Smoked Salmon Appetizer with Cucumber and Lemon Dill Cream Cheese image

These little cucumber and smoked salmon appetizer bites are as delicious as they are pretty. They make a perfect light start to a dinner and are a hit at any party. And don't worry, assembling them is much easier (and faster) than it looks.

¾ cup cream cheese (do not use light cream cheese)
2 tablespoons Greek yogurt
Zest from 1 lemon
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 small garlic clove (grated on a Microplane or very finely minced)
A pinch of sea salt
3 mini cucumbers (sliced)
5 ounces cold smoked salmon (lox)
Dill and fresh cracked pepper (to garnish)

Steps:

  • Add all of the lemon dill cream cheese ingredients to a medium-sized bowl. Use electric beaters to whip together. Transfer the cream cheese to a piping bag fitted with a star attachment, or use a small resealable plastic bag and cut off the tip.
  • Lay the cucumber slices out on a serving tray. Roll small strips of the smoked salmon and place them on top of the cucumber slices.
  • Pipe the cream cheese on top of the salmon and garnish with a little fresh dill and fresh cracked

1 can (15 oounces) salmon, drained, bones and skin removed or 2 cups flaked cooked salmon
1 package (8 ounces) cream cheese, softened
4 tablespoons salsa
2 tablespoons chopped fresh parsley
1 teaspoon dried cilantro
1/4 teaspoon ground cumin, optional
8 flour tortillas (8 inches)

Steps:

  • Drain salmon; remove any bones. In a small bowl, combine salmon, cream cheese, salsa, parsley and cilantro. Add cumin if desired. Spread about 2 tablespoons of the salmon mixture over each tortilla., Roll each tortilla up tightly and wrap individually. Refrigerate for 2-3 hours. Slice each tortilla into bite-sized pieces.

6 ounces cream cheese, softened
3 tablespoons mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon curry powder
1/4 teaspoon dried basil
1/8 teaspoon pepper
1 can (7-1/2 ounces) salmon, drained, bones and skin removed
2 green onions, thinly sliced
Crackers and chopped vegetables

Steps:

  • In a bowl, combine the cream cheese, mayonnaise and lemon juice. Add the salt, curry powder, basil and pepper; mix well. Gently stir in salmon and onions. Cover and refrigerate for at least 1 hour. Serve with crackers and vegetables.

1 (12-inch) seedless cucumber (usually plastic-wrapped)
4 ounces cream cheese, softened (1/2 cup)
1/4 cup finely chopped fresh chives
2 tablespoons drained bottled horseradish
1/4 teaspoon salt
1 pound thinly sliced smoked salmon

Steps:

  • Quarter cucumber lengthwise, cutting off and discarding rounded ends. Stir together cream cheese, chives, horseradish, salt, and pepper to taste until combined well.
  • Pat cucumber dry. Arrange enough salmon to completely wrap 1 cucumber quarter in 1 layer on a sheet of plastic wrap, then spread with a thin layer of cream cheese mixture. Wrap coated salmon around cucumber quarter to cover completely, pressing gently to help it adhere. Repeat with remaining cucumber quarters. (You may have leftover salmon.) Cut rolls crosswise into 3/4-inch pieces.

In the old days, I would go out to the buffets and eat my weight in smoked salmon! I especially liked it served traditionally, with capers, cream cheese and onions. The only problem was that the capers and onions always fell off the fork when I tried to eat it all together. This recipe combines all my favorite ingredients in an easy-to-make and easy-to-serve party appetizer!

8 ounces cream cheese, softened
1 tablespoon fresh lemon juice
2 tablespoons diced red onion
1 tablespoon chopped fresh basil leaves
8 ounces sliced smoked salmon (we recommend Nova, but you make use the saltier lox)
2 tablespoons small capers, drained
1 seedless cucumber, with peel, sliced into rounds the size of crackers

Steps:

  • Combine the cream cheese, lemon juice, red onion, and basil in a bowl until completely blended.
  • On a piece of waxed paper, arrange the smoked salmon slices in a rectangle about 3 inches wide and 12 inches long, slightly overlapping each piece. (If the salmon slices are cut irregularly, simply piece them together like a puzzle.)
  • Spread a thin layer of the cream cheese mixture on the salmon, sprinkle with the capers, and roll up like a jellyroll.
  • Refrigerate for 1 hour to firm, then cut into 1/2-inch slices. Place each pinwheel atop a cucumber round to serve.

Plan ahead the salmon mixture needs to chill for 3 hours to blend and firm up. You can make the roll up to 24 hours in advance, or freeze the logs, then thaw in the refrigerator until ready to serve. This is the most delicious salmon roll, it tastes like smoked salmon (lox) but at a fraction of the price lol! make this for your next get together, everyone will rave! Adjust all amount to taste if desired. Serve with crackers or crostini.

1 (1 lb) can red salmon (or use half red and pink salmon)
1 (8 ounce) package cream cheese, softened
1 large green onion, finally chopped
1 teaspoon liquid smoke
1 -2 teaspoon prepared horseradish
1 tablespoon lemon juice
1/4-1/2 teaspoon seasoning salt (or to taste, or use white salt)
black pepper
1/2 teaspoon dried dill (or to taste)
1 -2 tablespoon fresh finely chopped parsley (or to taste)
2 cups finely chopped walnuts, divided (you might use a bit less!)

Steps:

  • Drain the salmon and remove any bones, then squeeze out any excess moisture using clean hands; transfer to a large bowl.
  • Mash the salmon slightly with a fork, then add in the softened cream cheese with green onion, liquid smoke, horseradish, lemon juice, seasoned salt, black pepper, dill weed and one tablespoon chopped fresh parsley.
  • Cover and chill the mixture for minimum of 3 hours.
  • Divide the mixture into two and roll each section into a thick log.
  • Roll each log in about 1 cup nuts.
  • Wrap in foil and refrigerate up to 24 hours before serving.

What a delicious way to get your salmon and your veggies!!! It's quick and easy to put together and is truly gourmet. They'll think you did alot more in the kitchen than you actually did (it'll be our little secret). I designed this for 2 but you can easily double or even triple this yummy recipe for your family or guests.

1 lb salmon fillet
paprika
4 ounces cream cheese, softened
2 teaspoons garlic, minced really fine
1/2 teaspoon parsley
pepper (to your taste)
1/4 cup onion, chopped very fine
fresh Baby Spinach
olive oil
garlic powder
salt

Steps:

  • Preheat oven to 400. Spray a 9x9 baking pan with olive oil. Place salmon fillets in pan. Sprinkle lightly with paprika.
  • In a small bowl, mix together the cream cheese, minced garlic, parsley and a sprinkle of pepper. Spread this over the salmon fillets. (I usually micrwave this for 20 to 30 seconds to make it easier to spread).
  • Sprinkle the chopped onion evenly over the cream cheese.
  • Layer the baby spinach leaves evenly and neatly over the onions (I make 4 layers of leaves).
  • Spray or drizzle the spinach leaves with olive oil. Sprinkle lightly with garlic powder, salt and pepper.
  • Cover tightly with foil and bake 25-35 minutes depending on the thickness of your salmon. It takes a little longer than usual because of all the toppings.
