3/4 cup butter, softened
2 cups sugar
3 large eggs, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1-1/2 cups 2% milk
CHOCOLATE FROSTING:
2 cups semisweet chocolate chips
1/2 cup butter, cubed
1 cup sour cream
4-1/2 cups confectioners' sugar
Chocolate curls, optional

Steps:

  • Preheat oven to 350°. Line three 9-in. round baking pans with waxed paper; grease and flour the pans and paper. Set aside., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda, salt and baking powder; add to the creamed mixture alternately with milk, beating well after each addition., Transfer to prepared pans. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small heavy saucepan, melt chips and butter over low heat. Transfer to a large bowl; cool for 5 minutes. Stir in sour cream. Gradually beat in confectioners' sugar until smooth. Spread between layers and over top and sides of cake. If desired, top with chocolate curls. Refrigerate leftovers.

1 package (2.1 ounces) sugar-free instant chocolate pudding mix
1-3/4 cups water
3 large egg whites, room temperature
FROSTING:
1-1/4 cups cold fat-free milk
1/4 teaspoon almond extract
1 package (1.4 ounces) sugar-free instant chocolate pudding mix
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
Chocolate curls, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, pudding mix, water and egg whites. Beat on low speed for 1 minute; beat on medium for 2 minutes. Pour into a greased 15x10x1-in. baking pan. Bake until a toothpick inserted in center comes out clean, 12-18 minutes. Cool on a wire rack. , For frosting, place milk and extract in a large bowl. 1 1/3 cups boiling water
Frosting
1/2 cup butter, cubed
3 oz. unsweetened chocolate, chopped
3 oz. semisweet chocolate, chopped
5 cups confectioner's sugar
1 cup sour cream
2 tsp. vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour three 9 inch round baking pans. 2. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating will after each addition. Beat in vanilla. 3. In another large bowl, whisk flour, cocoa, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition. Stir in boiling water. 4. Transfer batter to prepared baking pans. Bale 30-35 minutes or until a toothpick inserted in center comes out clean. Cool cakes in pans 10 minutes. Remove from pans to wire racks to cool completely. 5. For the frosting, in a metal bowl over simmering water, melt butter, unsweetened chocolate and semisweet chocolate; stir until smooth. Cool slightly. 6. In a bowl, combine confectioners' sugar, sour cream and vanilla extract. Add the melted chocolate mixture; beat until smooth. Spread frosting between layers and over top and sides of cake. Refrigerate left over cake.

2 teaspoons vanilla extract
2 cups sifted all-purpose flour
1 cup chopped pecans
3 tablespoons confectioners' sugar

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
