When I am conjuring...I mean creating a recipe I am always thinking of other ways to use the recipe to make it new and fresh. I love the fact that one recipe can be tweaked into a completely new dish! I served these with blue corn tortilla chips.

2 cups left over filling from { bonfire yum yum bites }
4 beautiful sweet peppers
1 - 1o ounce can ro*tel original
6 ounces chipotle white cheddar cheese { divided 4 ounces and 2 ounces }
1 - 12 ounce can ginger ale

Steps:

  • 1. In a bowl mix the yum yum meat {recipe bonfire yum yum bites on JAP } with the Rotel.
  • 2. Add about 4 ounces of the shredded cheddar cheese to the meat and mix.
  • 3. Poke a few holes in the bottom of the peppers.
  • 4. Fill the bell peppers with the meat and put into a crock pot.
  • 5. Top with the remaining cheddar cheese.
  • 6. Pour ½ of the can of the ginger ale in the bottom.
  • 7. Bake on high until the peppers are soft. Baking time will vary because the filling is already cooked, we like the peppers not quite soft so I'll probably cook them for an hour or so. Cooking time will depend on how soft you like your peppers.

3 jars (16 ounces each ) pickled hot cherry peppers, drained
1 can (2 ounces) anchovy fillets
1 large tomato, seeded and finely chopped
1 cup pimiento-stuffed olives, finely chopped
1 cup ripe olives, finely chopped
3 tablespoons olive oil, divided
1/4 cup grated Parmesan cheese
2 tablespoons seasoned bread crumbs
1 teaspoon capers, drained
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon dried basil

Steps:

  • Preheat oven to 350°. Cut tops off peppers and remove seeds; set aside. Drain and chop anchovies, reserving oil. , In a large bowl, combine tomato, olives, 1 tablespoon olive oil, Parmesan cheese, anchovies, anchovy oil, bread crumbs, capers, parsley and seasonings. Spoon into peppers., Place in a greased 13x9-in. baking dish. Drizzle with remaining 2 tablespoons olive oil. Bake until tops are light golden brown, about 40 minutes.

6 medium green peppers
1 pound ground beef, cooked and drained
1/2 pound ground pork, cooked and drained
1 cup quick-cooking oats
1 medium onion, chopped
1/2 cup sliced fresh mushrooms
1 egg, beaten
1 tablespoon salsa
1 tablespoon hot pepper sauce
2 garlic clove, minced
1 teaspoon each dried basil, oregano, thyme, Italian seasoning and parsley flakes
1/2 teaspoon pepper
2/3 cup tomato sauce

Steps:

  • Cut tops off peppers and remove seeds. In a large kettle, cook peppers in boiling water for 3 minutes. Drain and rinse in cold water; invert on paper towels. , In a bowl, combine meat, oats, onion, mushrooms, egg, salsa and seasonings. Spoon into peppers. Place in a greased 13-in. x 9-in. baking dish. Spoon tomato sauce over peppers. Bake, uncovered, at 350° for 1 hour or until heated through.

1/4 cup onion, chopped
1 (12 ounce) can whole kernel corn (drained)
1 (8 ounce) can tomato sauce
1 cup cooked rice
1/4 cup A.1. Original Sauce (steak)
1/4 teaspoon black pepper
6 green peppers

Steps:

  • In skillet, over medium heat, brown meat and cook onion until done. Pour off drippings.
  • Stir in corn, tomato sauce, rice, steak sauce and pepper; set aside.
  • Cut tops off of peppers; remove seeds.
  • Spoon meat mixture into peppers; arrange in 9x9x2 inch baking pan.

6 green bell peppers, halved and seeded
3 lbs ground beef (not lean)
1/2 cup long grain white rice
1 medium onion, chopped finely
1 celery rib, chopped finely (with leaves, if any)
3 garlic cloves, crushed
3 tablespoons parsley, chopped
1/2 teaspoon salt (or more, to taste)
1/2 teaspoon ground black pepper (or more)
1/4 teaspoon cayenne (or more)
1 cup ketchup
2 cups chicken broth

Steps:

  • Pour boiling water over rice and soak the rice for 30 minutes (or longer).
  • Mix all ingredients from beef to cayenne, plus 1/2 cup ketchup.
  • Stuff the pepper halves with the mixture.
  • Put the stuffed peppers into an oven-safe deep pan with a tight-fitting lid. Pour chicken broth, remaining 1/2 cup ketchup, and water over the peppers. You should attempt to cover as much of the peppers as possible, but if you cannot cover them completely, it is OK - the tops of the peppers will steam.
  • Cover and cook in the oven on 450 F until liquid boils. Then reduce heat to 325 F and cook 1.5 hours, or until the exposed rice on the top of the peppers is cooked. (You can also make it on the stove top, by first heating it till water boils and then reducing heat to medium, but you have to be careful not to burn the bottoms of the peppers.).
