  • Process cream cheese in a food processor to soften completely; add salmon, capers, green onion, dill, cream, Worcestershire sauce, hot pepper sauce, and lemon juice. Process the mixture again until creamy and smooth.

1 1/2 cups flaked cooked salmon (about 6 ounces)
4 ounces cream cheese
1 tablespoon fresh lemon juice
1 tablespoon prepared white horseradish
4 ounces smoked salmon
2 tablespoons chopped fresh dill
Thinly sliced baguette rounds

Steps:

  • Combine first 4 ingredients in processor. Blend until just smooth, occasionally scraping down sides of work bowl. Add smoked salmon and dill. Using on/off turns, blend just until smoked salmon is finely chopped. Season spread with salt and pepper. Transfer to small bowl. Serve with baguette rounds.

1/2 cup mayonnaise
Freshly ground black pepper
3 ounces raw salmon, finely diced
1/2 cup creme fraiche or sour cream
1 shallot, minced
1 lemon, zested and juiced
1/2 cup minced chives
Kosher salt, optional
Crostini, for serving

Steps:

  • In a food processor, add the smoked salmon along with the mayonnaise and some pepper. Pulse just until the salmon is broken up into slightly smaller pieces. Do not overmix.
  • Place the mixture into a bowl and combine with the raw salmon and creme fraiche or sour cream. You may add more or less depending on how creamy you like it. Add the shallot, lemon zest and juice and half the chives. Season with pepper; the mixture will likely not need salt due to the smoked salmon.
  • Transfer the mixture to a shallow wide bowl and cover with the remaining chives. Serve with crostini.

cooked salmon, preferrably grilled or baked, skin off, boned and flaked
hard boiled eggs, diced
mayonnaise
pickles or pickle relish
shredded lettuce
chopped pecans or walnuts
anything else you would put in your tuna salad for sandwiches

  • 1. Skin and debone salmon.
  • 2. Use a fork to smash the salmon into fine pieces.
  • 3. Add mayo and other ingredients.
  • 4. This is the ONLY food item that my husband insist on having at all times in the fridge. It is that good. Change it up from time to time...this time I added in a bottled chimichurri spread of cilantro, garlic and parsley...next time it might be dill weed...you can vary the recipe to your own taste. Also take into consideration how you grilled your fish in the first place. Butter, salt and pepper is his favorite...this one, I used tereyaki basil marinade. It's all relative.

1 bottle dry white wine
2 tablespoons chopped shallots
1 teaspoon fine sea salt, plus more to taste
2 pounds fresh salmon fillet, fat trimmed, cut in 1-inch cubes
6 ounces smoked salmon, fat trimmed, cut into tiny dice
2 tablespoons thinly sliced fresh chives
1/4 cup fresh lemon juice
1 cup mayonnaise, homemade or prepared
1/4 teaspoon freshly ground white pepper
Toasted baguette slices, for serving

Steps:

  • Place wine, shallots and 1 teaspoon of the salt in a large saucepan and bring to a boil. Add the fresh salmon and poach for 40 seconds. Drain in a sieve and run cold water over the fish just to stop the cooking. Drain well and refrigerate until cold, at least 1 1/2 hours. Discard the poaching liquid.
  • Place smoked salmon in a large bowl and stir in the chives. Add the poached salmon and use the side of a wooden spoon to shred the salmon as you mix. Stir in the lemon juice, mayonnaise and pepper. Add sea salt to taste.
  • Refrigerate up to 6 hours, then serve with toasted baguettes.

Everyone loves a good 'potluck' appetizer. Living in Alaska for 15 yrs, I had access to the best smoked red salmon. After many "pretty good" attempts, I finally tweaked this dip and/or sandwich spread to perfection. Great for potlucks, or tailgate parties. Easy for anyone to make!

16 oz cream cheese
4 oz smoked salmon, skin and any stray bones removed (red is best, but any variety will work)
1/4 c jalapeno peppers (ring slices from a jar, diced and *reserve some brine if needed) **
1/2 red bell pepper (roasted preserved from a jar, diced) **
1 small onion (diced)
2 Tbsp ranch dressing (prepared salad dressing, not powdered)
1/2 tsp red pepper flakes
dash(es) cayenne pepper (more or less to taste)

Steps:

  • 1. Utensils needed: Mixer (with medium sized mixing bowl), food processor, spatula, serving bowl. Preparation time: approximately 20 minutes or less
  • 2. Using an electric mixer, beat Cream Cheese until soft then set aside. (You can beat the mixture by hand, but set out the cream cheese until it is room temperature for easier handling.)
  • 3. In food processor, finely chop together salmon, peppers and onion.
  • 4. Add chopped ingredients to softened Cream Cheese along with the ranch dressing, crushed red pepper and cayenne pepper. Mix thoroughly and transfer to serving bowl.
  • 5. Use as a cracker dip with assorted crackers, on raw veggies such as celery ribs, or as a bread spread. Refrigerate unused portion. Optional: Garnish the serving dish with fresh dill, fresh chopped jalapenos, fresh chopped scallions/green onions, or cilantro.

Serve this wonderful spread on top of Ritz crackers, I serve this on small oven-baked crispy crostini, that has been brushed with garlic butter before baking....the crostini can be baked even a day ahead, you can even use small dried bagel rounds. This makes approximately 2 cups, but you can easily double the recipe to serve a big crowd. Plan ahead the mixture has to chill for a minimum of 6 hours or up to 24 hours before serving. If you have any leftover spread, it will freeze well.
