SANTA FE GREEN CHILE MEATLOAF

For this recipe, a classic meatloaf gets a New Mexican style pick-me-up from the earthy, smoky tones imparted from fresh Hatch green chile peppers (from New Mexico) and a spicy topping that offers a bit of extra "heat".

MEATLOAF
1 1/2 lb ground beef
1/2 lb ground pork
1/2 cup chopped onion (about 1/2 of a medium onion)
1 medium bell pepper, finely chopped
4 medium green hatch chile peppers, finely chopped
1/2 cup plain bread crumbs
1 (10-oz) can(s) rotel tomatoes (or any variety of canned diced tomato with green chilies)
1 (8-oz) can(s) tomato sauce
1 tsp minced garlic
2 large eggs, beaten
SPICY TOPPING
3/4 cup ketchup
1/2 tsp hot sauce
1/2 tsp chili powder

Steps:

  • 1. Preheat oven to 400°F.
  • 2. In a small bowl, thoroughly combine the ketchup, hot sauce and chile powder. Cover bowl and keep in refrigerator until ready to use.
  • 3. Combine all of the meatloaf ingredients until well blended, and pat it into a 9x13-inch baking dish. Bake for 45 minutes, uncovered. Spread the spicy ketchup across the top of the meatloaf, and continue baking another 15 minutes. Let stand 10 minutes before serving.

1/2 cup chopped onion (1/2 medium onion)
1/3 cup finely chopped red bell pepper (1 whole pepper)
1 teaspoon chili powder
1/2 teaspoon ground cumin
4 garlic cloves, minced
1 tablespoon minced canned chipotle chile in adobo sauce
1/2 pound 7% fat ground turkey
1 pound ground turkey breast
3/4 cup dry breadcrumbs
2/3 cup mild chunky salsa, divided
1 teaspoon dried oregano
6 slices 30%-less-fat center-cut bacon (such as Oscar Mayer), cooked and crumbled
2 large egg whites
3/4 cup (3 ounces) reduced-fat finely shredded Mexican-style four cheese blend (such as Kraft 2% milk)

Steps:

  • Preheat oven to 350°. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion, bell pepper, chili powder, cumin, and garlic to pan; sauté 1 1/2 minutes or until onion is tender. Stir in chipotle chile; sauté 30 seconds. Remove from pan; cool. Combine onion mixture, turkey, turkey breast, breadcrumbs, 1/3 cup salsa, oregano, bacon, and egg whites in a large bowl. Place half of turkey mixture in an 8 x 4-inch loaf pan coated with cooking spray. Arrange cheese over top, leaving a 1/2-inch border around outside edges. Arrange remaining turkey mixture over cheese, pressing edges to pack. Spread the remaining 1/3 cup salsa over top of meat loaf. Bake at 350° for 1 hour or until a thermometer registers 165°. Let stand 10 minutes. Remove from pan; cut into 12 slices.

2 pounds ground beef
1 onion, chopped
2 (1 ounce) packets taco seasoning mix
2 (1 ounce) packets ranch dressing mix
2 (16 ounce) cans shoepeg corn
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (15 ounce) can red kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (14.5 ounce) can chicken broth
1 (14.5 ounce) can diced tomatoes

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir taco seasoning mix and ranch dressing mix into the ground beef; add shoepeg corn, diced tomatoes with green chile peppers, red kidney beans, black beans, pinto beans, chicken broth, and diced tomatoes. Bring the mixture to a simmer, stirring occasionally; cook until the tomatoes are softened, 30 to 60 minutes.
