1/4 cup brown sugar
2 tablespoons chili powder
Kosher salt and freshly ground black pepper
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 racks baby back ribs
1 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
1 cup barbecue sauce

Steps:

  • Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
  • Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
  • Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

HOMEMADE SPICY SAMBAL BARBECUE SAUCE

Sambal Oelek is made with chilies and is very hot so start with 2 tablespoons and increase to up to 4 tablespoons. Plan ahead the sauce needs to chill for 24 hours before using.

1 small onion, finely chopped
2 stalks celery, finely diced
1 small green bell pepper, seeded and finely chopped
3 tablespoons fresh minced garlic (or to taste)
1/4 cup brown sugar
4 tablespoons oil
1 bay leaf
1 1/2 tablespoons Dijon mustard
2 tablespoons sambal oelek chili paste (use up to 4 tablespoons)
3 cups ketchup
3/4 cup canned crushed tomatoes
1/2 teaspoon chili powder
1 tablespoon Worcestershire sauce
1/4 cup honey
1/4 cup red wine vinegar
salt

Steps:

  • Heat oil in a saucepan over medium-high heat.
  • Add in onion, celery, green pepper and garlic; saute until tender (about 5-6 minutes).
  • Reduce the heat and stir in the brown sugar, stirring constantly until the sugar has dissolved.
  • Add in all the remaining ingredients (start with 1 tablespoon sambal adding in more to taste) mix to combine and simmer over low heat for a minumum of 2 hours.
  • Season with more salt to taste.
  • Cover and refrigerate 24 hours before using.

Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh.

2 ½ pounds country style pork ribs
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 tablespoons salt
1 cup barbeque sauce

Steps:

  • Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

This is one of my dads recipes for ribs, which are very good indeed=)

4 pound(s) pork spareribs
1 can(s) condensed french onion soup
3/4 cup(s) ketchup
1/3 cup(s) honey
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) pepper

Steps:

  • Put ribs in lg pot. Add water to cover. Cook over med-high heat to a boil Reduce heat to a simmer. Simmer 30 mins, and drain.
  • In a saucepan, over med-high heat, cook soup, ketchup, honey, garlic powder and pepper.Heat to a boil. Reduce heat to low. Cook 5 mins, stirring often.
  • Oil grill grates and place over medium heat. Grill ribs for 20 mins, turning and brushing w/ sauce.
