutes on all sides until cooked through (about 13-15 minutes total). Pork is cooked through when it reaches an internal temperature of 145°F.
- Remove the pork from the skillet and set it on a plate. Tent it to keep the pork warm.
- In the same skillet, melt butter. Add garlic and cook for 1 minute. Whisk in flour until slightly thickened.
- Add in chicken broth, heavy cream, parmesan cheese, lemon juice, salt, and pepper.
- Let the sauce simmer for 5-8 minutes, or until thickened.
- Add pork bites back to the pan and toss them in the sauce to coat. Serve immediately.

SAUCY PORK BITES
Tender pork bites swirled among a creamy, tasty sauce ready to be tossed upon a mound of potatoes, pasta or rice for a quick and easy meal. Serve this with green beans, broccoli or a salad. This recipe comes from the Augusta Chronicle and Kelly Calloway. You can use bits of pork sold at your grocery store or cut up a tenderloin. A little finely chopped rosemary would be a good addition to the sauce as would sauteed sliced mushrooms. You can also substitute chicken or beef bites too. - Cut pork into 32 (1-inch) pieces; place in medium bowl. In small bowl, mix chili powder, cumin, brown sugar, garlic powder and red pepper. Reserve 2 teaspoons spice mixture; sprinkle remaining mixture over pork pieces; stir to coat completely. Let stand 15 minutes.
