LEMON DILL SALMON PASTA

This lemon dill salmon pasta recipe makes an easy and elegant weeknight dinner. It's perfect for date night!

1/2 pound fresh salmon
Salt & pepper (to taste)
Flour (for dredging)
1 tablespoon olive oil
1 tablespoon butter
1/4 cup chicken broth (or dry white wine)
1 teaspoon lemon juice
2 cloves garlic (minced)
1/2 cup heavy/whipping cream
1 tablespoon fresh dill (chopped)
Optional garnish: fresh parsley, parmesan cheese
4 ounces uncooked pasta

Steps:

  • Boil a salted pot of water for your pasta. Cook it al dente according to package directions. I suggest starting the sauce once the water's boiling.
  • Season the salmon with salt & pepper and coat it in the flour.
  • Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the salmon and cook it for 2 minutes/side, then take the fish out of the pan and set it aside.
  • Add the chicken broth, lemon juice, and garlic to the pan. Let it bubble for about 30 seconds. Reduce the heat to medium.
  • Add the cream, dill, and salmon back into the pan. Break the fish up with your spoon into bite-size pieces. Cook it for a few more minutes until it's cooked through and the sauce has reduced and thickened a bit.
  • Drain the pasta and add it to the skillet. Toss it & serve immediately with parsley and parmesan cheese if desired.

1 pound dried fettuccine
3/4 pound wild Alaskan salmon (pin bones removed)
salt and pepper
3 teaspoons dried dill (divided)
1 tablespoon plus 1 teaspoon olive oil
2 tablespoons unsalted butter
2 cloves garlic (minced)
1/4 cup white wine
1/2 cup heavy cream
2 ounces cream cheese (softened)
1/2 cup reserved pasta water

Steps:

  • Preheat oven to 400 degrees.
  • Bring a large pot of water to boil and cook pasta according to package directions. Before draining, reserve 1/2 cup of pasta water. Drain pasta.
  • While pasta is cooking, line a baking sheet with aluminum foil. Place salmon, skin side down on prepared baking sheet. Sprinkle liberally with salt and pepper. Sprinkle with 1 teaspoon dill and drizzle with 1 tablespoon olive oil. Bake in preheated oven for 15 - 20 minutes or until salmon flakes easily.
  • Remove salmon from oven and flake. Keep an eye out for bones and discard skin.
  • In a large skillet, heat butter and remaining teaspoon of olive oil over medium heat until butter melts. Add in garlic and remaining dill. Cook just until garlic is fragrant, about 30 seconds. Add in white wine. Cook for 1 minute. Whisk in heavy cream, don't allow to boil. Add in cream cheese and cook, stirring frequently, until cream cheese melts, about 2 minutes. Add in 1/4 cup of reserved pasta water. If pasta sauce still seems too thick add in remaining water.
  • Add flaked salmon to the pan and stir to coat. Add pasta to the pan and toss to coat. Serve immediately.

2 tablespoon olive oil
250 g (1/2 pound) salmon, cut into 1-inch pieces
15 g (1 tbsp) butter
1 shallot, finely chopped
2 garlic cloves, minced
One lemon, juice of
1/4 cup dry white wine
200 ml (1 cup) double cream
1 tablespoon fresh dill, chopped
Salt, pepper

Steps:

  • 1. Boil the pasta according to the instructions on the package until it's al dente. When it's done, drain it, but not before reserving a cup of pasta water. 2. In a large pan, add the olive oil and shallow fry the salmon on medium heat until it's done to your liking. Remove it from the pan and set aside. 3. Add the butter to the same pan (don't remove the remaining olive oil) and cook the shallot for a couple of minutes, then add the minced garlic, lemon juice, and white wine and cook for another couple of minutes. 4. Stir in the double cream, cook for a minute or two until it thickens and tip the salmon back in. 5. Add the dill, reserving some for serving, and season to taste. Serve immediately, with extra freshly ground black pepper on top, if you like.

½ cup sour cream
¼ cup mayonnaise
3 tablespoons grated Parmesan cheese

The dish comes from Ms. Deravian's stepmother, who likes to combine her native Japanese ingredients with Iranian ones like pomegranate molasses. Get a quick pot of rice started as the salmon marinates and you can have dinner prepped in less than 20 minutes. Serve with sheveed polo (Iranian dill rice) and make sure to drizzle plenty of the pan juices over the salmon and rice.

1 1/2 pounds skin-on, center-cut salmon fillet
1 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
1/4 cup fresh lime juice or Seville orange juice, plus additional wedges, for serving
2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons maple syrup
1 tablespoon dried dill or 3 tablespoons chopped fresh dill
