BAKED SALMON PATTIES OR MUFFINS



Baked Salmon Patties or Muffins image

Lower fat version of salmon patties that we like. The muffin tin method is one I saw in a Taste of Home recipe.

Number Of Ingredients 13

1 (14 3/4 ounce) can red salmon
1/4 cup cornmeal (1 oz)
1/4 cup flour (1 oz)
2 eggs
1/2 medium onion, finely diced
1/4 cup panko breadcrumbs (as needed for consistency)
3 tablespoons fat-free mayonnaise
1/2 lemon (Juice of )
1/2 teaspoon Old Bay Seasoning (or salt and pepper to taste)
1/3 cup mayonnaise
1 teaspoon brown mustard
1 teaspoon ketchup
1/8 teaspoon Worcestershire sauce

Steps:

  • Drain salmon and remove skin and bones.
  • Mix all salmon pattie ingredients except for panko crumbs and add those to get a moldable texture.
  • Spray a nonstick muffin pan with vegetable spray - about 7 out of 12 muffin cups.
  • Add mixture to fill each cup, just short of full and top with panko crumbs.
  • Spray tops with vegetable spray and bake in a 375F oven for about 20 minutes or until 160F internally.
  • Meanwhile, mix the sauce ingredients until smooth and chill.

SALMON AND CHIVE MUFFINS



Salmon and Chive Muffins image

I am posting this recipe in honour of my Recipezaar friend Latchy who sadly passed away in 2006. This was one of two recipes she gave me that she hadn't got round to posting. I have made these and would certainly have given her 5* for them had she posted the recipe. I hope you enjoy them too. :) I used a can of pink salmon and made some into normal size muffins as well as some mini size muffins.

2 cups self raising flour
80 g butter (melted)
1 egg (lightly beaten)
1 cup milk
1/2 cup chopped fresh chives
1 (210 g) canned pink salmon or 1 (210 g) red salmon

Steps:

  • Pre heat oven to 200'C.
  • Grease 12 one third cup muffin holes.
  • Sift flour into bowl.
  • Combine melted butter,egg, milk and chives in a jug.
  • Mix well and pour into flour.
  • Use a large metal spoon to stir gently until almost combined.
  • Fold in salmon.
  • Spoon into muffin holes until three quarters filled.
  • Bake for 18 - 20 minutes or until a skewer inserted into the centre comes out clean.
  • These are good sliced in half and spread with cream cheese or just butter if preferred.

1 tsp finely minced garlic
1 package sliced smoked salmon
2 english muffins, split and toasted
Sliced black olives, capers

Steps:

  • Add the garlic to the brie and mix well. Spread toasted muffin halves with the brie mix. Top with a generous slice of smoked salmon and sprinkle with olive slices and capers.

SPINACH & SMOKED SALMON EGG MUFFINS

1 tbsp white wine vinegar
4 of the freshest eggs you can get
300g spinach
25g butter , for frying and spreading
2 muffins , split
4 long slices good-quality smoked salmon
2 egg yolks
140g butter , melted
juice ½ lemon
pinch cayenne pepper

Steps:

  • To make the hollandaise, sit a large bowl over a pan of hot water and whisk the egg yolks with 2 tbsp hot water. Gradually add the melted butter (without adding the milky liquid at the bottom) until it has all been incorporated. Whisk in the lemon juice and season with the cayenne pepper and salt to taste, then set aside.
  • Heat a shallow pan of water with the vinegar but no salt until gently boiling, then poach the eggs for 2 mins. Remove with a slotted spoon and cool in cold water.
  • Fry the spinach in a wok with a knob of butter until wilted, then drain and season.
  • To serve, heat the grill to high. Lay the muffins on a flat roasting tray, cut-side up, then toast until brown. Butter the muffins lightly, then top each with a ruffle of smoked salmon. Divide the spinach between the muffins, leaving a slight dip in the middle to sit the eggs in. Spoon a quarter of the sauce over each egg, then return the tray under the grill to brown for a min. Serve immediately.

Toddler recipe: Salmon & sweet potato muffins image

Get your toddler eating fish with these salmon and sweet potato muffins that are rich in omega-3. They're easy to hold, so ideal for baby-led weaning

oil, for greasing
1 lightly smoked salmon fillet
1 small sweet potato, peeled and cut into 1cm cubes (about 125g)
4 eggs
a few chives, snipped

Steps:

  • Heat the oven to 200C/180 fan/gas 6, grease a baking tray and six holes of a muffin tin. Put the salmon on the tray and cook for 10 mins or until cooked through. Allow to cool enough to handle, then flake the fish, removing any bones and skin.
  • Meanwhile, put the sweet potato in a steamer over boiling water and steam for 8-10 mins or until tender. Drain.
  • Beat the eggs with a little black pepper and the chives. Stir in the salmon and potato and spoon the mixture into the muffin tin. Bake for 10-12 minutes until the eggs are set. Leave for a minute or two and then use a knife to carefully remove the muffins.

I have yet to try this recipe from the *Best Seafood Recipes* cookbook of the Australian Women's Weekly cookbook series, but it just sounded so good to me that I was impatient to share it here. I hope you will give it a try & *enjoy* the outcome.

4 ounces cream cheese
1 tablespoon cream
1 teaspoon lemon juice
2 tablespoons fresh chives (chopped)
7 ounces canned salmon (drained & cleaned of any debris)
4 1/2 ounces canned creamed corn
1/4 cup fresh parsley (chopped)
1/2 red bell pepper (sml size & finely chopped)
2 cups self-raising flour
3 tablespoons butter
1/2 cup milk
1/4 cup buttermilk
1 egg (lightly beaten)
1/2 cup gouda cheese (grated & may sub cheddar)

Steps:

  • For Cheese Spread: Combine ingredients in a sml bowl & refrigerate for use w/muffins.
  • For Muffins: Preheat oven to 375°F & lightly grease 12-ct muffin tin (or spray w/PAM).
  • Combine flaked salmon, corn, parsley & red bell pepper in a sml bowl & set aside.
  • Sift flour into a med-sized bowl & rub in butter.
  • Add milk, buttermilk + egg & stir till combined. Add salmon mixture & stir till combined.
  • Spoon mixture equally into 12-ct muffin tim, sprinkle w/cheese, bake for about 30 min & serve w/cheese spread.
  • NOTE: The recipe noted that "Muffins are best eaten hot from the oven, but can frozen for up to 2 months".

6 large eggs
salt & freshly ground black pepper
4 English muffins, halved
8 slices smoked salmon
140 ml sour cream
1 small bunch fresh chives, finely chopped
1 lemon, quartered

Steps:

  • Crack the eggs into a bowl. Whisk lightly and season with salt and pepper.
  • Put your muffins in the toaster, ready for action.
  • Melt half the butter in a small saucepan over a medium heat until bubbling, then tip in the eggs.
  • Stir eggs continuously with a wooden spoon, getting right into the edges. Cook until the runny egg starts to thicken.
  • Turn the heat off when the eggs are still slightly undercooked - they will keep on cooking in the warm pan while you're toasting and buttering your muffins.
  • Split muffins in half and place in your toaster. Toast to your preferred doneness.
  • Place the buttered muffin halves onto four individual plates and cover each one with a spoonful of scrambled egg.
  • Drape a slice of salmon over each muffin half, dollop some sour cream on top and sprinkle with chopped chives and a twist of black pepper.

3 tablespoons butter or margarine
1 medium onion, finely chopped (1/2 cup)
1 package (4 1/2 oz) smoked salmon, flaked or finely chopped
1 1/2 cups Original Bisquick™ mix
1 1/4 cups shredded Italian cheese blend (5 oz)
2 tablespoons chopped fresh dill weed
3/4 teaspoon grated lemon peel
1/2 cup milk
2 tablespoons vegetable oil
1 egg

Steps:

  • Heat oven to 425°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 8-inch skillet, melt butter over medium-high heat. Cook onion in butter 3 to 5 minutes, stirring frequently, until tender. Stir in salmon.
  • In large bowl, stir Bisquick mix, 3/4 cup of the cheese, the dill and lemon peel. In small bowl, stir milk, oil and egg with fork or whisk until blended. Make well in center of Bisquick mixture; stir in egg mixture just until dry ingredients are moistened. Stir in onion and salmon. Divide batter evenly among muffin cups, filling each two-thirds full. Sprinkle evenly with remaining 1/2 cup cheese.
  • Bake 18 to 20 minutes or until golden. Cool 2 to 3 minutes; remove from pan. Serve warm.

TUNA OR SALMON MUFFINS
Three 6 ounce cans tuna or salmon, well-drained
3 eggs
1 stalk celery, chopped fine
1/2 medium green pepper, chopped fine, 2 1/4 ounces
3 tablespoons onion, chopped fine, 2 ounces
1/4 teaspoon Old Bay seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
6 ounces cheddar cheese, shredded

Steps:

  • Mix all of the ingredients and spoon into 12 well-greased muffin cups. Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges. Makes 12 servings Can be frozen
