This simple recipe is perfect to prepare on a busy Thanksgiving day and it adds just the right touch to a wonderful Thanksgiving feast.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
- Mix together flour, sugar, baking soda, pie spice, salt and baking powder. Add pumpkin, oil and eggs; mix well.
- Pour into loaf pans and bake for 1 hour or until inserted toothpick comes out clean.
- Allow to cool for 15 minutes before removing from pans.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Combine the sugar, salt, cinnamon, nutmeg, ginger, allspice, cloves, pumpkin puree, evaporated milk and eggs; blending until smooth. Pour batter into the prepared unbaked pie shell.
- Bake at 425 degrees F (220 degrees C) for 15 minutes then lower oven temperature to 350 degrees F (175 degrees C). Continue to bake for about another 40 minutes or until pie is firm.

SARAH'S FROZEN PUMPKIN SPICE COCKTAIL
I like blended and frozen drinks, so after trying the limited edition Kahlua® pumpkin spice holiday flavor I decided to see what I could come up with. It is delicious! Please use heavy whipping cream. It is available in small pint-sized containers. It is not much, but it adds a necessary creaminess to the drink texture. The pumpkin puree also adds to the pumpkin flavor. Feel free to garnish as desired with additional pumpkin spice, whipped cream, or both. Enjoy!

- Scoop out the seeds, fill with one layer of stale bread (I used multigrain baguette), sprinkle with grated gruyère, fresh thyme, and a grating of nutmeg. Repeat 2 more times. Then pour in a mixture of broth and half and half till you can see the liquid, about 3/4 of the way up. I threw in a shot of Kirshwasser and baked at 350º for almost two hours.
