Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

1 (213 g) can salmon, skin & bones removed (I prefer sockeye but in this recipe pink is fine too)
1 1/2 cups left over mashed potatoes
1 egg, beaten
1/2 cup flour
salt & pepper
3 tablespoons parsley, chopped
4 tablespoons onions, minced
3/4 cup fresh breadcrumb (Panko are best)
vegetable oil cooking spray, for frypan (or if you wish use butter mixed with oil for really crisp cakes but watch the calories go up)

Steps:

  • Mix all the ingredients except the bread crumbs, stir well.
  • Form into 6 cakes.
  • Coat with crumbs.
  • Fry until nicely browned on the outside and heated through, apprx 5 minutes each side Serve.

I've done many versions of potato pancakes, in my life, but this has got to be the easiest. I think I shocked myself by making it with smash/potato flakes (this is the correct terminology for instant mashed potato granules), but there's always got to be a first time. And they taste wonderful, so there is no need to feel bad. But if having an ingredient like this in your store or cupboard makes you feel too trailer-trash for words, then go to some expensive health store and buy a packet of organic potato flakes instead. I do understand. I have to tell you that if you make these with 1 cup potato flakes and no flour or baking powder, you have the most stodgily fabulous squat little cakes to eat with a proper fried breakfast. These are mighty good for soaking up excess, though delicious, fats and juices though a more elegant version is required here. Serve them around at cocktail parties or lay out the component parts, adding a little bowl of creme fraiche, sour cream or smetana, on the table for an appetizer.

3 eggs
1/2 cup full fat milk
2 spring onions/scallions finely sliced
2 tablespoons olive oil
3/4 cup smash/potato flakes
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon lemon juice
About 10 ounces (300g) smoked salmon
Small bunch dill or packet

Steps:

  • In a batter jug, whisk the eggs, milk, finely sliced spring onions/scallions and olive oil together.
  • Stir in the smash/potato flakes, flour and baking powder and then finally the lemon juice.
  • Heat a flat griddle, and drop tablespoon sized dollops of the mixture onto the hot griddle.
  • Cook for about 30 seconds a side or until golden brown and firm enough at the sides to flip.
  • Once you have made the pancakes, and they've cooled a little, tear off tiny strips of smoked salmon and arrange the small slices on each pancake.
  • Decorate each salmon topped pancake with a tiny feather of dill.

¼ cup all-purpose flour, or more as needed
1 tablespoon olive oil, or as needed

Steps:

  • Stir egg, melted butter, ginger, salt, turmeric, and coriander together in a small bowl.
  • Flake salmon into a wide bowl. Mix in sweet potato. Stir in egg mixture. Add flour, 1 tablespoon at a time, stirring after each addition. Add 1 extra tablespoon flour if mixture is still too wet. Form into 6 patties.
  • Heat oil in a large skillet over medium heat. Fry patties in the hot skillet until crispy and golden brown, about 3 minutes per side.

1 large sweet potato, peeled and cut into small chunks
Salt
3 (6-ounce) pieces salmon fillet
1 cup white wine
1 bay leaf
Freshly ground black pepper
1 tablespoon seafood seasoning, a palmful (recommended: Old Bay)
1 1/2 cups cracker crumbs (recommended: Saltines)
1 egg, lightly beaten
1 tablespoon finely chopped thyme leaves
1 tablespoon hot sauce
2 scallions, finely chopped
3 to 4 tablespoons finely chopped fresh dill
3 tablespoons extra-virgin olive oil
1 small red onion, thinly sliced
2 small ribs celery, finely chopped
2 cloves garlic, chopped
1 pint grape or cherry tomatoes, halved or quartered
2 tablespoons red wine vinegar
1 rounded teaspoon sugar
4 cups arugula or baby arugula leaves

Steps:

  • Put the potatoes in a small pot, cover with water, and bring to a boil over high heat. Salt the water and cook until tender, 10 to 12 minutes. Drain, then return the potatoes to the pot and mash.
  • Meanwhile, put the salmon fillets in a skillet with the wine, bay leaf, and enough water to come up to the top of the fillets, but do not cover. Bring to a boil over medium heat, then reduce heat to a simmer and poach until opaque about 8 to 10 minutes. Remove the skin and transfer the salmon to a bowl. Flake the fish with a fork and season with salt and pepper, to taste. Add the mashed sweet potatoes to the bowl along with the seafood seasoning, half of the cracker crumbs, the egg, thyme, hot sauce, scallions, and dill. Mix to combine. The fish cake mixture needs to be just firm enough to mold into cakes. If its too wet, add a few more crumbs.
  • Heat 2 skillets, side by side, 1 with 2 tablespoons extra-virgin olive oil (2 turns of the pan) over medium heat, the other with 1 tablespoon extra-virgin olive oil (a turn of the pan) over medium-high heat. Form the salmon mixture into 4 (4-inch) patties, coat in the remaining crumbs, and then add them to the first pan. Cook the fish cakes until light golden, about 2 to 3 minutes on each side. Add the red onions, celery, and garlic to the second pan and cook 3 to 4 minutes. Add the tomatoes, season with salt and pepper, to taste, and cook 2 minutes more. Stir the vinegar into the sauce, then sprinkle the sugar over top and toss to coat the tomatoes. And arugula.
  • Arrange the fish cakes on individual serving plates alongside the arugula. Top with the agrodolce relish and serve.

  • Place sweet potato and potato into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and transfer to a large bowl to cool.
  • Place salmon into a skillet and pour in milk. Bring to a simmer, cover skillet, and cook until salmon flakes easily with a fork, about 5 minutes. Remove salmon from the skillet; reserve milk in a bowl.
  • Heat olive oil in the skillet over medium heat; cook and stir celery, carrot, nutmeg, red pepper flakes, salt, and pepper in the hot oil until celery and carrot are softened, about 5 minutes. Add shallots, parsley, cilantro, and garlic; cook and stir until fragrant, 3 to 5 minutes.
  • Pour wheat germ, egg, and reserved milk over sweet potato and potato; mash until evenly combined.
  • Flake salmon with a fork; mix flaked salmon and vegetable mixture into the mashed potato mixture using your hands.
  • Heat vegetable oil large saucepan or skillet over medium-high heat.
  • Pour bread crumbs into a large bowl.
  • Form salmon mixture into patties using your hands; press each patty into bread crumbs, coating both sides.

1kg baking potatoes
100g butter, melted
100g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
280g tub full-fat cream cheese
100ml double cream
zest and juice 1 lemon
200g pack smoked salmon slices, cut into strips
small bunch dill, fronds picked
50g caperberries, halved

Steps:

  • Heat oven to 220C/200C fan/gas 7. Prick the potatoes all over with a fork, then bake whole for 1 hr 20 mins or until crisp on the outside and fluffy inside. Set aside on a wire rack to cool. Reduce oven to 180C/160C fan/gas 4.
  • Once the potatoes are cool enough to handle, cut in half and scoop out the flesh into a large bowl, discarding the skins. Mash the potato really well, then mix in two-thirds of the melted butter, all the flour and the bicarbonate of soda. Season well.
  • Line a large (approx 35 x 25cm) baking tray with a piece of baking parchment and brush with half the remaining butter. Roll out the potato dough on a floured surface, then lay it on the lined baking tray - don't worry if it breaks, just push the pieces back together once on the tray. Brush the dough with the remaining melted butter and bake for 45 mins or until golden brown on the outside.
  • Remove from the oven and allow to cool on the tray. Meanwhile, put the cream cheese in a large bowl and whisk until smooth and light. Stir in the double cream and lemon juice, and season well with black pepper. Spread the cream cheese mixture all over the surface of the cooled potato cake. Use a large, sharp knife to cut the potato cake into 30 squares, then top with the strips of salmon, the dill fronds, caperberries and lemon zest. Transfer to a serving platter and serve.

3 medium potatoes, peeled and shredded
2 eggs
salt and pepper
1 teaspoon italian seasoning
1/2 lb cooked flaked salmon
3 green onions, chopped
2 tablespoons capers, drained
1 red bell pepper, seeded and chopped
3/4 cup chopped canned banana pepper
3/4 cup sliced fresh mushrooms
3/4 cup dry breadcrumbs
1 cup oil (for frying, or as needed)

Steps:

  • Squeeze as much liquid from the potatoes as you can, and place in a large bowl. Beat the eggs with salt, pepper, and Italian seasoning, and mix with the potatoes. Mix in salmon, green onions, capers, red bell pepper, banana peppers, mushrooms and bread crumbs. Form into about 12 patties about 3/4 inch thick.
  • Heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Fry the patties for about 3 minutes per side, or until golden brown.
  • Drain on paper towels quickly before serving.
  • Try to fry all the patties at one time, otherwise the mixture becomes stiff.

CRISP POTATO CAKES SMOKED SALMON AND CHIVES

6 large baked potatoes
2 bunches of chives
2 tablespoons of sour cream
2 tablespoons of olive oil
12 slices of smoked salmon
13 eggs
2 ounces of milk
2 ounces of butter
Olive oil for sauteeing

Steps:

  • Once potatoes have cooled, remove skin. With a box grater, grate potatoes into a mixing bowl. Add olive oil, sour cream and one bunch of chives minced. Finish with one egg, mix very well. Season with salt and pepper. Form by hand 4 large potato cakes. In a medium saute pan, heat olive oil approximately 2 ounces at a time to a slight smoke. Fry 2 potato cakes at a time. Lower heat and allow to crisp approximately 3 minutes per side. Once both sides are crisp and all 4 cakes are made, drain on a paper towel and reserve in a warm place. Crack twelve eggs and wisk with a fork. Add 2 ounces milk. Season with salt and pepper. In the same teflon pan add 2 ounces of butter and over medium heat slowly stir in cracked eggs and begin to scramble.
  • Once eggs are finished fold in a julienne of smoked salmon and a handful of minced chives. For presentation place one warm potato cake in the middle of each plate. Then carefully spoon scrambled egg mixture on top and garnish with chives

3 medium potatoes , quartered
100g flour , plus extra for dusting
½ tsp baking powder
150g pack full-fat soft cheese
200g pack smoked salmon
half a small red onion , thinly sliced
1 tbsp caper , drained
zest 1 lemon

Steps:

  • Make the potato cakes. Bring a large pan of salted water to the boil. Tip in the potatoes and cook for 10-15 mins until soft. Drain well, then return to the hot pan for 1-2 mins to allow any excess moisture to evaporate. Pass the potatoes through a ricer or sieve to get a really fine mash.
  • Weigh out 250g of the mash and place in a bowl (you shouldn't have much left over). Tip in the flour, baking powder and 1 tsp salt. Mix together until the mixture forms a soft dough. Shape into a ball, then tip out onto a lightly floured surface. Roll out into a circle about 20cm across and 1cm thick. Cut into 8 triangular wedges and generously dust all over with flour. The potato cakes can be made up to this point 1 day ahead and chilled or frozen for up to 1 month.
  • Set a large, non-stick frying pan over a medium heat (no need to add oil). When hot, dry-fry the cakes for about 3-5 mins on each side until golden and cooked through. You may have to do this in batches. Stir a little water into the soft cheese until it is spoonable. Place the potato cakes on plates, top with dollops of soft cheese and a smoked salmon slice, then scatter over the red onion, capers and lemon zest to finish.

SALMON CAKES:
2 can(s) salmon, about 20 oz. each, drained, skin and bones removed
1 c mashed sweet potato,drained well
1 Tbsp old bay seafood seasoning
1 1/2 c buttery cracker crumbs
1 large egg, beaten
1 tsp crushed dried thyme leaves or 1 tablespoon finely chopped fresh
1 Tbsp hot sauce or to taste
1 bunch finely chopped green onion, white part only
3 Tbsp fresh finely chopped dill or 1 teaspoon dill weed,crushed

GARNISH:
1 small red onion, thinly sliced

  • 1. Salmon Cakes: Flake the salmon with a fork and season with a little pepper to taste. Add the mashed sweet potato, bay seasoning, 1/2 the cracker crumbs, egg,thyme, hot sauce, if using(I did add a little),onions and dill. Oh , don't forget the small splash of wine if using. Mix to combine. The mixture needs to be just firm enough to mold into cakes or patties. If its too wet, add a few more crumbs.
  • 2. Heat 2 skillets, side by side, 1 with 2 Tablespoons olive oil over medium heat, the other with 1 Tablespoon olive oil over medium-high heat. --- Form the Salmon mixture into 4- four inch patties, coat in the remaining crumbs, gently press in so they stick and add these patties to the pan with 2 Tablespoons of oil. Cook until light golden , about 3 minutes on each side.
  • 3. Garnish: In the second pan- while the patties are cooking add the red onions, celery and garlic and cook 3 minutes. Add the tomatoes and season with salt and pepper to taste and cook 2 minutes more. Stir the vinegar into the sauce, then sprinkle the sugar over top and toss to coat the tomatoes and the spinach.
  • 4. Arrange the salmon cakes on serving plates with the spinach on the side. Serve with mango salsa or tartar sauce if desired.

1 onion, finely chopped

1 1/2 cups homemade or prepared mayonnaise
8 oven roasted plum tomatoes

Steps:

  • Season fillets with salt, pepper and cayenne.
  • In a baking dish, place seasoned fish with wine, onions and garlic and bake in a preheated 350 degree oven for about 7 minutes or until fish is cooked through.

  • 1. In a medium bowl, add the potatoes, stir in the eggs, dill and horseradish. Mix well to combine.

1 lb potato, peeled
300 g smoked salmon, finely chopped
1 tablespoon parsley, finely chopped
4 green onions, finely chopped
1 large egg, lightly beaten
150 g fresh breadcrumbs, toasted
50 g sesame seeds
6 tablespoons olive oil
1 large bulb of garlic, roasted
2 large egg yolks
1 large lemon, juice of
150 ml olive oil
2 teaspoons fresh dill, finely chopped

Steps:

  • To make the garlic cream squeeze the garlic out of each clove into a food processor.
  • Add the eggs and lemon juice.
  • Add the olive oil gradually in a thin stream with the motor running until the mixture thickens.
  • Season to taste with slat and pepper, add dill and refrigerate until needed.
  • Cook potatoes in boiling water until almost done, cool and then grate them into a large bowl.
  • Mix the salmon, parsley, egg and onions into the potato, season with salt and pepper.
  • Shape into 12 small cakes; mix the breadcrumbs with the sesame seeds and coat the cakes evenly with them.
  • Sauté the cakes on medium heat in a little oil until browned and cooked through, about 5 minutes each side. Serve hot with garlic cream.

Salmon & Sweet Potato Cakes with Agrodolce Relish & Arugula image

1 large sweet potato, peeled and cut into small chunks
Salt
3 (6-ounce) salmon fillets, skin on
1 cup white wine
1 bay leaf
Black pepper
1 tablespoon Old Bay seafood seasoning, a palmful
1 1/2 cups saltine cracker crumbs
1 egg, lightly beaten
1 tablespoon fresh thyme leaves, finely chopped
1 tablespoon hot sauce
2 scallions, finely chopped
3 to 4 tablespoons finely chopped fresh dill
3 tablespoons EVOO (extra-virgin olive oil)
1 small red onion, thinly sliced
2 small celery stalks, finely chopped
2 garlic cloves, chopped
1 pint grape or cherry tomatoes, halved or quartered
2 tablespoons red wine vinegar
1 rounded teaspoon sugar
4 cups arugula or baby arugula leaves

Steps:

  • Place the potato in a small pot, cover with water, and bring to a boil. Salt the water and cook the potato until tender, 10 to 12 minutes. Drain, return to the pot, and mash.
  • Meanwhile, place the fillets in a skillet with the wine, bay leaf, and enough water to come up to the top of the fillets. Do not cover, bring to a boil, and reduce the heat to a simmer and poach for 8 to 10 minutes, until the fish is opaque. Remove the skin and transfer the salmon to a bowl. Flake the fish and season with salt and pepper. Add the mashed sweet potatoes to the bowl along with the Old Bay seasoning, half the cracker crumbs, the egg, thyme, hot sauce, scallions, and dill. Mix to combine. The fish cake mixture needs to be just firm enough to mold cakes. If it's too wet, add a few more cracker crumbs.
  • Heat two skillets side by side, one with 2 tablespoons of the EVOO over medium heat and the other with 1 tablespoon of EVOO over medium-high heat. Form four 4-inch patties and turn the salmon cakes in the remaining cracker crumbs, then add them to the first pan. Cook the fish cakes for 2 to 3 minutes on each side to light golden. Add the red onions, celery, and garlic to the second pan and cook for 3 to 4 minutes. Then add the tomatoes, season with salt and pepper, and cook for 2 minutes more. Stir the vinegar into the relish, then sprinkle the sugar over top and stir again.
  • Serve the fish cakes alongside the arugula with the agrodolce relish on top.

Pan-fried salmon potato cakes
What you need
1 tablespoon coriander seeds
1 egg
1 pound fresh or tinned wild salmon
1/2 pound boiled and mashed russet potato or a little more
1/4 pound boiled and mashed yam
3 tablespoons all-purpose flour
1/3 cup finely chopped onions
1 tablespoon finely chopped jalapeno peppers
1/4 to 1/2 cup chopped cilantro
11/2 tablespoons garam masala or 1 tablespoon ground cumin
1/2 teaspoon ajwain seeds
1 tablespoon salt
1/2 cup canola oil for pan frying

Steps:

  • What you do Lightly pound coriander seeds in a mortar or on a plate with a heavy spoon. (You just want to break the seeds in half.) Set aside. Beat the egg in a small bowl. If you are using fresh salmon, bring a large pot of water to a boil. Immerse salmon and cook for five minutes. Remove from the heat, drain and allow the salmon to cool. Peel off the skin. Thoroughly combine all ingredients except the oil in a large mixing bowl. With your hands, form round cakes about two inches in diameter and one inch thick. Set them on a baking tray. Heat one tablespoon of the oil in a shallow nonstick frying pan on high heat. Once the oil is hot, reduce the heat to medium so the cakes don't stick to the bottom of the pan or burn. Place two cakes in the pan and cook for two to three minutes. Turn the cakes over and cook for another two to three minutes. The cakes should be brown and crispy on both sides. Repeat, using one tablespoon of the oil for each two cakes, until all the cakes are cooked.

1/2 cup quick-cooking oatmeal

1 whole wheat flour, for dredging
oil (for frying)
1 cup whipping cream
2 -3 tablespoons horseradish

Steps:

  • In small pan, cook bacon until lightly browned but not crisp, approx 3 minute
  • Coarsely grate potatoes into large bowl.
  • Add the bacon, cheese, oats, salmon, horseradish, and salt & pepper.
  • Add egg and stir to bind together.
  • Form into 8 small potato cakes and dust with flour.
  • The recipe does not call for them to be pan fried, however my sister did.
  • About 5-10 min each side, then served with sauce.

I didn't want to wait for potatoes to boil! It turned out great and definitely became the overall favorite. I enjoy a simple garlic mayonnaise to accompany the cakes but you can pretty much use whatever you desire.

1 teaspoon Italian seasoning
½ pound cooked flaked salmon
3 green onions, chopped
2 tablespoons capers, drained

¾ cup chopped canned banana peppers
¾ cup sliced fresh mushrooms
¾ cup dry bread crumbs
1 cup oil for frying, or as needed

Steps:

  • Squeeze as much liquid from the potatoes as you can, and place in a large bowl. Beat the eggs with salt, pepper, and Italian seasoning, and mix with the potatoes. Mix in salmon, green onions, capers, red bell pepper, banana peppers, mushrooms and bread crumbs. Form into about 12 patties about 3/4 inch thick.
  • Heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Fry the patties for about 3 minutes per side, or until golden brown. Drain on paper towels quickly before serving. Try to fry all the patties at one time, otherwise the mixture becomes stiff.

1 213-gram can of salmon, skin and bones removed. Red salmon preferred.
1 1/2 cups boiled potatoes, mashed.
1 egg, beaten
1/4 cup flour
salt & pepper to taste
2 tablespoons parsley, chopped
2 tablespoons fresh dill (1 to 2 teaspoons dried)
1 tablepoon hot sauce (optional)
1/4 cup onions, minced.
1 tablespoon lemon juice
3/4 cup panko breadcrumbs
2 tablespoons olive oil.

Steps:

  • Heat 1 teaspoon of olive oil in a small frying pan. Saute onions over medium heat until softened, about 5 minutes. Mix first 10 ingredients, including onions. Form into six cakes. Coat with panko breadcrumbs Heat olive oil in a large skillet over medium-high heat. Add salmon cakes. Cook until browned, about four minutes a side. *Can also be baked in a preheated 400-degree oven. Coat cookie sheet with cooking spray or olive oil. Bake for 15 minutes, turning once.
