2 pounds cooked salmon, chilled
1 cup small-diced celery (3 stalks)
1/2 cup small-diced red onion (1 small onion)
2 tablespoons minced fresh dill
2 tablespoons capers, drained
2 tablespoons raspberry vinegar
2 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl. Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt, and pepper. Season, to taste. Mix well and serve cold or at room temperature.

2 (7 ounce) cans salmon, drained
2 tablespoons fat-free mayonnaise
2 tablespoons plain low-fat yogurt
1 cup chopped celery
2 tablespoons capers
⅛ teaspoon ground black pepper
8 leaves lettuce

Steps:

  • Crumble the salmon into a 1 quart bowl, removing any bones or skin.
  • In a small bowl combine the mayonnaise, yogurt, celery, capers and pepper. Mix well and then add to salmon and toss. Serve on a bed of lettuce leaves.

I'm an avid herb gardener and can't wait to use the products of my labor in dishes like this salad. For a different twist, I include chopped apple...it adds some natural sweetness.

2 cans (14-3/4 ounces each) salmon, drained, bones and skin removed
2 celery ribs, sliced
1 large apple, peeled and chopped
5 green onions, sliced
1/2 cup mayonnaise
2 teaspoons snipped fresh dill or 3/4 teaspoon dill weed
3/4 teaspoon minced fresh basil or pinch dried basil
1/4 teaspoon garlic salt
1/4 teaspoon minced fresh tarragon or pinch dried tarragon

Steps:

  • Flake salmon into a bowl. Add remaining ingredients; stir gently. Chill until ready to serve.
