MEDITERRANEAN FLATBREAD SERVED IN A TRAY AND TOPPED WITH ARUGULA, TOMATOES, SMOKED SALMON AND MORE
All-star Mediterranean flatbread recipe loaded with fresh arugula, veggies, smoked salmon and other Mediterranean favorites like olives and feta! Great as a simple meal with your favorite glass of wine, or as an appetizer for a crowd.

Steps:
- Preheat oven to 450 degrees F.
- Prepare a large sheet pan and brush with extra virgin olive oil. Sprinkle the bottom of pan with cornmeal, about 2-3 tbsp.
- Lightly flour a clean work surface. Place pizza dough on top and roll and stretch dough to a 12 x 8 rectangle or oval. Transfer stretched dough to prepared sheet pan.
- Lightly brush top of dough with extra virgin olive oil and season with oregano and za'atar spice. Bake in heated oven for 15 to 20 minutes, or until dough is golden and slightly crisp on bottom. Remove from heat.
- In a bowl, combine arugula and tomato. Drizzle with a little extra virgin olive oil and season with salt, pepper, and a dash of Za'atar spice. Mix to combine. Set aside for a moment.
- Spread a thin layer of hummus evenly over the pizza crust. Top with the arugula and tomato mixture. Now arrange the remaining ingredients on top evenly. Sprinkle a little more za'atar spice and dried oregano all over.
- To serve as an appetizer, slice pizza into small rectangles. You'll get 15 or more pieces. Enjoy!

- Beat eggs in medium bowl. Add milk, dill, pepper and salt; beat well.

SALMON SALAD ON CHARRED FLATBREAD

- For the salmon cure: Bring the salt, lime juice, sugar, vinegar, soy, fish sauce and jalapeño to a boil in a small pot over medium-high heat; simmer for 5 minutes. Reserve a splash for the miso glaze, then pour the rest over the salmon and dill stems in a heatproof container and let it sit for 20 to 30 minutes.
- For the miso glaze: Mix together the miso, mustard, olive oil, honey, lime juice and reserved splash of salmon cure, for thinning, in a bowl.
- For the spice and herb coating: Mix the herbs, cumin and berbere together in a bowl. Set aside a little for the salad; put the remainder in a shallow dish.
- Pat the salmon fillets dry with a paper towel. Brush on some of the miso glaze. Roll the salmon in the spice and herb coating. Slice the salmon into thin slices.
- For the salad with miso vinaigrette: Add the tomatoes, cucumber, avocado, salt and reserved spice and herb coating to a bowl. Add the lime juice and remaining miso glaze and toss until evenly coated. Stir in the herbs and chive blossoms.
- Char the bread and lemon wedges in a pan.
- To assemble: Place a large spoonful of salad on a plate, then top with the sliced salmon. Garnish with more chive blossoms. Serve with slices of charred pita and lemon wedges.
SCRAMBLED EGGS WITH SMOKED SALMON

- Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.
- Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.
- Note: If you are serving these eggs with the other recipes provided as a brunch, a platter of store bought fruit filled dainties will complete your elegant brunch. Allow 1 dainty per person but halve dainties so that guests may mix and match varieties.

- Prep eggs by whisking together 4 large eggs, a splash of milk, dill, salt, and pepper until combined.
- Then, heat a medium size skillet to medium/high heat and add in olive oil and garlic. Pour in the egg mixture and cook for 1-2 minutes, using a spatula to scramble. Once the eggs have started to cook, add in cooked salmon.
