1/4 cup KRAFT Grated Parmesan Cheese
4 small boneless skinless chicken breasts (1 lb.)

Steps:

  • Mix dressing and cheese; pour over chicken in shallow dish. Turn chicken over to evenly coat both sides of each breast.
  • Refrigerate 30 min. to marinate, turning chicken over after 15 min.
  • Heat oven to 425ºF. Remove chicken from marinade; discard marinade. Place chicken on foil-covered baking sheet. Bake 20 min. or until done (165ºF).

4 skinless chicken breast halves (1 to 1 1/2 pounds)
nonstick cooking spray
1 slightly beat egg white
1 tablespoon water
3/4 cup corn flakes, crushed
2 tablespoons grated parmesan cheese
1/4 teaspoon dried italian seasoning
1/8 teaspoon black pepper
1 1/3 cups spaghetti sauce
4 ounces dried spaghetti or 4 ounces fettuccine
grated parmesan cheese (optional)
fresh herb (optional)

Steps:

  • Place each piece of chicken between 2 pieces of plastic wrap. Using the flat side of a meat mallet, lightly pound to flatten slightly (about 1/2 inch thick). Remove plastic wrap.
  • Lightly coat a shallow baking pan with nonstick cooking spray; set aside. In a shallow dish combine egg white and the water. In another shallow dish combine crushed cornflakes, the 2 tablespoons Parmesan cheese, the Italian seasoning, and pepper. Dip chicken pieces, one at a time, into egg mixture; coat with crumb mixture. Place coated chicken pieces in prepared baking pan.
  • Bake in a 400°F oven about 15 minute or until chicken is tender and no longer pink (170°F).
  • Meanwhile, in a small saucepan warm spaghetti sauce over low heat. Divide pasta among 4 dinner plates. Place chicken on top of pasta. Spoon spaghetti sauce over chicken. If desired, sprinkle with additional Parmesan cheese. If desired, garnish with fresh herb sprigs. Makes 4 servings.

1/2 cup chopped onion
2 tablespoons butter
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/3 cup beer or nonalcoholic beer
1/2 teaspoon curry powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
6 boneless skinless chicken breast halves (7 ounces each)
1/4 cup grated Parmesan cheese

Steps:

  • In a large skillet, saute onion in butter until tender. Add the soup, beer, curry, oregano, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring occasionally., Place chicken in a greased 13x9-in. baking dish. Pour soup mixture over chicken. Saucy Chicken and Sausage over Creamy Parmesan Polenta - a true comfort meal if there ever was one. Delicious chicken and sausage in a spicy tomato sauce served over a creamy and cheesy polenta.

Number Of Ingredients 17

1 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
1 tsp dry oregano
salt and pepper to taste
1 (about 6 oz) chicken breast, boneless and skinless, cut into small bite size pieces
2 Italian sausage links, cut into 1 inch pieces
1/2 cup chicken broth or dry white wine
1 cup tomato sauce
1 tbsp hot sauce, I used Frank's
2 tbsp butter
2 tbsp fresh parsley chopped for garnish
1 cup cornmeal
4 to 4 1/2 cups water
1 cup (8 oz) Parmesan cheese, grated
3 tbsp butter
1/4 tsp black pepper

Steps:

  • In a saucepan or a Dutch oven heat the olive oil over medium heat. Add onion and garlic and cook for 2 minutes until the onion is soft and has become translucent. Add the chicken and sausage to the skillet, season with salt, pepper and oregano. Cook for about 10 minutes or until the chicken and sausage starts to brown.
  • Stir in the chicken broth or white wine and scrape up all the brown bits from the bottom of the pan. Cook for 2 minutes then add the tomato sauce and hot sauce. Stir in the butter and taste for seasoning. Adjust as necessary.
  • Cook for 5 more minutes, remove from heat and garnish with chopped parsley.
  • Add the cornmeal and 1 cup of water to a cast iron pot. Place the pot over medium to low heat and whisk. This will ensure there will be no lumps. Let the mixture come to a boil and you'll notice it will start to thicken as the cornmeal absorbs the water. Add another cup of water at a time, whisk and wait until the water has been absorbed. Repeat until you've used 4 to 4½ cups of water and the cornmeal is cooked and doesn't taste raw. You will need to whisk occasionally but there's no need to hover over the pot while it's cooking.
  • Once the cornmeal is cooked through, remove from heat and stir in the remaining ingredients.
  • Serve by plating polenta, then topping it with the chicken and sausage stew.

This is my version of Chicken Parmesan, no breading. The chicken comes out nice and moist, and we like it saucy! Great served with a side of risotto, and the veggie of choice. It's a quick and easy meal to put together.

2 to 4 boneless skinless chicken breasts
12 oz pizza sauce or your favorite pasta sauce
shredded or grated parmesan cheese
shredded mozzarella cheese
italian seasoning or oregano

Steps:

  • 1. Preheat oven to 425 degrees. Place the chicken breasts in a baking dish, and brush the tops lightly with olive oil. Bake for 20 minutes.
  • 2. Remove the chicken from the oven, carefully pour off juices, and reduce the oven temperature to 350 degrees.
  • 3. Generously sprinkle the top of the chicken with parmesan cheese. Spoon the pizza sauce on top of the parmesan, and around the sides of the breasts. You might not have to use all of the sauce, if only making 2 breasts. Lastly, top with mozzarella cheese, and a sprinkle of Italian seasoning, or oregano.
  • 4. Then, back into the oven, until the sauce is hot, and the cheese is melted. Approximately 10 minutes. Remove from oven and serve!
  • 5. *** If the chicken breasts are thick, I suggest pounding them down a bit.
