This quick fresh tomato salsa will always be best when tomatoes are in season. But you can pump up the flavor with a little lime juice if the flavor of your tomatoes is a little dull. Juicy tomatoes will yield a more watery salsa than pulpy roma tomatoes.

1/4 small white or red onion, minced
1 teaspoon red wine vinegar
1 pound fresh, ripe tomatoes, finely chopped
1 to 3 jalapeño or serrano chiles, to taste, minced (and seeded, if you would like a milder salsa)
4 tablespoons chopped fresh cilantro, more to taste
1 to 3 teaspoons fresh lime juice (optional)
Salt to taste

Steps:

  • Place minced onion in a bowl and cover with cold water. Add vinegar and let sit for 5 minutes or longer. Drain and rinse with cold water.
  • In a medium bowl, combine remaining ingredients and stir in onions. (If your tomatoes are full of flavor, you won't need lime juice.) Ideally, let stand at room temperature for 15 to 30 minutes before eating so that flavors will blend and ripen.

6 Roma tomatoes (important)
3 Jalapeno peppers
1/4 to 1/2 sweet or red onion
1 lime
2 or 3 cloves of garlic
One bunch of cilantro (at least one cup when chopped)
Salt and Pepper to taste
optional - 1/4 yellow bell pepper and one ear yellow corn (preferably roasted)

Steps:

  • Using a manually operated chopper, chop the tomatoes until slightly chunky. Try to avoid getting them too saucy or allowing them to foam up. Place the tomatoes in a bowl. Press or chop the garlic. Place the remaining ingredients in the chopper. Use only the top leafy portion of the cilantro, and remove the seeds from the jalapenos for milder salsa. If it is to hot for your taste, add more tomatoes or just a pinch of sugar.

2 tablespoons extra-virgin olive oil

2 medium avocados, peeled, seeded, small dice

8 fish fillets (Tilapia, Mahi Mahi, Red snapper, Grouper, etc)

Steps:

  • Mix tomatoes, onions, cilantro, serrano chiles, extra-virgin olive oil, lime juice, avocados together in a large bowl. Adjust seasonings with salt and freshly ground black pepper. Let the flavors come together at room temperature for about 1 hour.
  • Prepare grill and when coals are ready, coat fish fillets with olive oil, salt and fresh pepper and grill about 4 minutes per side (depending on thickness). Plate fish and top with salsa. Serve with grilled vegetables of your choice and rice.

1 lb tomatillo (approximately 10-12 medium tomatillos)
1/3 cup white onion, coarsely chopped
1/2 cup cilantro leaf, lightly packed (NOT dried)
1 jalapeno pepper (for extra "kick", I use serrano and jalapeno, but any green chili pepper will do)
2 garlic cloves, chopped
1/2 teaspoon sugar
1/4 teaspoon salt

Steps:

  • First prepare the tomatillos. Remove papery husks and then rinse tomatillos under warm running water, using your fingers to remove the sticky residue. Remove stems.
  • Chops into quarters.
  • Place all the ingredients into a blender or food processor.
  • Blend either coarse or smooth, depending on your preference.
  • Transfer tomatillo salsa to covered container and refrigerate at least 3 hours. Good with tortilla chips, enchiladas, tacos, etc.
  • I always triple the recipe and freeze in 8 ounce containers.

Salsa fresca is a generic term for any salsa that isn't cooked. There's no right or wrong way to do it - everyone does their own thing. This recipe is my take on what my mom used to make, but I think it's exceptional. (Pat on back, LOL!) Measurements are loose, but the key is the olive oil and mexican oregano. Prep time includes 15 minutes of standing time.

1 lb red ripe tomato, diced
1 small onion, finely diced
1/4 cup cilantro, roughly chopped
1 garlic clove, finely minced
2 teaspoons olive oil
1/2 teaspoon Mexican oregano, rubbed between your palms to crush

pepper, to taste
2 -3 serrano chilies, minced (to taste, these are hot!)

Steps:

  • In a non-reactive bowl, combine first six ingredients.
  • Add salt and pepper to taste.
  • Add the minced serrano chiles, a little at a time, tasting for "heat" until you reach the level you can stand.
  • Let stand for fifteen minutes to let the flavors meld. A small squeeze of lime juice is also good.
  • Refrigerate until ready to use. Will NOT keep overnight.
  • NOTE: this is such a versatile salsa. Try it in scrambled eggs, then rolled in a flour tortilla (breakfast burrito). Yum!

1 spaghetti squash (3 lb range)
Tropical salsa fresca:
1 cup chopped tomato (1/2 inch chunks)
1 cup chopped pineapple, mango, or papaya (1/2 inch chunks)
1 avocado, peeled, pitted, and cut into 1/2 inch chunks
1/4 cup lightly packed chopped fresh cilantro
Juice of 1 lime
Bean Mixture:
1 tablespoon vegetable oil
1 medium size yellow onion, cut into small dice
2 jalepenos, seeded and chopped small
3 cloves of garlic, minced
2 teaspoon coriander seeds, crushed
1 1/2 teaspoon chile powder
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup red cooking wine
1 cup fresh or frozen corn
1-15 oz. can black beans, drained and rinsed
2 tsp hot sauce to taste

Steps:

  • First, Bake the squash.Preheat oven to 375. Cut squash in half. Scoop out seeds. Place face down on baking sheet with 1 inch of water. Bake for 45 minutes. Flip it over to face up and cook until it is easily to pierce with fork. If it is done you can turn off the oven but leave it in to keep it warm. Prepare salsa by mixing all the ingredients in small bowl. Cover and refrigerate until ready to serve. Prepare bean mixture by heating a large, heavy bottom skillet over medium-high heat and saute onions and jalepenos in oil for about 5 minutes. Add garlic and coriander seeds and saute for 2 more minutes. Add remaining spices, salt, wine and raise the heat to a boil for 2 minutes, stirring often. Lower heat and add the corn, black beans and hot sauce. Cook for 5 to 7 minutes, until the corn is heated through and the wine has reduced. If the squash is not done by this point, cover the bean mixture. The bean mixture should be hot when served. When the squash is ready and cool enough to handle, shred and scoop out the flesh with a spoon, add to the bean mixture and toss with tongs to separate the strings and mix. Divide among individual plates and top with salsa fresca. Serve immediately.

3 tablespoons vegetable oil, for brushing grill rack
8 oz. queso blanco (or Monterey Jack) cheese, grated
6 bakery hamburger buns, split

Steps:

  • Preheat a gas grill to medium-high heat, or prepare a medium-hot fire in a charcoal grill with a cover. Combine chile, garlic, lime zest, lime juice, sugar, and salt in a medium non-reactive bowl and mix well. Stir in watermelon, tomato, onion, and cilantro. Cover and refrigerate while preparing burgers. Place bacon in a large, heavy non-stick fire-proof skillet on the grill; cook until crisp. Reserving dripping, use slotted spoon to transfer bacon pieces to paper towels. Place ground chuck, cheese, cilantro, garlic, chipotle pepper, salt, black pepper, and bacon pieces in a large bowl; drizzle with 2 Tablespoons reserved bacon drippings. Mix lightly, handling as little as possible. Shape into 6 patties to fit buns. When grill is ready, brush grill rack with oil. Place patties on the rack and cover. Cook, turning once, until done to preference; about 5-7 minutes per side for medium. Sprinkle cheese on patties during last 3 minutes of grilling. Place buns, cut side down, around outer edges of grill during last 2 minutes of grilling. To assemble burgers, place lettuce on buns, top with equally divided salsa fresca, followed by patties. My comments in my original review stated, "Although I didn't find this recipe here, I have made this salsa for several years. Due to variations of ingredients on hand, I sometimes make changes (and/or additions). However, this is a very good base recipe for fresh salsa. There is no need to change it; but we all like a little variety now and then." I am the designated salsa-maker among my friends, and this recipe never disappoints.

My ex's mom had the best hand-chopped salsa fresca I have ever tasted back in college. Over the years, I have tweaked it to something my friends and family rave about. The trick for this salsa is marinating the onions and jalapenos in lime juice for about 5 minutes before adding the tomatoes and cilantro. There are two tricks to this recipe: 1. 1-2 cloves garlic, minced, to taste
1/4-1/2 tsp. pepper, to taste

Steps:

  • 1. Toss all ingredients in bowl to mix. Chop ingredients small, but not so small that the tomatoes are mushy. Chill and serve with chips or your favorite Mexican dish. Will keep in fridge for about 3 days.
