2 cups shredded rotisserie chicken
1 cup sour cream
1-1/2 cups salsa verde, divided
8 corn tortillas (6 inches)
2 cups chopped tomatoes
1/4 cup minced fresh cilantro
2 cups shredded Monterey Jack cheese
Optional toppings: Avocado slices, thinly sliced green onions or fresh cilantro leaves

Steps:

  • In a small bowl, combine the chicken, sour cream and 3/4 cup salsa. Spread 1/4 cup salsa on the bottom of a greased 8-in. square baking dish., Layer with half of the tortillas and chicken mixture; sprinkle with half the tomatoes, minced cilantro and half of the cheese. Repeat layers with remaining tortillas, chicken mixture, tomatoes and cheese., Bake, uncovered, at 400° until bubbly, 20-25 minutes. Serve with remaining salsa and, if desired, optional toppings.

1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 teaspoons fresh ground cumin
1 1/2 tablespoons Mexican oregano (Not as sweet as the Mediterrean)
2 teaspoons real Hungarian paprika
1/2 teaspoon cayenne
2 tablespoons olive oil
8 -10 boneless chicken thighs
2 tablespoons olive oil
1 lb dry chorizo sausage, cut into 3/4 inch pieces
1 sweet onion, chopped
2 cloves garlic, minced
1 red bell pepper, seeded,chopped
2 bay leaves
2 cups basmati rice
1 (15 ounce) can diced tomatoes, with liquid
3 cups chicken stock, warm (Homemade is best)
1 cup pimento stuffed olive
1 -2 jalapeno, seeded,devained,minced
1/4 cup fresh cilantro, chopped
1/4 cup blanched almond, toasted
1/2 cup extra virgin olive oil
1 lime, juice of

Steps:

  • Preheat oven to 350°F.
  • Mix spice paste in a small bowl.
  • Wash Chicken, pat dry.
  • Rub chicken with spice paste, refrigerate 30 minutes, 60 is better.
  • In a dutch oven heat remaining Oil over medium heat.
  • Fry Chorizo'til crisp, remove, dry on paper towel.
  • Add Chicken, skin side down, brown well on all sides.
  • Remove, drain on paper towel.
  • Make a sofrito, saute the Onion, Garlic, Bell Pepper, and Bay leaves'til they are almost disolved.
  • Remove bay leaves.
  • Stir in Rice, coat well with sofrito.
  • Add Tomatoes and Stock.
  • Season with salt and pepper.
  • Place Chorizo and Chicken on top of rice mixture.
  • Bring to a boil, simmer 5 minutes.
  • Cover pot, transfer to oven.
  • Bake 20 minutes'til rice is done and has absorbed the liquid.
  • ---SalsaVerde---.
  • Puree all salsa ingredients'til smooth.
  • Garnish Arroz con Pollo with Salsa Verde and Green Olives just before serving.

1 cup Old El Paso™ Thick 'n Chunky salsa

5 bone-in chicken breast halves with skin

Steps:

  • Heat oven to 325°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Reserve 2 tablespoons enchilada sauce for brushing on chicken. In large bowl, mix remaining enchilada sauce, the uncooked rice, salsa, soup and beans; pour into baking dish.
  • Arrange chicken, skin side up, over rice mixture. Cover tightly with foil.

  • preheat oven 350*. In medium dish or bowl mix cheeses together.

1 (6 ounce) package Spanish rice mix (i use lipton or knorr)
2 tablespoons canola oil

2/3 cup salsa
1 cup frozen corn

  • cook rice according to package.

  • add peppers and onion, saute about 5-7 minutes until veggeies get tender.

When I read the recipe it sounded SO good I just had to try it. Once I located all the ingredients and made it, all my friends and family asked the same...

2 c rotisserie chicken, deboned, shredded or cut into large bite size pieces. you may also use 2 chicken breasts cooked in chicken broth. cut when cooled.
3 1/2 c jarred tomatillo salsa (salsa verde). you may also make from fresh. see recipes on jap.
1/2 c heavy cream
2 Tbsp sour cream, mixed well into heavy cream
1 onion, sliced paper thin
1/2 c vegetable oil
12 day old corn tortillas
1 c manchego cheese, grated
1 c panela cheese, grated
1/2 c anejo cheese, grated.
NOTE: IF YOU CANNOT FIND THESE CHEESES YOU MAY USE A FIESTA BLEND BAGGED CHEESE.

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly butter 4 qt. casserole. In large mixing bowl, combine tomatillo salsa, heavy cream/sour cream, dash salt/pepper.
  • 2. Heat the vegetable oil in large skillet over low-medium heat. Cook tortillas just 5 seconds per side to soften. Transfer to platter w/ paper towels or into colander to drain.
  • 3. TO ASSEMBLE CHILAQUILES: Spread layer of cheeses mixture over bottom of casserole dish. Dip each tortilla, one at a time, in tomatillo sauce to moisten. Set moistened tortillas aside.
  • 4. Integrate onions and chicken into sauce, mix well to combine. Layer 1/3 of moistened tortillas over cheese in casserole dish. Top tortillas with 1/2 of tomatillo sauce.
  • 5. Sprinkle remaining cheeses over sauce. Now repeat the second layer with tortillas and remaining sauce, ending with layer of moistened tortillas on top. If desired (I always do!) sprinkle another half cup of cheeses over tortillas.
  • 6. Cover casserole tightly with aluminum foil. Bake @ 350 for 35 minutes. Remove foil and bake 5-10 minutes more or until edges are slightly brown. Let sit 10-15 minutes prior to serving.

8 medium tomatillos (12 ounces), husked and rinsed
Olive oil, for bowl and brushing
2 large cloves garlic, unpeeled
3 medium fresh serrano chiles or 1 large fresh jalapeno pepper, stems removed
1/2 medium white onion, finely chopped
3 tablespoons freshly chopped cilantro
3/4 teaspoon salt, plus more to taste
1 12-ounce skinless and boneless chicken breast, cut into 1/2-inch dice
Classic Tamale Batter

Steps:

  • Heat the broiler. Place the tomatillos on a baking sheet. Place the baking sheet 4 inches below the heating element. Broil tomatillos, turning once, until soft and blackened in spots, 8 to 9 minutes. Remove baking sheet from broiler, and set aside until tomatillos are cool. Position the oven rack in the upper third of the oven. Reduce the temperature to 425 degrees. Lightly oil an 8-inch pie plate; set plate aside.
  • Place garlic in a medium skillet set over medium heat. After 5 minutes, add chiles. Cook, turning occasionally, until chiles and garlic are soft and blackened in spots, about 10 minutes more. Remove skillet from heat; set aside to cool. Peel the garlic.
  • Transfer the tomatillos, any accumulated juice, chiles, and garlic to the bowl of a food processor or the jar of a blender. Cover, and pulse until a coarse puree forms. Transfer puree to a medium bowl.
  • Place the onions in a sieve, and rinse under cold running water. Drain, and add to tomatillo mixture along with cilantro and salt; stir salsa until combined.
  • Measure 3/4 cup salsa into a medium saute pan, and stir in the chicken. Set over medium heat, and cook, stirring, until chicken becomes tender, 8 to 10 minutes. Remove from heat, and set aside to cool.
  • Spread half of the tamale batter over bottom of prepared pie plate. Spread the chicken filling evenly over the batter, then spread remaining batter over chicken.
  • Bake until golden, about 5 minutes.
  • Reduce temperature to 300 degrees, and lightly brush top of pie with oil; loosely cover with foil. Continue baking until golden and center springs back when touched, about 35 minutes more. Remove casserole from oven, and let stand 5 minutes.
  • Cut the casserole into wedges. Serve casserole warm, and drizzle with the remaining tomatillo salsa; if salsa is too thick to drizzle, thin with 1 or 2 tablespoons water.

16 ounces jar salsa
1 cup chicken broth

2 large chicken breasts, thawed (about 1-1/2 pounds)
1 cup shredded cheese, blend
2 green onions, sliced

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • In an 8-inch-by-8-inch baking dish, add the rice, black beans, corn, salsa, chicken broth, chili powder and oregano. Stir to combine.
  • Cut the chicken breasts into 3 pieces and submerge into the liquid in the baking dish as far as possible.
  • Cover the casserole dish tightly with foil and bake for 1 hour, until the rice is tender and the liquid has been absorbed.

1 C. milk

Cooked rice
Salsa
Sour cream
Grated cheese
Toasted bread crumbs or crushed corn chips

  • Make a light white sauce: Melt butter in small pan. Add flour, mixing well, and let cook for three minutes or so, making sure it doesn't brown. Slowly add milk, mixing well, until sauce forms. Cook sauce for maybe five minutes to thicken. Add salsa to sauce -- maybe half to two-thirds cup. Add about a cup and a half of rice, about a cup of chicken and about two tablespoons sour cream to sauce. Add more of the above as necessary to achieve creamy casserole texture. (You can add corn or other vegetables, as well.) Pour into casserole dish. Top with grated cheese and crumbs. Bake at 350 until bubbly. Serve with more salsa for topping at table.

We seem to always have the items this casserole calls for on hand. I use homemade salsa but use what ever your favorite is to make it tasty! You also don't have to tear the tortillas into pieces, I do this for my kids - to make it easier for them to eat. If you don't drain the salsa it will be too soggy.

1 cup salsa (drained)
1/2 cup sour cream
3 tortillas
1 -2 cup cheese (I use longhorn)

Steps:

  • Preheat oven to 350 degrees. Spray a 2 quart baking dish. Mix together the salsa and sour cream. Place torn tortilla pieces in the bottom and on the sides of the dish - just one layer. Optional toppings: avocado slices, thinly sliced green onions or fresh cilantro leaves

Steps:

  • Combine the chicken, sour cream and 3/4 cup salsa in a small bowl. Spread 1/4 cup salsa on the bottom of a greased 8-in. square baking dish. Layer with half of the tortillas and chicken mixture; sprinkle with the tomatoes, minced cilantro and half of the cheese. Repeat layers with remaining tortillas, chicken mixture and cheese. Bake, uncovered, at 400° for 20-25 minutes or until bubbly. Serve with remaining salsa and, if desired, optional toppings. Yield: 6 servings.
