Growing up, every Sunday after church, the whole extended family would gather at our house where Granny Sandy (my Mama) would fry up chicken with all the fixins. One of the fixins was often this simple, tasty salad that easily takes the place of a traditional coleslaw.

1 head of iceburg lettuce
1/2 c sweet onion (yellow, red or white)
4 oz medium cheddar cheese (e.g., colby longhorn)
1/2 c miracle whip salad dressing
1/4 tsp salt and pepper
1/2 tsp white vinegar
1 Tbsp sugar

Steps:

  • 1. Clean the lettuce and core it, then either tear or shred it into strips or bite-sized pieces; place in salad bowl.
  • 2. Dice onion into very small pieces and add to lettuce.
  • 3. Cut cheddar cheese into very small cubes(do not shred) and add to lettuce.
  • 4. In a separate small bowl, mix salad dressing, salt, pepper, vinegar and sugar. Mix well until sugar is dissolved and dressing is smooth and creamy.
  • 5. Refrigerate both bowls. Right before serving, add dressing to lettuce and toss well. If salad appears a little "dry", make a little more dressing and add, as required.
  • 6. NOTE: If you just can't bring yourself to use Miracle Whip, then substitute mayonnaise, but add an extra tablespoon of sugar.

1 cup butter
⅓ cup white sugar
2 teaspoons water
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
1 cup chopped pecans
3 tablespoons confectioners' sugar

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
  • Preheat oven to 325 degrees F (165 degrees C). Shape dough into walnut sized balls or crescents. Place 2 inches apart onto unprepared cookie sheets.
  • Bake for 18 to 20 minutes in the preheated oven, until golden. Roll in confectioners' sugar while still warm.

1 cup butter, softened
1 cup sugar
1 teaspoon almond extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup slivered almonds

Steps:

  • Preheat oven to 300°. Cream butter and sugar until light and fluffy. Beat in extract. In another bowl, whisk together flour, baking soda, baking powder and salt; gradually add to creamed mixture. Fold in almonds. , Drop by level tablespoonfuls onto ungreased baking sheets. Bake until edges are lightly browned, 22-24 minutes. Cool for 1-2 minutes before removing to wire racks.

1 head butter lettuce, torn into bit-size pieces
1/4 cup torn fresh mint leaves
1/4 cup thinly sliced radishes
3 tablespoons toasted salted sunflower seeds
1 tablespoon apple cider vinegar
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 cup freshly grated Pecorino-Romano cheese

Steps:

  • Toss the lettuce with the mint, radishes and sunflower seeds in a large bowl. In a small bowl, whisk together the cider vinegar, olive oil and salt. Drizzle the salad with the dressing, and sprinkle with the Pecorino-Romano.
