QUICK AND EASY PASTA SALAD



Quick and Easy Pasta Salad image

This easy pasta salad is flexible based on the ingredients you have in your kitchen or the season. Start with a hearty pasta shape that has nooks and crannies to hold onto the dressing like rotini or penne. Then toss with our simple dressing and lots of colorful vegetables. We also love adding parmesan cheese, which melts into the dressing as well as a handful of fresh mozzarella balls. Number Of Ingredients 16

1 pound dried pasta like fusilli, penne, rotini or farfalle (bow tie)
1 cup sliced bell pepper (1 medium)
1 cup thinly sliced zucchini (1/2 medium)
1 cup halved cherry tomatoes
1/3 cup thinly sliced scallions (5 to 6)
1/4 cup sliced pepperoncini or banana peppers, optional
1 cup (4 ounces) halved mixed olives
1 cup (2 ounces) grated parmesan cheese or hard cheese
1 cup (6 ounces) fresh mozzarella balls, chopped
1/3 cup fresh parsley or basil, optional
1/3 cup red wine vinegar, white wine vinegar or champagne vinegar
1/2 teaspoon fine sea salt, plus more to taste
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried oregano
2 to 3 tablespoons juice from pepperoncini jar, optional
1/2 cup extra-virgin olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until tender, 6 to 10 minutes (check the package for recommended cook time). Drain and rinse well under cold water.
  • While the pasta cooks, in the bottom of a large bowl, make the dressing. Whisk the red wine vinegar, salt, pepper, oregano, pepperoncini juice (if using), and the olive oil until blended. Add the drained and rinsed pasta to the dressing and mix well.
  • Stir in the bell pepper, zucchini, tomatoes, scallions, pepperoncini (if using), olives, parmesan, mozzarella, and the herbs (if using). Taste for seasoning and adjust with salt and pepper as needed. Serve or for the best results, cover and refrigerate at least 30 minutes and up to 5 days.

This is one satisfying and flavor-packed cold pasta salad with crunchy veggies, fresh herbs, rustic old-world salami, tangy olives, and mozzarella. A zesty Italian dressing brings it all together.

¾ lb pasta, ((I recommend fusilli or rotini pasta) )
Kosher salt
1 pint cherry tomatoes (halved)
1 bell pepper (any color, cored and chopped)
1 shallot (chopped)
1 cup marinated artichoke hearts (6 ounces)
1/4 cup pitted kalamata olives
6 pepperoncini, (chopped)
6 to 8 ounces salami, (sliced into bite size pieces )
6 ounces mozzarella cheese, (torn (or mozzarella cheese balls))
½ cup packed chopped fresh parsley
½ cup packed chopped fresh basil leaves
¼ cup olive oil
2 tablespoons white wine vinegar
2 garlic cloves, (minced)
1 teaspoon dried oregano
½ to 1 teaspoon crushed red pepper flakes
Kosher salt and black pepper

Steps:

  • Cook the pasta in boiling water according to package instructions until the pasta is cooked to al dante (don't forget to salt your water). Drain
  • In a large bowl, mix the pasta with the tomatoes, chopped veggies, artichoke hearts, olives, pepperoncini, salami, mozzarella, and fresh herbs.
  • In a small bowl or measuring cup, mix the dressing ingredients together.
  • Pour the dressing over the pasta and toss to coat.

My sister in law says this is the pasta salad Tom (her dad) made all the time. Sandy made a version of it for my 51st birthday, and sister in law told her that dad makes it better! I have eaten a version of this since I married John almost 22 years ago! This one will be a great addition to your recipes!

4 ounce(s) bowtie pasta (or other of your choice) 1 1/3 cups
4 ounce(s) tricolor corkscrew macaroni (or pasta of your choice)
1 teaspoon(s) dried crushed red pepper flakes (she omits)
1 medium sweet red pepper cut into thin strips (she cuts into chunks after that)
1 medium yellow squash, halved, sliced lengthwise (and/or zucchini) (sandy omitted, she left it at the store...lol)
10 ounce(s) frozen peas, thawed, or 1 1/2 c fresh peas, cooked and cooled
6 ounce(s) black olives, pitted, drained (another thing she left at the strore, rotfl) (i would omit, as i don't like olives)
3 ounce(s) smoked cheddar cheese, cubed (same size as the pepper)
1 cup(s) unbleached whole almonds, toasted (they never put this into the mix)
1/2 cup(s) green onion, sliced (she puts it on the side if people want to add it since they don't like onions)
2 tablespoon(s) fresh tarragon, snipped, or 2 t oregano, basil, or dill (sandy used italian seasoning)
8 ounce(s) italian salad dressing
2 - hard boiled eggs (she was going to add, but opted not to at the last minute)

Steps:

  • Cook pasta. If you want to use the crushed red pepper flakes, add to the water when cooking the pasta. Rinse with cold water to cool and stop cooking process, then drain well. Cool pasta to room temp. In large bowl, combine all remaining but dressing, then add dressing and toss to coat. Toss very gently so as not to break the pasta. Cover and chill 2-24 hours.
  • Since I like onion, I would add more and put it into the salad, especially since I really and I mean REALLY don't like olives.

¼ teaspoon salt
¼ cup extra-virgin olive oil
2 tablespoons fresh lemon juice

  • Combine shallot, honey, mustard, and salt in a jar with a lid; add olive oil, lemon juice, and vinegar. Cover jar with lid and shake until dressing is thickened.

1 package (16 ounces) spiral pasta
1 medium cucumber, finely chopped
1 jar (8 ounces) whole baby corn, drained and cut into 1/2-inch pieces
1 jar (7-1/2 ounces) marinated artichoke hearts, drained
1 cup sliced pimiento-stuffed olives
1 cup sliced ripe olives
1/2 cup finely chopped sweet red pepper
1/4 cup finely chopped onion
DRESSING:
1 cup canola oil
1 cup cider vinegar
1 cup sugar
1/2 teaspoon pepper
2 tablespoons minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the cucumber, corn, artichokes, olives, red pepper and onion. Drain pasta and rinse in cold water; stir into vegetable mixture. , In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for at least 2 hours. Serve with a slotted spoon.

3 tablespoons red wine vinegar, plus more to taste
1 garlic clove, finely grated or minced
1 teaspoon dried oregano
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil, plus more for drizzling
1 pound short-cut pasta, such as farfalle
1 pint cherry or grape tomatoes, halved
8 ounces mozzarella, cubed (or use small mozzarella balls)
4 ounces sliced salami, cut into 1/4-inch ribbons
3/4 cup sliced Kalamata olives
1/2 cup thinly sliced cucumber
3 tablespoons diced red onion

Steps:

  • Make the dressing: Combine vinegar, garlic, oregano and a big pinch each salt and pepper in a large bowl. Whisk in oil; taste and add more salt, pepper or vinegar as needed. Set aside.
  • Prepare the pasta: Bring a large pot of heavily salted water to a boil. Cook the pasta according to the package directions until the pasta is al dente. Drain well, transfer to the large bowl, and toss with the dressing while still warm.
  • Add tomatoes, mozzarella, salami, olives, cucumber and onion to the bowl and toss well; fold in herbs. Taste and season with more salt, pepper and vinegar, if you like.
  • Drizzle with olive oil and top with cracked black pepper just before serving.

1 cup(s) chopped sweet peppers

1/4 cup(s) radishes, sliced
1/4 cup(s) black olives sliced

1/2 cup butter, softened
1/4 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1/2 cup finely chopped pecans

Steps:

  • In a bowl, cream butter and sugar; stir in vanilla. Add flour; mix on low until well blended. Stir in pecans; mix well. Chill for 30 minutes. , Roll into 1-in. balls; place on a greased baking sheet. Bake at 350° for 15-18 minutes or until bottom edges are golden brown. Cool on a wire rack.
