1/2 cup butter, melted
1 cup lemon juice
1/4 cup minced fresh basil or 4 teaspoons dried basil
1/4 cup reduced-sodium soy sauce
1/4 cup Worcestershire sauce
4 garlic cloves, minced
2 to 3 teaspoons curry powder
2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
4 salmon fillets (5 ounces each)
TARTAR SAUCE:
1/2 cup mayonnaise
1 tablespoon finely chopped green onion
1 tablespoon lemon juice
1/2 teaspoon dill weed
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the first 10 ingredients. Pour into a large resealable plastic bag; add salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally. Meanwhile, in a small bowl, combine tartar sauce ingredients; refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. , Grill, covered, over medium heat or 4 in. from the heat for 8-10 minutes or until fish flakes easily with a fork. Serve with tartar sauce.

1 (1 1/2-pound) salmon fillet
2 tablespoons olive oil
salt and ground black pepper to taste
1 medium lemon, sliced
1 teaspoon minced fresh tarragon
½ cup mayonnaise
½ cup sour cream
2 tablespoons minced fresh tarragon
2 tablespoons dill pickle relish
2 tablespoons drained capers, minced
1 tablespoon minced shallot
1 tablespoon white wine vinegar
1 tablespoon minced lemon zest
1 teaspoon Dijon mustard
1 teaspoon white sugar
½ teaspoon Worcestershire sauce
1 dash hot pepper sauce (such as Tabasco®), or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Remove salmon skin and any pin bones; pat dry. Rub both sides with olive oil and season with salt and pepper. Arrange on the baking skeet.
  • Roast in the preheated oven until the thickest part is still translucent and an instant-read thermometer reads at least 125 degrees F (52 degrees C), about 15 minutes; salmon will continue to cook once out of the oven.
  • While salmon is roasting, prepare tartar sauce: combine mayonnaise, sour cream, tarragon, relish, capers, shallot, white wine vinegar, lemon zest, Dijon, sugar, Worcestershire, hot sauce, salt, and pepper in a bowl; mix until blended. Chill to blend flavors until salmon is ready.
  • Remove salmon from the oven. Transfer to a platter and garnish with lemon slices and tarragon. Serve with tartar sauce.

3 tablespoons plus 1/2 cup purchased tartar sauce
2 tablespoons chopped fresh dill
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon grated lemon peel
2 sesame-seed rolls, split
Red onion slices
4 Bibb lettuce leaves

Steps:

  • Place salmon fillets, 3 tablespoons tartar sauce, 1 tablespoon dill, salt, and pepper in processor. Blend using on/off turns until coarsely ground. Form into two 1/2-inch-thick patties. (Can be made 6 hours ahead. Cover and refrigerate.)
  • Prepare barbecue (medium-high heat). Whisk 1/2 cup tartar sauce, 1 tablespoon dill, and lemon peel in medium bowl to blend. Grill rolls until toasted. Transfer to 2 plates and spread bottom halves generously with sauce. Grill patties until fish is cooked through, about 2 minutes per side. Place burgers atop sauce on rolls. This is a delicious, easy summer salmon dish that gives you a lot of bang for your bucks. We liked it grilled, but you could also broil it in the oven, cook it in a non-stick skillet, or even nuke it! The creamy (faux) 'tartar' sauce is absolutely yummy and really complements the rich, flaky salmon. This dish is great either hot or cold.

1/3 cup creme fraiche
1 tablespoon finely minced gherkins or 1 tablespoon cornichon
1 tablespoon finely minced green onion
1 1/2 teaspoons finely minced fresh dill
1 1/2 teaspoons Dijon mustard
1 teaspoon sweetened condensed milk
1/2 teaspoon fresh lemon juice
salt and pepper, to taste
2 salmon fillets or 2 steaks
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 garlic clove, very finely minced
1/2 teaspoon dried oregano (I prefer the Mediterranean oregano)
salt and pepper, to taste
very finely-sliced green onion top

Steps:

  • For Creamy Tartar Sauce: Combine all ingredients together in a small bowl. Taste and adjust for salt and pepper. Cover and refrigerate until ready to use.
  • For Salmon: Mix olive oil, lemon juice, dijon mustard, garlic, oregano and salt and pepper to taste. Put salmon steaks in a zip-loc bag and add marinade, making sure that salmon is completely coated with marinade. Marinate in refrigerator for 1-2 hours before grilling.
  • To grill: Prepare coals or propane bbq to medium-hot. Remove salmon from marinade in zip-loc bag and grill 3-4 minutes per side, or until done. (Alternatively, you can cook the salmon in your favourite way.).
  • To serve: Center grilled salmon on plate and top with creamy 'tartar' sauce. Garnish with the very finely-sliced green onion tops sprinkled over the sauce.

6 ounces salmon, cut into 1/4-inch dice
1 tablespoon capers, drained
1 tablespoon finely chopped cilantro
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 teaspoon chipotle puree
1 tablespoon scallions, chopped
Kosher salt and fresh cracked black pepper

Steps:

2 tablespoons finely chopped green bell pepper

Steps:

  • In small bowl, mix salmon, bread crumbs and bell pepper, breaking up salmon with spoon. Stir in remaining burger ingredients until well mixed.
  • Line cookie sheet with waxed paper. Shape salmon mixture into 4 patties, each about 1/2 inch thick. Place on waxed paper. Refrigerate 1 hour. Meanwhile, in small bowl, mix all tartar sauce ingredients. Refrigerate until ready to serve.

3 small red potatoes (8 ounces)
1 cup cooked flaked salmon
1 egg white
2 green onions, chopped
1 tablespoon chopped parsley
1/2 teaspoon cajun seasoning or 1/2 teaspoon creole seasoning (more if you wish)
1 teaspoon olive oil or 1 teaspoon canola oil
lemon wedge (to garnish)
parsley (to garnish)
1 tablespoon low-fat mayonnaise
1 tablespoon nonfat plain yogurt or 1 tablespoon nonfat sour cream
2 teaspoons grainy mustard
1 tablespoon parsley, chopped

Steps:

  • Halve potatoes (leave skin on) and place in small saucepan with about 1/2 cup water, bring to boil, reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Drain any remaining water.
  • Mash potatoes with fork, leaving chunky texture.
  • Combine in medium mixing bowl mashed potatoes, salmon, egg white, onion, parsley and seasoning mix.

1/2 cup light mayonnaise
1/3 cup tomatoes, seeded and finely chopped
1 tablespoon fresh parsley, finely chopped
1 1/2 teaspoons capers, finely chopped
1/2 teaspoon lemon juice
1 dash Tabasco sauce
1 lb salmon fillet
1 onion, finely chopped
2 tablespoons plain breadcrumbs
1/2 teaspoon salt
1/4 teaspoon fresh black pepper
8 slices rye bread or 4 whole wheat hamburger buns
4 lettuce leaves

Steps:

  • In a small bowl, combine mayonnaise, tomatoes, parsley, capers, lemon juice and tabasco. Set aside. (This can be prepared in advance and cover it. It will be good up to 6 hours in the fridge).
  • Put salmon fillet, skin side down, on a cutting board. Beginning by the tight side, with a knife, do a light incision between the skin and the flesh, to be able to hold the skin. Holding the skin firmly and putting the knife down and inclined, pull on the skin from the exterior in a movement of backwards and forwards. Cut the salmons in pieces.
  • In food processor, mix salmon, 1/4 cup of the reserved tartar mayonnaise, onion, breadcrumbs, salt and pepper until salmon is finely chopped. Shape the mixture in 4 burgers of 3/4 inch thickness. (You can prepare the burgers in advance and put in an hermetic container, separating them with wax paper between each. They will be good up to the next day in the fridge).
  • Set the barbecue to medium heat. Put the salmon burgers on an oiled grill and close the cover. Cook for about 10 minutes or until golden (flip them at mid-cooking).
  • Meanwhile, put the slices of bread on the grill of the barbecue and cook 3 minutes or until lightly crispy (flip at mid-cooking). Put 4 slices of bread on a work surface. Garnish each one with a lettuce leaf, then with the salmon burger and remaining of tartar mayonnaise (divided in the 4). Cover with the other slices of bread.

Nonstick vegetable oil spray
2 1 1/4-pound skinless salmon fillets (head ends; each about 6 inches long by about 6 inches wide at thickest end)

Steps:

  • Combine first 6 ingredients in small bowl. Season with salt and pepper. Cover and refrigerate at least 1 day. (Can be prepared 4 days ahead. Keep refrigerated.)
  • Preheat broiler. Spray 2 rimmed baking sheets with vegetable oil spray. Cut salmon crosswise into 1/4-inch-thick slices. Arrange slices in single layer on baking sheets. Sprinkle with salt and pepper. Working in batches, broil until salmon is just opaque in center, about 2 minutes (do not turn salmon over). Cover; chill until cold, at least 1 hour or overnight.

4 King Salmon Fillets-skin off, pin bones removed, cut into 6-7 oz portions
4 Tbsp. olive oil-for basting salmon fillets
Salt and Pepper to taste
3 cups Seasonal Greens Mix (purchased)
4 Tbsp. Gorgonzola-crumbled
1/4 cup red onion-peeled, cored and thinly sliced
2 Tbsp. Olive Oil
1 Tbsp. Raspberry Vineagar
1 1/2 cups Artichoke Tartar(recipe follows)
4 lemon slices
Garnish:
4 half pieces fresh artichokes, small-trimmed, cooked tender, split in half, thistle area removed
ARTICHOKE TARTAR INGREDIENTS
1/2 cup mayonnaise
1/4 cup dill pickles-chopped 1/8"-1/4" pieces
1 Tbsp. green olives, pimento stuffed-chopped 1/8"-1/4" pieces
3/4 tsp. lemon juice
3/4 cup artichoke hearts, marinated-chopped 1/4"-1/2" pieces
1 Tbsp. capers-chopped
1 Tbsp. parsley-minced
Salt to taste
White pepper, ground to taste

Steps:

  • Preparation ARTICHOKE TARTAR PROCEDURES: Combine and blend all ingredients together. Store refrigerated until needed. GRILLED SALMON PREPARATION (20 minutes): Fire up the charcoal grill to the proper cooking temperature (500-600 degrees). To minimize grill sticking, brush grates completely free of any carbon buildup and "season" grates by brushing the surface with vegetable oil. NOTE: An over-fired range broiler can also be used if a charcoal grill is not available. Baste the salmon fillets with olive oil and season to taste with salt and pepper. Grill salmon until cooked through, but still moist and flaky (approximately 6-8 minutes). Turn and bast salmon with olive oil half way through the grilling process. Meanwhile, lightly baste artichokes halves with olive oil and place on grill to warm through. Remove and keep salmon fillets and artichokes warm from plating. Meanwhile, toss to dress the seasonal greens, gorgonzola crumbles and red onions, with the olive oil and raspberry vinegar. Mound the dressed greens on serving plates, lay the grilled salmon over the greens. Fill the artichoke halves with artichoke tartar and place along side of the salmon. Serve with lemon slices.

1 pound fresh salmon fillet, all skin and bones removed
4 tablespoons olive oil
2 teaspoons grated ginger
2 tablespoons chopped chives
1/2 teaspoon sea salt
1/2 teaspoon grated white pepper
2 cups finely diced cucumber, seeded but not peeled
3 tablespoons Asian sesame oil
Red oak leaf lettuce
Fresh herb garnish fresh lemon balm preferred

Steps:

  • Use only the freshest possible salmon for this dish from a reliable source.
  • This may not be done ahead of time since its flavor, freshness and presentation rely on lastminute preparation and assembly. Always work with an absolutely clean area and plastic gloves would be welcome at this time.
  • Cut the salmon fillet by hand, using a very sharp knife, into an even dice 1/4-inch thick.
  • Mix the fish in a bowl with the olive oil, ginger, chives, salt and pepper and let marinate for a few minutes.
  • Mix the diced cucumber with the sesame oil in a bowl and season lightly with salt and pepper.
  • Place a wreath of red leaf lettuce around a serving dish. Use a pastry ring to create a layered look
  • for the final presentation of the tartar. Place the ring in the center of the plate and fill the lower portion of the ring with cucumber salad. Smooth the layer evenly and add a layer of salmon tartar on top of the cucumber. Top the salmon with some fresh herb leaves and serve immediately.
  • Garnish with chopped chives and finely chopped zest of lemon and lime.

Steps:

  • Heat oil in a heavy frying pan to 325 degrees F. Add the plantain quarters in 3 batches and fry until soft, about 2 minutes per side, turning once. Transfer to a paper towel-line plate with a slotted spoon to drain. Repeat with the remaining plantains.

1/2 cup small French lentils, cooked until just tender and drained
2 tablespoons finely chopped gherkins
1 tablespoon capers, finely chopped
2 teaspoons finely chopped fresh chives
2 teaspoons finely chopped fresh parsley
2 spring onions, white part only, very finely chopped
1 tablespoon olive oil
2 teaspoons Dijon mustard
Salt and freshly ground black pepper
1/3 cup mayonnaise
9 ounces smoked salmon, long slices (the slices should not be so thin that they fall apart)
Toasted baguette slices, for serving

Steps:

  • Put the lentils in a bowl. Then add in half the gherkins, capers, chives, parsley and spring onions. Dress with the olive oil, mustard and salt and pepper to taste. Set aside.
  • Put the mayonnaise in a bowl. Then add in the remaining half gherkins, capers, chives, parsley and spring onions. Set aside.
  • Lay some plastic wrap on a cutting board, which will help to form the roll. Start to layer the sheets of smoked salmon on top, overlapping the slices, so that none of the filling escapes when you roll it up.
  • Using an offset spatula (commonly used for frosting cakes), spread a thin layer of the tartar sauce right on the salmon, all the way to the outer edges of the salmon. Next, spoon on a layer of the prepared lentils over the tartar sauce layer.
  • Using the plastic wrap to help, lift the salmon away from you and form it into a log form. (The plastic wrap helps to lift the delicate salmon. The plastic wrap should not get rolled into the salmon.) Once the roll is formed, use a very sharp knife to very gently slice the delicate roll into pieces, like a Japanese maki or sushi roll. Serve immediately on individual spoons or on top warm toasted baguette slices drizzled with a little olive oil.

1/2 cup butter, cubed
2 garlic cloves, minced
1 salmon fillet (3 pounds)
