2 cups chopped onion
1 1/2 cups chopped red pepper
2 garlic cloves , minced
3/4 cup salsa
2 teaspoons ground cumin
2 (15.8-ounce) cans black beans, drained
12 6-inch corn tortillas
2 cups Monterey Jack and Cheddar blend, shredded
3 tomatoes, chopped, optional
1/2 cup sour cream, optional
1/2 cup sliced black olives, optional

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Combine onion, pepper, garlic, salsa, cumin, and black beans in large skillet and bring to simmer over medium heat. Cook, frequently stirring, for 3 minutes.
  • Arrange 6 tortillas in bottom of 9 x 13-inch baking dish, overlapping them as necessary.
  • Spread half of bean mixture over tortillas and sprinkle with half of cheese. Repeat layering process with remaining tortillas, bean mixture, and cheese.
  • Cover dish with foil and bake 15 minutes. Carefully remove foil and serve warm. Garnish with tomatoes, sour cream, and olives.

2 cups chopped onions
1 1/3 cups chopped green bell peppers
14 ounces chopped plum tomatoes
3/4 cup favorite salsa
1/2 teaspoon garlic
2 teaspoons cumin
2 (15 ounce) cans black beans, drained
8 corn tortillas
1 1/2 cups grated cheddar cheese
1 cup sliced avocados or 1 cup guacamole, to serve

Steps:

  • In a large skillet over medium heat, combine first 6 ingredients, bringing the mixture to a boil. Reduce heat and simmer uncovered for 5 minutes. Stir in beans.
  • Spread 1/3 of the bean mixture over the bottom of a 13x9-inch pan. Top that with half of the tortillas, overlapping as necessary and half of the cheese. Add another 1/3 of the bean mixture, then remaining tortillas and bean mixture.
  • Cover and bake at 350°F for 30 minutes or until heated through. Sprinkle with remaining cheese and let stand for 10 minutes. Garnish with shredded lettuce and chopped tomatoes.
  • Serve by topping with the sliced avocado or guacamole.

1 tablespoon olive oil
1/2 cup onion, diced
1/2 tablespoon garlic clove, minced
2 cups potatoes, diced
1 (19 ounce) can black beans, drained
1 (12 ounce) can whole kernel corn, drained
2 tomatoes, diced
1 (1 1/4 ounce) package taco seasoning, reduced salt
1/3 cup water

Steps:

  • Heat olive oil in a frying pan and fry onion and garlic for approximately 5 minutes.
  • In a casserole dish combine fried onion and garlic, diced potatoes, black beans, corn, diced tomatoes, taco seasoning and water.
  • Bake in a 350 degree oven for 1 - 1 1/2 hours. Stiring halfway through.

2 1/2 cups crushed tortilla chips
2 -3 cups cooked chicken breasts, cubed (can use cooked cubed turkey also)
1 (15 ounce) can black beans, washed and drained (can use garbonzo beans in place of black beans)
1 (15 ounce) can red kidney beans, washed and drained
2 cups canned corn kernels, drained (or use one 15 ounce)
1 (8 ounce) can tomato sauce
1 1/2 cups salsa (I use spicy!)
1 onion, chopped
1 tablespoon chopped fresh garlic
1 green bell pepper, chopped
salt and pepper
3 -4 cups monterey jack cheese, shredded (or cheddar cheese)
1 -2 large firm tomatoes, chopped
2 cups sour cream (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Sprinkle the crushed tortilla chips evenly on the bottom of the dish.
  • In a large bowl combine the cubed cooked chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, garlic, salt and pepper; mix well to combine.
  • Spoon HALF of the mixture over top of the tortilla chips in the baking dish.
  • Sprinkle with 2 cups (or more if desired) shredded cheese.
  • Cover with remaining half of the chicken/bean mixture, then top with remaining shredded cheese.
  • Bake uncovered for 30-35 minutes.
  • Let stand for 5-6 minutes before serving.

1 pound dried black beans, rinsed thoroughly
1 tablespoon extra virgin olive oil
1/2 large white onion, chopped
1 green bell pepper, chopped
4 to 5 garlic cloves, crushed
1 bay leaf
1/4 cup extra virgin olive oil
1/2 large white onion, finely chopped
1 green bell pepper, finely chopped
3 garlic cloves, finely chopped
1 bay leaf
1/2 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon black pepper, plus more to taste
1 and 1/2 teaspoons salt, plus more to taste
2 tablespoons sherry vinegar
1/2 cup dry white wine
1/4 cup green olives stuffed with pimentos, thinly sliced
1 teaspoon sugar
Cooked white rice for serving (optional)

Steps:

  • In a large pot, soak beans overnight in 10 cups of water.
  • Add 1 tablespoon oil, the onion, bell pepper, garlic cloves and bay leaf to beans, and bring to a boil. Lower heat to medium and simmer for 1 hour, checking regularly and skimming the foam that forms on top.
  • Meanwhile, make the sofrito. Warm remaining 1/4 cup oil in a large skillet over medium heat. Add the half onion, 1 bell pepper and 3 garlic cloves and sauté for about 5 minutes until soft. Add 1 bay leaf, cumin, oregano, black pepper and salt, and cook for 2 minutes more.
  • Add the sofrito to beans. Stir in sherry vinegar, wine and olives, and bring to a boil. Lower to a simmer and cook, covered, for about 1 to 1 1/2 hours, stirring frequently, until slightly thickened and cooked through. Remove both bay leaves, and adjust salt and pepper to taste. Remove from heat and add sugar. Serve as soup or a side dish, or over white rice.

1 onion, chopped
2 -3 cloves garlic (or more if you like)
1 stalk celery, diced
1 -2 tablespoon oil
1 (14 ounce) can diced tomatoes
1 teaspoon ground cumin
1/4 teaspoon hot chili powder (or to taste)
1 (19 ounce) can black beans
3 tortillas, cut to fit into casserole dish
grated cheddar cheese or soy cheddar cheese, to taste
chopped green onion (optional)
chopped green pepper (optional)

Steps:

  • nota:diced tomatoes and chili powder can be replaced with an equivalent amount of salsa.
  • Preheat oven to 350°F.
  • In a large fry pan, heat oil and fry the onions, garlic, and celery until tender and onions translucent.
  • Add tomatoes/salsa and spices, and heat through.
  • Add black beans.
  • Spoon a quarter of the mixture in the bottom of the casserole dish.
  • Add a tortilla.
  • Spoon another quarter of the mixture over the tortilla and spread to cover.
  • Add a third of the grated cheese.
  • Continue in this way until all the ingredients have been used up.
  • Place casserole in the oven and heat for 20 minutes, or until heated through and the cheese is melted.
  • Sprinkle green onion and green pepper over the dish (if desired) and serve.

1/4 cup canned salsa verde (tomatillo salsa)
3 large garlic cloves, minced

1 (16 ounce) roll purchased prepared polenta, cut into 18 rounds
1/2 cup whipping cream
1 (15 ounce) can black beans, well drained
1 (15 ounce) can yellow hominy, well drained
3 cups coarsely grated monterey jack cheese (about 10 ounces)

Steps:

  • Position rack in middle of oven and preheat to 450°F Oil 11x7x2-inch glass baking dish.
  • Mix 1/2 cup cilantro, chilies, salsa verde, garlic, and cumin in medium bowl.
  • Arrange 9 polenta rounds in bottom of dish, spacing evenly.
  • Drizzle 1/4 cup cream over.
