Steps:
- Season salmon with salt and black pepper.
- Heat olive oil in a nonstick skillet over medium-low heat. Place salmon skin-side up in the skillet.
- Cook until golden brown, about 4 minutes. Turn with a spatula and cook until salmon feels firm to the touch and skin is crisp, about 3 minutes more.

SOUTHERN FRIED SALMON PATTIES
Salmon patties are quick and easy. I got this recipe from my son's babysitter many years ago. My son is now 20 and we still eat these at least a few times a month. These are very moist when done.

Steps:
- Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.
- Add onion, corn meal, flour, mayonnaise, and egg. Stir until well blended.
- Shape the mixture into patties about the size of an average burger or less.
- Cook in oil in skillet over medium heat until browned on each side. Turn once while frying.
- Note: The mayonnaise helps the patties hold their shape and keeps them from being too dry.

FRIED SALMON PATTIES
We eat this dish for dinner or breakfast! For breakfast try them with grits. For dinner try serving with sweet peas and rice.

Steps:
- Add salmon to a medium bowl (do not drain).
- Remove bones; add the flour, eggs, onion and salt and pepper.
- Beat with an electric mixer until well incorporated.
- In a large skillet, heat enough oil to cover the bottom of the pan.
- With a medium spoon, add salmon spreading them into round patties (you can make large or small).
- Let them cook on one side 10 minutes, then flip cook 10 minutes more.
- ENJOY!
PAN-FRIED CAJUN SALMON
Cajun seasoning adds a deliciously spicy flavour to salmon fillets accompained by a refreshing salsa!

Steps:
- Brush the salmon fillets with lemon juice and pan fry for 4-5 minutes, skin side up. Turn, brush again with lemon juice, and sprinkle with the Cajun Seasoning.
- Fry for a further 4-5 minutes, until the salmon is cooked through.
- Meanwhile, mix the pepper, onion, cucumber and tomatoes in a bowl. Stir in the olive oil, vinegar and cilantro and season to taste.
- Serve the salmon and the salsa with your choice of green vegetables.

FRIED SALMON PATTIES

- Dump the ingredients of the two cans of salmon onto a large plate then pick out all the bones (it is nasty, but necessary).
- In a large bowl add all ingredients except the oil and mix very well. Make sure it is fairly smooth (you want it less chunky than chicken salad, almost a paste).
- Using a large spoon or just your hands roll large lumps into firm balls. As for the size of the balls, that is completely up to you. I make mine a little larger than a golf ball.
- Flatten the balls till they are about the thickness of a pancake.
- Pour oil into a skillet over medium heat. Add the patties, making sure they are not touching in the skillet. DO NOT turn them too often, they will crumble. I cook them about 5 minutes then carefully flip them over and cook another 5 to 7 minute on the other side.
- My family likes to eat them plain with ketchup or hot sauce. Sometimes I serve them on sesame seed buns with a slice of tomato and a leaf of lettice.
